Ferrol: El Arte de Eduardo Hermida

 La semana pasada, estuve en Ferrol para ver las procesiones , las cuales me parecieron una maravilla. No había ido nunca pero todo el mundo me hablaba bien de ellas y debo decir que no defraudaron en absoluto. 

Pero no voy a hablar de las procesiones sino de un artista local llamado Eduardo Hermida. El es el autor  y creador de las meninas de Canido. 

Nació en Ferrol y estudio dibujo en la escuela de artes Pablo Picasso de A Coruña. Es un artista multidisciplinar: profesor de escaparatismo, profesor de dibujo y pintura entre otras destrezas profesionales y artísticas.

En el barrio de Canido, se contabilizan alrededor de unas 450 obras, aunque lamentablemente, debido al estado de algunas fachadas y el deterioro de algunas obras no todas mantienen su atractivo.

En cualquier caso, merece la pena pasearse por la calles del barrio contemplando algunas magnificas obras que te dejan boquiabierto; no solo por sus dimensiones, sino por el talento que guarda cada una de ellas.


Aunque hay una web oficial que habla del pintor y de estos murales, personalmente creo que no está lo suficientemente promocionado , como debiera y es una pena ya que sería un punto de interés más que tendría la ciudad.

Yo os insto a visitarlo y si además elegís un día soleado y agradable podréis aprovechar para tomar un vermut en algunos de los bares ubicados en plazas donde se puede disfrutar de un ambiente bohemio, agradable  y joven.

Eduardo Hermida is the author and creator of "Las Meninas de Canido" in Ferrol. 

He was born in Ferrol and he studied drawing in A Coruña. He is a multidisciplinary artist and he works as a teacher of drawing and painting and also as a window dresser among other skills.

An excellent meeting point  can be "crucero de Canido square".

We can count around 450 works in the whole neighbouhood, although unfortunately , due to the state of some façades and the damage of some paintings not all of them keep up its attractiveness. 

In any case, it is worthwhile to walk through the neighbourhood streets regarding some great paintings that blow your mind; not only because of its size, but also because of the talent that each one of them have.

Even though, there is an official webside which talks about them, it is not too much promoted as it should be and it is a pity, as it would be an additional point of interest for the city.

I call on to visit it and if you also choose a sunny  and pleasant day, you can take the opportunity to have a "vermouth" in some of the bars located in the squares where you can enjoy  a bohemian and young atmosphere.

 Vi  : Libro escrito por Kim Thúy

         
Ya hace tiempo que no escribo ningún post en el blog porque necesitaba un descanso pero hoy me apetecía hacer un pequeño comentario sobre un libro que he leído en el club de lectura Duran Loriga en A Coruña , al cual pertenezco.   

No soy ninguna especialista en literatura pero adoro leer y disfruto haciéndolo, así que me tomaré la licencia de comentar este libro pero no de forma profesional, ni mucho menos. Quiero decir que también he incluido algunos comentarios que han sido aportados por mis compañeras de lectura por las que siento un gran respeto y admiración.

El libro se titula Vi y está escrito por la vietnamita Kim Thúy. Inicialmente, me fue un tanto difícil continuar la lectura por su estructura pero cuando entendí que era un libro para leerlo despacio, pensando en lo que se decía y que el objetivo era meditar, la lectura fue haciéndose sencilla y amena.

Yo diría que es una autobiografía contada como un diario personal más que una novela, pero en cualquier caso, eso no cambia el fondo del relato, ni su calidad.

Como dice el libro “vi” significa minúsculo, diminuto…  y así es todo el relato basado en la sencillez  de la palabra pero también en su poder. Cada capítulo nos da un mensaje conciso sin adornos superfluos.

Con estos mensajes, nos deja conocer su cultura, su familia, su sociedad, experiencias y sentimientos. Carecen de intensidad emocional y eso nos da la oportunidad de poder valorar cada mensaje libremente.

En cada capítulo, hay un paso hacia delante por parte de Vi y al mismo tiempo, un paso hacia atrás, por parte de su madre. Vi evoluciona, se adapta, sobrevive, aprende a estar sin destacar pero su evolución nunca finaliza. Por el contrario, su madre se queda atrás, se estanca, se cierra en su cultura y no se adapta al nuevo mundo donde vive que es el Occidental.  

