COCINA ANTIFATIGA

 ANTI-FATIGUE KITCHEN
We are in Autumn and the temperatures have dropped considerably, if we take into account that until recently we were wearing a short sleeve and the temperatures did not fall below 25 degrees. But fresh weather has begun and our body can resent it, so we will talk about some products that can help us avoid the fatigue of changing seasons and temperatures.

Energy is that necessary drive to carry out all kinds of actions during our day to day, it allows us to enjoy a walk, a coffee, a talk ... but for this we must feed properly. No diets because they are usually given by restrictions and that causes our physical vigor to decline. If we have a few kilos left over, we must re-educate ourselves in the choice of food and in doing some more exercise, but do not choose to remove ourselves according to what products.

The main nutrients of energy are carbohydrates, proteins, lipids but not any lipid. The contents in vegetable oils are recommended but avoid those that come from meat and charcuterie.
Vitamins and minerals are essential to keep fit. Any lack we will feel tired and exhausted. The B vitamins are essential for us to feel fit and the products that provide them are fish, meat, whole grains and some vegetables.

But let's not think that only this type of food can give us energy, also aromatic herbs, spices, etc ... help us to have the feeling of being fit: (see attache above)

MICROBIOTA

·       Consumir polifenoles ayuda a desarrollar bacterias saludables.

MICROBIOTA
We are all concerned about health and that is why we try to eat and look for natural and healthy products with the least possible process. But there is something very important in our body that is called the microbiota and that its lack can lead to health problems and diseases such as allergies, obesity, intestinal problems ... Without a doubt, in order to have an adequate microbiota it is necessary to eat properly and include all possible nutrients in a balanced way.

The microbiota is found mainly in our intestines but these microorganisms also coexist in our skin, mouth, respiratory system. These microorganisms are called microbiota.
The vast majority of these microbes are good because they are essential to our health by helping our immune and digestive system. It helps our metabolism to function properly but if there is an imbalance between our microbes and our cells it can cause many diseases.
The fact of having a greater wealth and variety of bacterial species in the intestine is related to greater health. Due to this, it is being studied that in the future and in the analyzes the human microbiota is included in the protocols of personalized medicine.
One of the essential functions of the microbiota is the protection against colonization of pathogenic microorganisms and stimulate defenses. If imbalance changes occur in the intestinal bacterial composition may increase the chances of developing certain infectious diseases. We cannot forget that diet changes greatly affect the composition and quantity of intestinal microbes and these influence metabolism and how we digest and store nutrients.

Swellings, cramps are due, in many cases, to the intestinal bacterial imbalance that favors the production of gases. As another benefit that we can point to the microbiota is the control of blood glucose levels. Some intestinal bacterial species produce neuromodulatory and neurotransmitter substances such as serotonin and norepinephrine, substances related to stress and processes such as depression and anxiety.

How to help the microbiota
• We must follow a varied diet rich in fiber. Eating legumes, whole grains, fruits and vegetables will help us control weight, blood glucose levels and we can go regularly to the sink. Let's not forget to chew well and taste the food.
• Eating yogurt, kefir, sauerkraut ... will provide us with probiotics rich in lactobacilli helping to reduce the number of bacterial species that cause intestinal diseases.
• Try not to use artificial sweeteners since some of them (spartam) stimulate the development of enterobacteria that increase blood glucose causing anxiety.
• Including prebiotics in the diet is healthy, such as artichokes, bananas, asparagus, oatmeal, apples ...
• Wholemeal flour is rich in fiber, satiating and digested by intestinal bacteria.
• Consuming polyphenols helps develop healthy bacteria. Some of the products that provide it to us are: black grapes, green tea, cocoa, virgin olive oil, whole grains ...
Following these small guidelines you can get a healthy and balanced microbiota that will make us feel good. They are only basic and consistent guidelines, that is enough. To achieve a balance is to achieve perfection and well-being.

Fungi and bacteria in food
We are at a time where the kitchen is a totem, the chefs are kings and the novelties do not stop emerging. Almost everything is eaten and what not because the typical cultural prejudices that accompany us all but it is time to change our cultural resistance and strengthen our brain forcing open our possibilities.