Es aquí donde la madre nos ayuda a conocer y entender, hasta cierto punto, su cultura. Una cultura fuerte que acepta la vida como viene, que apoya y ayuda a la familia , esa resiliencia que hace que se sobrepongan a cualquier desdicha. Una fortaleza y unión extraordinaria como individuos y como cultura.

El objetivo de su madre siempre fue hacerla fuerte y resistente debido a su condición de mujer y opta por la estrategia de lo que hoy llamamos “bajo perfil” no significando que esa persona no tenga grandes capacidades y talento. De hecho, nos demuestra durante toda la obra que es una mujer inteligente, culta, independiente, con personalidad y experiencia … aunque la madre no lo entienda , por su falta cultura, de flexibilidad ,  de perspectiva y de adaptación al medio.

De hecho, si leemos en al pag. 95 el siguiente fragmento: “No he conseguido educarte bien. He venido a verle el rostro a mi fracaso..” nos demuestra que no es capaz de ver su increíble éxito que es haberla fortalecido para seguir adelante con su vida que realmente es un rotundo éxito de superación y evolución constante.

Creo que esa discreción que su madre le inculca de pequeña, sin saberlo, es la que la vuelve poderosa en la vida . Es la historia, de una mujer entre tantas mujeres que hay en el mundo, que nos muestra, una vez más, la fortaleza del mundo femenino.

Es un libro muy interesante donde se llegan a muchas conclusiones y te muestran muchos valores que, lamentablemente, hemos perdido.

Vi: Book written by Kim Thúy

I haven't written a blog post for a long time because I needed a break, but today I wanted to make a little comment about a book that I read at the Duran Loriga reading club in A Coruña, to which I belong.

I am not a specialist in literature but I love to read and I enjoy doing it, so I will take the license to comment on this book but not in a professional way, far from it. I want to say that I have also included some comments that have been contributed by my reading companions for whom I have great respect and admiration.

The book is titled Vi and is written by the Vietnamese Kim Thúy. Initially, it was a bit difficult for me to continue reading because of its structure, but when I understood that it was a book to read slowly, thinking about what was being said and that the objective was to meditate, the reading became simple and enjoyable.

I would say that it is an autobiography told like a personal diary rather than a novel, but in any case, that does not change the substance of the story, nor its quality.

As the book says "vi" means tiny, tiny ... and so is the whole story based on the simplicity of the word but also on its power. Each chapter gives us a concise message without any superfluous embellishments.

With these messages, he lets us know his culture, his family, his society, experiences and feelings. They lack emotional intensity and that gives us the opportunity to value each message freely.

In each chapter, there is a step forward from Vi and at the same time, a step backward from her mother. Vi evolves, adapts, survives, learns to be without standing out but its evolution never ends. On the contrary, his mother lags behind, stagnates, closes in on his culture and does not adapt to the new world where he lives, which is the Western one.

It is here that the mother helps us to know and understand, to some extent, her culture. A strong culture that accepts life as it comes, that supports and helps the family, that resilience that makes them overcome any misery. An extraordinary strength and union as individuals and as a culture.

Her mother's goal was always to make her strong and resistant due to her condition as a woman and she opts for the strategy of what we now call "low profile", not meaning that this person does not have great abilities and talent. In fact, she shows us throughout the work that she is an intelligent, cultured, independent woman, with personality and experience ... even if the mother does not understand it, due to her lack of culture, flexibility, perspective and adaptation to the environment.

In fact, if we read on pag. 95 the following extract: “I have not managed to educate you well. I have come to see the face of my failure .. ” shows us that she is not capable of seeing her incredible success, which is having strengthened her to move on with her life, which is truly a resounding success of constant improvement and evolution.

I think that the discretion that her mother instills in her as a child, without knowing it, is what makes her powerful in life. It is the story of a woman among so many women in the world, which shows us, once again, the strength of the feminine world.

It is a very interesting book where many conclusions are reached and they show you many values ​​that, unfortunately, we have lost.

Hola a todos y todas

Hace tiempo que no colgaba post porque necesitaba descansar y darme la opción de tener otras perspectivas pero lamentablemente, surgió el coronavirus y mis expectativas se truncaron.

Sin embargo,  creo que todo lo malo que está ocurriendo nos tiene que servir para aprender y ser mejores. 

En la vida, cada vez que el humano se ha excedido o ha dejado de estar en sintonía con el medio, ha surgido una queja por parte del Mundo para ponernos a todos en nuestro sitio.  Aunque pensar en todas las personas que han fallecido, todas las personas que están afrontando la enfermedad y padeciendola y todos esos colectivos, que gracias a ellos, los demás sobrevivimos, creo que es una queja o un castigo  excesivo.