Let's talk about fungi and bacteria capable of changing foods and that they become healthier with another aspect and other flavors. It is nothing more than a fermentation that we have all been taught to reject but now, great chefs, are working to turn it into an art. You dare?
In the month of April 2019, there was a great report included in the Sunday XLSemanal that talked about this topic and the post is based on this information.
Since 2013, Rodrigo de la Calle with a Michelin star has been investigating fermentation. It is an ancient technique that in Spain was used and used for pickles and alcoholic fermentations, however, it has currently been used for other uses such as the production of beverages: beer, mead, kombucha, strawberry wine ...

Another great chef is Andoni Luis Aduriz with two Michelin stars and a pioneer in incorporating fermentation into haute cuisine. It is essential to understand the processes well to know what can be done in each case. That is the most important part. NOT everything goes. In their case they use it among others, in pears that seem rotten. Penicillium roqueforti or penicillium candidum normalmene are grown in dairy products to make cheese but they use it on fruit or bread. They create novel textures.
Roberto Ruiz with a Michelin star has the concept of fermentation to preserve the surpluses of the garden and give a more intense flavor to food. They use it to ferment chili peppers with garlic, thyme, water and salt or to obtain a kind of vinegar, something similar to what in Mexico they call witch sauce, which takes two years to prepare.

Let's not forget that many of the foods and products we consume in our daily lives are fermented products that we have been accustomed to consume without any problems such as: bread, yogurt, pickles, cheeses, wines, beer, vinegar (which is the result of to prevent the sugar from the must of grapes, or other fruits, from being fermented by fungi of the Saccharomyces genus and instead their place is taken by acetic fermentation bacteria, especially those of the genus Acetobacter. The result is a very acidic liquid, it is say sour due to acetic acid, which retains extraordinarily well and works as both a preservative, disinfectant, flavoring and flavoring agent, miso, soy sauce and olives (various types of olives are also cured by a malolactic or lactic fermentation that refines its flavor and softens its pulp. The bacterial species is mainly Lactobacillus pentosus).

Asia is the great mecca of fermented products: Japan, China, Korea… and some of the “fashion” products that we are currently getting used to hearing come from there like the Kimchi, Chinese cabbage, kombucha, tempeh that is obtained through the Fermentation of soybeans with the Rhizopus fungus and that is as rich in protein as meat as well as can regenerate the intestinal flora. His contributions are very good as vitamin B12, calcium, phosphorus and iron among others.
All these products are beginning to land in our culture, some already well-known, but when they fall into the hands of magnificent chefs they make it an art and a range of countless trickery.
However, fermentation is healthy for the body. Let's not forget that fermentation is the transformation of food by microorganisms by contributing them to the intestinal microbiota. But you have to know how to handle it and know that it is beneficial and that it could be harmful.

THE ANTIOXIDANTS
When we talk about aging, cosmetics or superfoods, we always pay attention to the antioxidants that a food or product can give us. The reason is not anything, they are the ones that stop the oxidative stress that causes aging and some diseases for that reason, it is important to take them into account and know how they work in our body.
On the other hand, we find free radicals, which would be the opposite of antioxidants. These free radicals are highly reactive molecules formed by odd electrons, which attempt to steal an electron from another molecule. When it is lost, it oxidizes and becomes a free radical starting the chain reaction that causes the organs to deteriorate. At this point, it is where antioxidants intervene, donating an electron to the free radical, stabilizing it and stopping that chain. But no antioxidant, by itself, is able to prevent disease or free radicals are so bad since we need low concentrations for the body to function. This is called "redox" equilibrium (free radicals and antioxidants in equilibrium).
When that balance is broken (ultraviolet radiation, improper diet, stress, tobacco ...) the dreaded "oxidative stress" occurs. Its effects are already known to everyone: aging, neurodegenerative disorders, obesity, diabetes, cardiovascular diseases ...

However, they are also necessary for our body. There are cellular processes in which useful oxidations occur and accumulating high concentrations of antioxidants can interfere with them. For example, T lymphocytes need to be activated from oxidizing molecules. These lymphocytes have an important role in controlling the proliferation of cancer cells. But if we have the bloodstream full of antioxidants, what we do is decrease the effectiveness of the immune system and we may be favoring the proliferation of cancer cells by neutralizing the oxidation produced by the immune system. The key is balance.
But we can say that the necessary antioxidants can be obtained only with the diet, provided that it is balanced, varied and healthy and for this we need a specialist to review it and indicate that it would be the most appropriate for each of us.
There are many types of antioxidants and each one has its own function and they have different effects on each person, so the choice of food is essential. Some of them are vitamins and others are photochemical compounds such as polyphenols.
There are also the so-called macro antioxidants that are phenolic compounds that are not absorbed in the small intestine and that reach the colon where the microbes that inhabit them degrade them giving rise to anti-inflammatory compounds.