En cualquier caso creo que debemos pensar y recapacitar, sin olvidar que la vida es fuerte y nosotros muy frágiles. 
Que valorar y respetar es parte o debería ser parte, de nuestros valores. "Valores" una palabra en desuso.
Es difícil pero quizás esta sea una oportunidad para dar un paso atrás y volver a empezar con otra base moral, la cual hemos perdido.

Solo deseo, de corazón , que todas aquellas personas que están sufriendo la enfermedad se curen y no padezcan.
Solo deseo que aquellas personas o colectivos que nos ayudan sobrevivan y les recompensen.
Solo deseo que los que estamos en casa recapacitemos y pensemos que la vida se puede ir en cualquier momento de la manera mas inesperada.
Solo deseo que las personas vuelvan a ser personas y creo que este es un buen momento para empezar.

Un paseo por algunos lugares de Néboa

Estaca de Bares

Este fin de semana fui a visitar algunos de los lugares donde fue rodada la serie Néboa, la cual me encanta.

El interés no fue solo porque salen paisajes increíbles y lugares pintorescos, es porque algo que tengo tan cerca era desconocido para mí y por ello decidí verlo y visitar todo aquello que estuviera cerca.
Empezamos por Estaca de Bares, donde se encuentra el faro y donde hay un hotelito excelentemente ubicado pero que en esta época se encontraba cerrado. El lugar no deja lugar a dudas de que es una maravilla de la naturaleza. Además, tuvimos un temporal de viento increíble que lo hizo todavía más salvaje. Ver desde una roca ubicada en la parte más septentrional, como se junta el Mar Cantábrico con el Océano Atlántico solo es espectáculo de pocos sitios y en Galicia, se encuentra uno de ellos.
Donde se juntan las aguas
Las vistas fueron espectaculares, lo agreste del lugar, lo salvaje de la naturaleza… todo se junta en este lugar. De allí, decidimos visitar el puerto de Bares que es un lugar muy chiquitito, pintoresco y bien cuidado, resguardado del viento y con una playa estupenda.
Al finalizar el paseo decidimos ir a O Barqueiro, pueblo muy cuidado también, de cara al mar, con casas pintorescas y sobre todo las cercanas al puerto pesquero que están pintadas de azul y blanco.
Toda la zona es extraordinaria por su belleza natural pero lo mejor estaba por llegar y era visitar el banco de Lobia.

Allí encontramos algo de lluvia y mucho viento. Ver el banco desde lejos era una llamada a “ven y siéntate”, un banco solitario en espera de alguien con quien compartir la belleza natural del lugar y desde donde se puede soñar en ninfas y Delfos.

Desde allí se puede hacer una excursión costera viendo diferentes pueblos aunque no era el día mas adecuado pero quien quiera buscar otra fecha sugiero de hacer el camino porque no va a decepcionar. Desde aquí podíamos ver Cabo Ortegal donde sus agujas nos daban la bienvenida al lugar, de nuevo. Donde los acantilados son majestuosos y su inmensidad abruma a cualquiera.
Fue una excursión estupenda que me dio la oportunidad de conocer otra maravilla más del lugar y  observar de primera mano todo lo que nos ofrece la naturaleza

A walk through some places in Néboa
This weekend I went to visit some of the places where the Néboa series was filmed, which I love.
The interest was not only because incredible landscapes and picturesque places come out, it is because something that I have so close was unknown to me and that is why I decided to see it and visit everything that was close.

We started at Estaca de Bares, where the lighthouse is located and where there is an excellently located little hotel but which at this time was closed. The place leaves no doubt that it is a wonder of nature. In addition, we had an incredible windstorm that made it even more wild. View from a rock located in the northernmost part, as the Cantabrian Sea meets the Atlantic Ocean is only a spectacle of few places and in Galicia, one of them is found.

The views were spectacular, the rugged place, the wild nature ... everything comes together in this place. From there, we decided to visit the port of Bares, which is a very small, picturesque and well-kept place, sheltered from the wind and with a great beach.
At the end of the walk we decided to go to O Barqueiro, a very careful town, facing the sea, with picturesque houses and especially those near the fishing port that are painted blue and white.
The whole area is extraordinary for its natural beauty but the best was yet to come and it was to visit the bank of Lobia.

There we found some rain and a lot of wind. Seeing the bank from afar was a call to "come and sit", a lonely bank waiting for someone with whom to share the natural beauty of the place and from where you can dream of nymphs and Delphi.
From there you can make a coastal excursion seeing different villages although it was not the most appropriate day but whoever wants to look for another date I suggest doing the way because it will not disappoint. From here we could see Cabo Ortegal where his needles welcomed us to the place, again. Where the cliffs are majestic and their immensity overwhelms anyone.
It was a great excursion that gave me the opportunity to know another wonder of the place and observe first hand everything that nature offers us that must be taken care of and respected.

Los últimos invasores de las calles


Hasta ahora, solo los vehículos de cuatro ruedas y los
peatones éramos los dueños de las calles para bien y para mal.
Los peatones solo teníamos un peligro, vigilar que ningún coche nos atropellara y eso ya era un peligro difícil de sortear. Pero ahora las cosas han cambiado y los peatones estamos asediados por diferentes vehículos modernos que no son precisamente, de cuatro ruedas. En los paseos, caminos, calles, etc… nos encontramos triciclos, skate’s, bicicletas, monociclos, patinetes… una locura de aparatos para moverse y que han tomado las calles de todas las ciudades.
Los transportes alternativos son una buena elección si las ciudades estuvieran correctamente diseñadas para ellos y hubiera una legislación clara pero ni lo uno ni lo otro, por ello , los conflictos son interminables y la convivencia complicada.

La pluralidad de vehículos no es el problema, el problema es la forma de utilizarlos por la ciudad donde los peatones somos obstáculos que sortear por ellos . Con las nuevas corrientes de transporte estamos incluyendo una serie de pistas que literalmente incluimos con calzador en lugares donde los peligros se triplican. Niños corriendo, personas mayores no habituadas que cruzan y no se fijan en el carril bici, bicicletas que no se acuerdan que hay un paso cebra ni semáforos, los patinetes eléctricos que te afeitan porque no caben pero eso no importa, se intenta meter…  hablemos de los diferentes aparatos modernos que vemos hoy en día por la ciudad.

El fast Wheel es un monociclo eléctrico que cargar cuesta poco y puedes andar 60 km a 30 k/h. Con ello puedes hablar con el móvil, llevar la compra, etc… produciendo una sensación de libertad al usuario, eso sí, toda esa carga y el uso del móvil hace que la atención mengue y la estabilidad no sea la mejor. Es muy silencioso y por ello los peatones, bicis, coches no se dan cuenta de que hay uno cerca. Para este tipo de vehículo las normas viarias son las mismas que para un vehículo normal , es decir, al parar se debería bajar uno del monociclo etc…
Las bicicletas eléctricas de alquiler, son otra opción que elige mucha gente, no son caras y evitas otro tipo de transporte urbano como el metro. El uso de casco no es obligatorio pero debería serlo para evitar desgracias , no por las propias bicicletas si no por terceros. Sin embargo, los riesgos  de caída por resbalones, agua, lluvia, son grandes. Pero las normas son claras y hay que respetarlas, algo que no todo usuario de bicicletas hace.

Otro modo de moverse es la bicicleta de toda la vida. Según los usuarios, evitarse atascos, nervios, esperas… es el objetivo primordial sin embargo, los peligros están por todos lados, y el cuerpo es el que para cualquier golpe, sobre todo si los carriles bici están en lugares con poca visibilidad o no nos fijamos que hay una al lado.
El uso del casco debería ser obligatorio por seguridad aunque cualquiera de los usuarios de los nuevos transportes alternativos dice que debería ser libre.  Circular por la ciudad con bici no es tarea fácil pero si además añadimos que usan las mismas técnicas que las motos, que las encuentras por cualquier lado, el tema dificulta y mucho la seguridad aumentando el estrés.
Con el tema del patinete es algo parecido pero lo increíble es que hay gente que el día que les obliguen a llevar casco lo dejara. En realidad porque elegimos los transportes alternativos. Porque evitamos las normas y nos pensamos que podemos hacer lo que queramos o por comodidad? Por esnobismo? .