However, it is not necessary to take superfoods to get better antioxidants or macro antioxidants. For example, olive oil or legumes are products with a very complete nutritional value because they have a lot of antioxidants. It is not necessary to look for exotic foods to provide us with what any other closest food brings us such as broccoli, peppers ...
On the other hand, it must also be said that, under normal conditions, it is not necessary to resort to supplements. Only in cases of lack of any of them and by optional prescription could they be added to a daily diet but not by fashion or by having more. Let's not forget that the essential thing is to have adequate amounts of everything, neither more nor less. Taking more vitamins or antioxidants than necessary could damage an organ such as the kidney, in the case of an excess of vitamin C. A high consumption of vitamin A and E or selenium can lead to poisoning.
In order to achieve that desired balance it is important to regularly consume fruits and vegetables as part of the daily diet. To help we could say that it would be necessary to eat the rainbow, that way we make sure we have consumed everything necessary for that balance.
An example of such a rainbow could be vitamin C or ascorbic acid. This vitamin helps to preserve the nucleic acids that make up the DNA and RN of cells from oxidative stress, and is essential in the formation of collagen and elastin. They can be found in kiwis, citrus fruits, strawberries, peppers, spinach, cabbage ...

Vitamin E (tocopherols, tocotrienols). They protect the membranes of the entire organism from oxidation, especially those of the nervous system, cardiovascular and muscular system cells. They are found in extra virgin olive oil, avocado and nuts.
Carotenoids They are responsible for the yellow, orange and red colors of food: carrot, orange, peach, tomato, watermelon, papaya, peppers ... but also Brussels sprouts, spinach or broccoli are rich in it.
Polyphenols found in red, purple fruits such as blueberries, blackberries, cherries, grapes, red wine, cocoa, nuts ...
Selenium is an antioxidant micromineral found in oats and other whole grains, seafood, crustaceans, sunflower seeds, squash, mushrooms, eggs and some meats such as pork, turkey, veal and chicken.
Well, here is some more information about antioxidants, so persecuted by everyone because nobody wants to get old.

The new foods that will captivate us in 2019
Each year, the market offers us new products or products recovered from yesteryear and that were somewhat abandoned or forgotten or simply, we did not find them interesting. Now we have new products that should not be missing in our fridge or in the weekly consumption here I leave it.
Cabbage is one of the star products that for many years we did not want to see. His bad press due to the smell that it gives off, its cataloging as a product of the poor and its flatulence, made it a forgotten but now it is fashionable and more knowing its nutritional contributions and its mineral wealth. Here we have red cabbage, kale, kale, cabbage and an endless number that can provide us with many benefits if we use them as companions of a good protein.

CBD-Cannabidiol is a derivative of cannabis that enters with force in the gastronomy. But do not think badly or encourage yourself more than necessary. CBD, unlike THC, does not produce psychotropic effects but relaxes. For example, the chef Xavi Petit uses it in his Ibicencan dinners inside his restaurant. If you have a chance, do not miss having this healthy but fun and unforgettable experience.

Kombucha tea, already well known to everyone, is a thousand-year-old drink made from fermented tea from China. This soda has vitamins, enzymes and is a probiotic. In fact, many bartenders introduce it into their creations.
Healthy fats We have declared war on refined sugars and we already look at the labels of the products to see if what we want to take is adequate or not and how much added sugar it takes, without any need. We are already used to replace refined sugar, honey, brown sugar, stevia, brown sugar ... but now, once we have overcome this important challenge, we must move on to the phat fats, healthy fats that are present in extra virgin olive oil, avocados, nuts ... but we will focus on the avocado that is very suitable for summer and important for our body due to its nutritional properties that are many and healthy.