Por último el skate es otro de esos “artilugios “que vemos y que tememos por si al dominador del aparato se le escapa y nos parte un tobillo. En este caso las protecciones y casco son obligatorios pero vemos muy pocos respetando las normas.
La verdad es que cuando usamos uno de estos aparatos nos sentimos los reyes del mundo sin pensar en el resto y es gracioso porque cuando hablas con estas personas y se quejan del entorno , tu podrías decirles lo mismo. Así que me quedo con el esnobismo y el poder justificar el movimiento sin normas ni reglamentos.
Cuando aprendamos a llevar la velocidad adecuada, las protecciones necesarias, y mostremos respeto por donde debemos ir y como debemos ir, entonces estaré más de acuerdo en estas nuevas corrientes que tienen más de postureo que de practicidad.
Por ultimo tenemos el Segway que no es tan popular porque es caro. En este caso el uso del casco es obligatorio y tienen la misma normativa que los patinetes eléctricos.
Muchos pensareis que son alternativas excelentes para el medio ambiente y yo estoy de acuerdo pero es necesario que todos, usuarios y peatones nos familiaricemos y respetemos las normas tanto unos como los otros, respetemos el uso de casco, la limitación de velocidad, los lugares por donde podemos circular. Solo es sentido común y respeto. Así si habrá avance y mejoras para el medio ambiente.

Finally, skateboarding is another one of those "gadgets" that we see and fear in case the dominator of the device escapes and ankle breaks. In this case the protections and helmet are mandatory but we see very few respecting the rules.

The truth is that when we use one of these devices we feel the kings of the world without thinking about the rest and it is funny because when you talk to these people and they complain about the environment, you could tell them the same. So I keep the snobbery and be able to justify the movement without rules or regulations.
When we learn to take the proper speed, the necessary protections, and show respect for where we should go and how we should go, then I will agree more on these new currents that have more posture than practicality.
Finally we have the Segway that is not so popular because it is expensive. In this case the use of the helmet is mandatory and they have the same regulations as the electric scooters.
Many will think that they are excellent alternatives for the environment and I agree but it is necessary that all users and pedestrians become familiar and respect the rules both one and the other, respect the use of helmet, speed limitation, places by Where we can circulate It's just common sense and respect. COCINA ANTIFATIGA


Estamos en Otoño y las temperaturas han bajado considerablemente, si tenemos en cuenta que hasta hace muy poco íbamos con manga corta y las temperaturas no bajaban de 25 grados. Pero ya empezó el tiempo fresco y nuestro organismo se puede resentir así que hablaremos de algunos productos que nos pueden servir para ayudarnos a evitar la fatiga del cambio de estación y temperaturas.

La energía es esa pulsión necesaria para llevar a cabo todo tipo de acciones durante nuestro día a día, nos permite disfrutar de un paseo, un café, una charla … pero para ello hay que alimentarse correctamente. Nada de dietas porque generalmente vienen dadas por restricciones  y eso hace que nuestro vigor físico decaiga. Si nos sobran algunos kilos hay que reeducarnos en la elección de alimentos y en hacer algo más de ejercicio pero no optemos por quitarnos según qué productos.
Los principales nutrientes de la energía son los glúcidos, las proteínas, los lípidos pero no cualquier lípido. Los contenidos en los aceites vegetales son recomendados pero evitar los que provengan de la carne y charcutería.

Las vitaminas y minerales son esenciales para mantenernos en forma. Cualquier carencia nos sentiremos cansados y agotados. Las vitaminas del grupo B son esenciales para que nos sintamos en forma y los productos que las aportan son el pescado, carne, cereales integrales y algunas verduras.
Pero no pensemos que solo este tipo de alimentos nos pueden aportar energía, también las hierbas aromáticas, especias, etc.. nos ayudan a tener la sensación de estar en forma:








 ANTI-FATIGUE KITCHEN

The main nutrients of energy are carbohydrates, proteins, lipids but not any lipid. The contents in vegetable oils are recommended but avoid those that come from meat and charcuterie.
Vitamins and minerals are essential to keep fit. Any lack we will feel tired and exhausted. The B vitamins are essential for us to feel fit and the products that provide them are fish, meat, whole grains and some vegetables.

Las mujeres que están cambiando Iran


Todo empezó con una grabación de video que hizo Reihane con unos amigos. La canción era Happy de Pharrell Williams y ella iba vestida con una camiseta pañuelo que dejaba ver algo de su cabello y labios pintados. EL motivo era hacer una grabación el día Mundial de la Felicidad y demostrar que las nuevas generaciones iraníes eran divertidas y actuales. Por todo ello, fue condenada a un año de prisión.