But we will not only talk about products, but also techniques that are sweeping the market today and are the grills and smokers that are taking the kitchens of elite restaurants specializing in embers. The idea is to put a piece of meat on the grill between two woods. That said, it seems crude, I know, but if we choose certain embers to which pine needles or shoots are added ... a good well-treated meat with aromatic herbs is chosen, depending on the type of meat desired. I think we would be talking about an unprecedented delicacy. Of course, the point of the cook and his knowledge are essential for this snack to be a marvel.

We have talked about meats because maybe it is the most succulent or the easiest to the palate but if you substitute this meat for good fish and aromatize according to the taste of the cook this can be a whole festival.
The Umami mushrooms are another delight to be reckoned with. We already know about the minerals that mushrooms can give us such as mushrooms or shitake but now we can add another delicacy to the purchase and enjoy its flavor.

Real food is a new concept that has existed for a long time but that until now, nobody had accepted with pleasure. These are products with an ugly appearance or with non-perfect shapes that we are not used to seeing in markets and stores. However, they are the most natural, we know their origin and with luck the farmer himself can explain how he cultivates it, for that reason, its appearance and its imperfection. Here the important thing is the origin, sustainability and that polluting plastics do not come from the field. Let's not forget that perfection does not exist and in foodstuffs even less.
Well, here I come with the new trends of healthy products and techniques for this 2019. I hope you like it and that some of these ideas will be interesting.

THE ZEN ATTITUDE AND THE FOODS THAT INFLUENCE IT
We all know that when we are under pressure, sweets or crispy foods are good allies to make us feel better although that also makes the amount of calories ingested more than necessary.
But we are going to talk about those foods that help us
to have a Zen attitude and that, in addition, can be something healthier and with less caloric intake.
According to studies on the state of mind of the Spaniards, 75% of the population suffers a drop in their mood once a week and 8 million Spaniards say they feel sad. This could diminish if our diet changed and was included in it, some weekly foods that could bring us some rest and less discouragement. Consume foods whose nutrients help to form the neurotransmitters precursors of positive emotions such as serotonin would make us feel better avoiding irritability and improving the quality of sleep, something essential to feel good. For this it is necessary to take foods rich in tryptophan, theobromine, B vitamins, magnesium, tyrosine, phosphorus, selenium ... that is, try to design a more balanced diet and including a variety of foods, especially fresh.
The mineral water, although it seems absurd, can help us to overcome the dry mouth that can be the first symptom of anxiety. If we hydrate during the day and little by little, it will make the feeling of overwhelm not so intense. Do not forget that the lack of hydration causes cortisol levels in blood to increase and this hormone is responsible for the dreaded stress. Let's try to look for a water rich in magnesium but without abuse since as we know an excess of this mineral can have the effect of laxative.

The carrot has vitamin B6, a vitamin that enhances the anti-stress effect of magnesium. It also intervenes in the production of serotonin and taurine. To add this product to our diet it is not necessary to be a kitchen guru because it can be consumed raw in salads, mixed with other fruits or vegetables in smoothies or in purees as easy ideas.
Pipes, something that we all love and have consumed in our childhood, are considered seeds and great contributions of nutrients very interesting for us. They are rich in healthy fatty acids, provide magnesium, manganese, tryptophan, protein, fiber and vitamin E. But their benefits do not stop is also rich in tyrosine, essential amino acid to manage stress. Obviously, when we talk about pipes we include sunflower, pumpkin ...

Banana is a very popular and appreciated fruit all over the world, especially children with its sweet flavor and its crispy but tender meat and pasty texture so pleasant to the palate. This fruit contains precursors of dopamine which is a neurotransmitter of excitation. To feel at peace we must release dopamine regularly into our bloodstream. The lack of this neurotransmitter can make us feel without energy and lack of motivation and can reach depression, in very extreme cases.
The sardines are a blue fish that helps us not to get depressed. It is rich in omega-3 and this acid is able to reduce depressive symptoms up to 53%. However, their lack can cause nervousness and lack of concentration.

Chickpeas is one of the most popular thousand-year-old legumes. It is rich in fiber, helps to avoid glycemic peaks and is rich in B vitamins. It is true that they are flatulent but it is not about eating a kilo each time we prepare them. They are easy to consume, since they are sold cooked and therefore you can prepare hummus type creams, they can be crushed with vegetables for purées, and as an accompaniment. The legumes have been forgotten, but it is necessary to keep them in mind always because their nutritional contributions are important for our organism.
We also have whole grains. They are healthy for our intestine providing soluble and insoluble fibers. Do not forget that much of the serotonin that we need is not manufactured in the brain, but in this area of our body. Whole grains feed the most beneficial bacteria in the gut, which are what we need to make serotonin.
The turkey is another white meat that helps us lift our spirits. It contains vitamin B6 and B12, the best for our emotional health; It combines magnesium, zinc and selenium. But if we want to complement something else we can say that this meat is rich in phenylalanine and tyrosine, two amino acids that optimize the levels of dopamine.
Black chocolate is also a food that gives us theobromine which is a good stimulant that works in a similar way to caffeine although its effects are less powerful. Of course, when we talk about dark chocolate, at least, it must have 75% cocoa.
Today there are many variants of chocolate and many interesting mixes that can provide us with much more energy, especially if we drink dark chocolate with chili. It is a meridaje that you must try since it gives us capsaicin, a substance that gives us good humor.
Natural yogurt feeds our intestinal bacteria and the lactobacillus present in natural yogurt makes them happy. However, it should be taken without sugar, if possible since it is not good for our intestinal flora. Taking yogurt reinforces the contribution of tryptophan precursor of serotonin and nocturnal rest. This means that with only one product we obtain two positive effects.
As you can see, adding some foods to our daily diet can make us happier and away from stress and depression is just a matter of remembering to take fresh, natural products and not forgetting that in a varied diet is the welfare and happiness.

I say goodbye to you but not without first commenting that any food that is added to your diet, if you suffer from any type of disease, should be reviewed by a specialist and never include counterproductive food for our health. The doctor always has the last word.

No lleva almidones.

A mixed sandwich: a sensory fantasy.
Who has not decided, sometime, for a mixed sandwich or bikini. We think of those two pieces of well-roasted and crunchy bread, the result of having absorbed all the fat left by the spread, generously, the butter, on both sides, then that juicy taste of melted cheese and warm ham and all this when we bite it and savor it, it gives us a feeling of incredible pleasure but like all good things it has its bad part. And if what we eat is not exactly what we are saying or thinking.
If the cheese were cheese, if the ham were real ham and quality butter, then we would be ingesting calories but with properties, the problem lies when none of those products is really what it should be.
There are two nutritionists who made their analysis of these foods and many others viral. They are two apothecaries: Marián García and Gemma del Caño, doctors in pharmacy and experts in nutrition.

"Light" Butters:
In the first place we must know that to obtain a kilo of pure butter, 25 liters of whole milk are necessary and its fat content of dairy origin must be equal to or greater than 80%.
In the market you can find lighter butters with 41% fat but to have the same consistency and not rancid, water and emulsifiers are added that are usually derived from fatty acids. But this does not end here. There are similar products that only name the butter. The regulations classify them as compound fat and are a mixture of milk fat (minimum 10%), animals and / or vegetables, often palm or coconut, both very questioned because they increase the "bad" cholesterol, formed by small particles that they accumulate in the arteries (the fat of pure butter, in comparison, accumulates larger and less dangerous particles). And if vegetable fats are hydrogenated, worse still.

York Ham
The York Ham, one of the main products of the aforementioned sandwich, is not ham, luckily it will be cooked ham. There are great nutritional differences between cooked ham and ham cold cuts: let's see some.
The extra category: at least 85% of meat, has no added proteins. It does not carry starches. It is made from pieces of ham. A brine is injected, it is massaged in drums to soften it, put in molds and cooked.
First category: 75% meat and some more sugar, otherwise it is similar to the previous one.
Fiambre de ham: Take cornstarch or potato starch, vegetable proteins and other meat proteins. And enough sugar, as well as gelatins to bind. Pork could take 50% and not very pretty. In the labeling it puts consume, once opened, in 48 hours. That's because despite the preservatives, it holds less.