Ella trabaja como desarrolladora de marketing de internet y piensa que las redes hacen mucho para visibilizar y ayudar a que las mujeres de irán tengan contacto con el mundo exterior. Ella tiene su propia empresa y antes le era mucho más difícil ofrecer sus servicios con lo que los cambios se están produciendo poco a poco. Estos pequeños cambios fueron a raíz de la victoria de la Revolución Islámica en 1979.

Cada vez más mujeres se quitan el hiyab en público, que es obligatorio en Irán. Por ello, podían ser castigadas con cárcel, latigazos, etc..  pero en 2018 un nuevo movimiento floreció. Un grupo de mujeres jóvenes se quitaron el hiyad en plena luz del día en Teherán. Este grupo es conocido con el nombre de las mujeres de la avenida Enquelab. Las acciones de protesta son registrados en videos que se difunden por  las redes sociales pero eso no quita que se sigan castigando estas acciones aunque los ciudadanos intentan protegerlas, algo que no ocurría antes.

Lo más importante es que las mujeres , pese a tener las leyes en contra, están ejerciendo una mayor presión frente al régimen para impulsar los cambios.  Uno de esos sacrificios se lo llevó Shirin Ebadi premio Nobel que fue expulsada del país junto con muchas otras mujeres pero gracias a ella, muchas otras mujeres tuvieron acceso a la educación y la cifra de universitarias se disparó. Esa llegada masiva a las aulas hizo que hubiera una creciente incorporación al mercado laboral.
En la actualidad, solo 17 escaños de los 290 del Parlamento iraní están ocupados por mujeres. Son pocas, pero más que hace 60 años y eso es el dato positivo aunque al ser una cantidad pequeña hace que muchas de las reformas sociales no vean la luz.

Irán todavía es una sociedad patriarcal y el sector más radical señala que una mayor participación pública de la mujer va en contra de los valores familiares en Irán y es una de las causas de la disminución de matrimonios y del incremento de divorcios.
Como en todas las sociedades los logros son pequeños pero son avances y ese es el punto de partida para continuar andando hacia la libertad y la igualdad.

Sara tiene 37 años es divorciada y trabaja en una agencia de publicidad. Tras su divorcio volvió a la casa de sus padres donde vive bajo el control de su familia. Su vida, aunque es económicamente independiente, no es diferente a cualquier otra mujer divorciada que puede ser vista como una prostituta. “Odio tener que llevar este trapo en la cabeza”, dice.
Shamin de 20 años es estudiante de informática y sueña con salir del país y ver mundo. Quiere ser dueña de sus propias decisiones. “Para los europeos, Irán es exótico, pero para nosotros es justo al revés”, dice. “A veces nos quitamos el velo durante un rato, cuando vemos que es posible. La presión no es tan grande como antes. Alguna vez nos han llamado la atención, pero no ha pasado nada”, explica.

Mona tiene 32 años es intérprete y guía turística. Ella ha rechazado casarse en varias ocasiones ,aunque su madre y tías le han presentado varios pretendientes. Ella no aceptara un hombre sin haberlo conocido antes y su familia le permite su modelo de vida, que no es el habitual. Trabaja en capitales europeas, viaja sola y  no tiene miedo.
Niloufar tiene 23 años y trabaja en una peluquería. Lleva el pelo sin cubrir y ese es su acto de rebeldía . Ella viene de una familia tradicional y se niega a continuar con las reglas establecidas a la hora de vestir. Se encarga del diseño de cejas, algo muy importante en su país ya que es un símbolo de belleza y limpieza.

Así es la nueva revolución por la libertad de las mujeres en Irán, luchan con todas las herramientas posibles para que algún día sea un país libre para las mujeres y puedan decidir cómo vestir y como vivir su vida sin presiones familiares ni sociales aunque lo peor es la ley establecida y controlada por los hombres.

The women who are changing Iran

Iran is still a patriarchal society and the most radical sector points out that greater public participation of women goes against family values ​​in Iran and is one of the causes of declining marriages and increasing divorces.

Sara is 37 years old and is divorced and works in an advertising agency. After his divorce he returned to his parents' house where he lives under the control of his family. Shamin, 20, is a computer student and dreams of leaving the country and seeing the world. He wants to own his own decisions. "For Europeans, Iran is exotic, but for us it's just the opposite," he says. “Sometimes we take off the veil for a while, when we see that it is possible. The pressure is not as great as before. Sometimes they have caught our attention, but nothing has happened, ”he explains.
Mona is 32 years old and is an interpreter and tour guide. She has refused to marry several times, although her mother and aunts have presented several suitors. She will not accept a man without having met him before and her family allows her life model, which is not usual. He works in European capitals, travels alone and is not afraid.

Niloufar is 23 years old and works in a hairdressing salon. She has uncovered hair and that is her act of rebellion. She comes from a traditional family and refuses to continue with the rules established at the time of dressing. He is responsible for the design of eyebrows, something very important in his country since it is a symbol of beauty and cleanliness.
This is the new revolution for the freedom of women in Iran, they fight with all possible tools so that one day it will be a free country for women and they can decide how to dress and how to live their lives without family or social pressures although the worst is the law established and controlled by men.

PROPIEDADES DE LOS RABANOS


Como sabéis, en invierno los resfriados, gripe y otros tipos de enfermedades son habituales, debido a la caída de temperaturas. Por ello, en esta época podemos encontrar varios alimentos que nos proporcionan ayudas para poder hacer frente a dichos cambios de temperatura y sus consecuencias. Entre ellos los rábanos son plantas consideradas de invierno. Este tuberculo, concretamente, pertenecen a las Crucíferas al igual que las coles, brócoli, rúcula…
Una de sus propiedades es la vitamina C, por ello se considera un gran aliado antienvejecimiento y antioxidantes. También ayuda a eliminar los residuos que se acumulan en el organismo por ingestión. Pero la vitamina C no solo es un buen antioxidante , también ayuda a formar colágeno importante para los huesos, nervios y tendones.

Según una información obtenida de la web botanical-online,  los rábanos junto con las cebollas y ajos parece tener una importancia especial en la prevención de algún tipo de cáncer o inhibición de las células cancerosas. La razón se encuentra en la presencia de componentes azufrados.
El rábano es aconsejable para el aparato digestivo ya que aumenta la flora intestinal aumentando algunas bacterias necesarias para el tracto digestivo. Pero también tiene la capacidad de neutralizar las bacterias dañinas para la salud, ubicadas en el intestino.
Este producto, se acostumbra a incluir mucho en dietas debido a su bajo aporte calórico y su gran cantidad de fibra así como potasio siendo muy diurético.

Tipos de rábanos
Aunque es considero un producto de invierno, también hay rábanos de primavera sembrados en Europa, en climas de temperatura fresca, suelos húmedos … como tipos encontramos los “desayuno francés” que es alargado y rojo con la punta blanca; el carámbano que es blanco de forma alargada como una zanahoria.. y otras variedades como el Daikon.

Los rábanos de invierno se clasifican en tres variedades: la japonesa, china y europea. Entre estas variedades encontramos rábanos de color rosa de forma alargada con la carne blanca y sabor picante; rábanos blancos alargados y el rábano negro del que hablaremos ahora.
Rábano negro: el rábano negro español es de tamaño más grande que el resto y de color negro por fuera y blanco por dentro. Sus formas pueden ser redondas o cilíndricas pero bastante picante. Por ello, es aconsejable pelarlo bien antes de consumirlo para rebajar su intenso sabor.

Este tubérculo es rico en vitamina C, potasio, azufre y vitaminas del grupo B. en la medicina Ayurvédica, se utiliza para promover la buena salud digestiva y la desintoxicación del hígado, estimula el sistema inmunológico y combate el envejecimiento.
Este producto se puede consumir tanto crudo como cocido. También salteados con un poco de mantequilla, cortados con mandolina para la ensalada, Horneados para hacer chips o como ingrediente de sopas y pastas.

Estas son pequeñas informaciones sobre un tubérculo poco consumido que aporta grandes beneficios al organismo. Si nos fijamos un poco, veremos que en cada temporada, la naturaleza nos ofrece diferentes productos que nos aportan los nutrientes esenciales para sobrevivir las inclemencias del tiempo sea frio o calor. Por ello, hay que respetar el medio ambiente y seguir los dictámenes que la propia Tierra nos ofrece. Con eso aprenderemos a cuidarnos y estar saludables. Solo sentido común y productos de proximidad.

Contraindicaciones y efectos secundarios
La principal contraindicación que se le atribuye al tubérculo es su acción anti-tiroidea. Su consumo excesivo puede producir irritación gástrica, reacciones alérgicas. Por tanto, y como siempre digo, todo en su justa medida. Una porción de rabano una o dos veces a la semana es perfecto pero dos raciones diarias es excesivo. Sus porciones, además deben ser pequeñas, es decir no tomar más de dos o tres rábanos en una ensalada.