Integral bread
Usually they are made with refined wheat flour, seasoned with bran and sometimes to give a darker color is added malt. The legislation does not define what is integral so that each manufacturer does what it considers appropriate.

cheese
Real cheese only carries milk, rennet, lactic ferments and salt. Starch, flux salts and polyphosphates are added to the one we use to melt so that it melts better. Many grated cheeses, in fact, are substitutes that have no cheese and can also carry palm oil and other vegetable fats.
With all this information we can get an idea of what we are eating after savoring salivating everywhere.
It is true that food labels carry nutritional information of the product but there are too many gaps that producers use. They do not lie but they do not tell the truth and the legislation does not seem to want to see it. For example, on a label we can see that it is 100% turkey but it is not saying that it is turkey meat all it takes, but that the meat it carries is turkey. Sometimes, they say that butter produces cholesterol, that meat uric acid, etc ... but in reality we should be honest with ourselves and really talk. It is not the products themselves that harm us, but its components, components in which the legislation should be much tougher and stricter.
At the time of our grandparents, they ate cheese, drank milk, drank butter ... but they are the longest, because what they ate was healthy and not really plastic meal.
So we could continue with many foods such as the Nuggets, the fried tomato of the grandmother that carries a lot of sugar, the frozen prawns that have a good glaze of water due to the lack of legal glaze limit ... if you are interested in this topic you can enter the web of these two apothecaries of the 21st century. Marián García and Gemma del Caño.

To be happy you have to train the brain.
Nothing is for divine providence and to be happy, still less. As all good things require an effort and a daily training so that we can enjoy a result and be happy, it is not turkey moque. It is worth trying.
Happiness begins in the neurons and therefore it is essential that we train our brain to enjoy as much as possible. You will tell me that all this is a utopia, but I can tell you that it is not true and that it is possible, with effort, to dynamite the negative aspects of people and life. It is necessary to flee from negative people and it is easy to detect them, only their presence creates bad being and instability. Let's try to see the positive part of things, without falling into unreality, everything is possible if we train really.
To begin with, we must learn not to fight against ourselves or to challenge ourselves more than necessary. We could talk about conformism but between the unnecessary challenge and conformism there is a wide range of possibilities to which we can choose.

Neuroplasticity is a theory that has been documented by studying how the brain of professional musicians changes in relation to the repetitive movements of their fingers. And the defenders of this current claim that the brain has the ability to create new neuronal connections and even generate new neurons linked to experience. According to the theory of neuroimaging techniques, we are not irremediably tied to our biology or genetics or to our character sculpted during childhood, since the brain is not a rigid organ but moldable. This "muscle" is modified every time we learn and those new neurons can be reprogrammed and trained to be more receptive to happiness or at least to well-being.
According to psychologists and welfare gurus we summarize a new plan to be able to "model" our brain against negativity. I invite you to be happy !!

1.- Due to the new technologies and the rapidity with which information reaches us, it makes us lose the ability to make decisions in a slow manner and focused on our objectives. Being always in constant struggle or flight affects the nervous system and generates a hormonal reaction that affects the functioning of the brain. It is reacted with stress and anxiety, sensations that affect emotional and cognitive abilities.

2.- Exercising is essential to reduce anxiety and stress as well as helping the muscles of the body to move and not contract so easily. By stimulating circulation, the blood level in the brain increases, therefore, it has greater blood circulation and becomes more receptive and flexible. Endorphins are generated and that makes people who exercise have less risk of suffering from anxiety and depression.

3.- Eliminate negative experiences. There are investigations that say that memory is malleable. The ability of each one to "save and embrace life", not to collapse, will depend on the significance and the value attributed to the dramatic event and the emotional support that is available to recover and to resume life.

4.- Enhancing positive emotions is essential to continue with a healthy and strong head facing any situation. You have to feel positive and avoid negativity to continue thinking and appreciating what makes us happy and not unhappy. We must be able to make our own selection of the world.

5.- But achieving happiness not only depends on removing bad memories or seeing the positive side of things, it also depends on our capacity to exercise gratitude and compassion. The hormone responsible for behavior modification is oxytocin. A sincere hug can make our anxiety, fear and stress go away.

6.- Meditating every day 10 minutes is positive and necessary. It helps us to organize our thoughts, feelings and put ourselves in a positive way to face the day.

7.- Food is also important for our brain since it needs 20% of the body's energy to function properly. According to a study by the British Journal of Psychiatry, it shows that industrial pastries or processed meat products raise the risk of suffering depression by 60%. For perfect cognitive and emotional functioning, the brain must receive vitamins B12 or B6 (fish, eggs, veal, rice and whole wheat), iron and magnesium.