La importancia de un buen servicio en un restaurante o un negocio


Muchos de nosotros hemos estado en locales de
restauración  donde la calidad de la comida, la limpieza y el local bien merecían nuestra visita pero cuando hemos sufrido un mal servicio y , lamentablemente hay demasiados casos, todo el encanto y esfuerzo por parte del resto de los profesionales de dicho local,  pierden valor y lo descartamos para siempre.
Esto ocurre demasiado a menudo en nuestro país. Un país que casi vive del turismo y el turismo no es más y nada menos que servicio.

Cuántas veces hemos  estado en un restaurante y hemos tenido que pedir, pan, aceite, sal o cualquier cosa básica que ya debería estar en la mesa y que el propio camarero debería tener claro. Estar en una cafetería  donde te han tomado nota de lo que quieres y que lo traigan sin limpiar la mesa y tener que decir, por favor, puede limpiar antes la mesa?. Algo obvio que molesta al cliente y le hace pensar en la calidad de limpieza e higiene general del local. O que los camareros terminen de hablar entre ellos o dejen de mirar su móvil personal hasta que deciden atenderte con desgana.
No me sirve la excusa de cobro poco o mucho o estoy muchas o pocas horas ya que el cliente es el que termina “pagando” la cuenta final que nunc aes barata si de servicio se trata.
¿falta interés o preparación? Supongo que si fuera preparación no vendrían con la lección aprendida de : ¿Qué querrán beber? Sin haber traído siquiera la carta. Por cierto, me parece una pregunta fuera de lugar y simplista que hace sentir a los clientes “cosas” aburridas e impersonales algo que se debería evitar.

Un camarero o camarera es una pieza esencial y fundamental en un establecimiento es la imagen del local y el hilo que une cliente, local y cocina. Por lo tanto, no debería comportarse como un autómata o trabajador sin interés ni motivación.  La solución la tiene el propietario del local no el cliente. Si el cliente si se siente mal atendido no volverá.
Por otro lado, también se encuentra el camarero excesivamente simpático que atormenta al cliente con sus chistes y bromas fuera de lugar, en algunos casos. No olvidemos que el orden es un grado y empatizar con el cliente en su justa medida es otro.
Quizás quien lea esto pensara que tendríamos que ir a un restaurante con estrellas Michelin pero siempre tengo claro donde estoy y dependiendo de los precios así exijo. Si los precios son altos el servicio debe ser impecable y si estamos en una tasca, pues ya sabemos que podemos esperar. El orden es importante.

El día que se sepa gestionar la calidad, el servicio y los precios nos convertiremos en los reyes del turismo y la restauración evitando tantos cambios de negocio, como últimamente estamos viendo por las calles.
Seguimos sin darle importancia a la figura que es el 60% del éxito en una cafetería, bar o restaurante: el camarero. Por ello no debe ser un empleo recursivo, que es en lo que se está convirtiendo o se ha convertido actualmente. Es un empleo importante para el que hay que estar preparado . Es un trabajo duro y por ello debe gustar desempeñarlo. Tratar con público no es fácil y por ello tienes que sentir la profesión. El cliente solo quiere sentirse  atendido, tranquilo y que le sugieran si se diera el caso, no quiere ser tratado como un incordio o como alguien que viene a molestar .

·       Hay que intentar que un cliente se sienta como en casa.
·       Debe saber defender los platos, explicarlos y demostrar su involucración en el negocio. No hay peor cosa que preguntar si se tiene algo o de que se compone un plato y la respuesta sea pues no sé, voy a preguntar y al regreso la explicación está llena de vaguedades  por lo que optas por lo de siempre porque no te motivan a nada más.
·       Ayudar,  informar, empatizar, ser amable… pero siempre desde el respeto sin rebasar la línea de la confianza.
Un país que vive del turismo es un país que está obligado a profesionalizarse en ello y querer lo que hace porque es nuestra base de subsistencia. Esto es aplicable a cualquier empleo y nivel para alcanzar el éxito en lo profesional y en lo personal.

It is hard work and therefore you should like to play it. Dealing with the public is not easy and that is why you have to feel the profession. The client just wants to feel taken care of, calm and to be suggested if the case arises, he does not want to be treated as a nuisance or as someone who comes to bother.

LOS POSTRES CADA VEZ LLEVAN MENOS AZUCAR


Hace años cuando ibas a un restaurante y pedias un postre era algo dulce hasta llegar a lo empalagoso pero estábamos acostumbrados a esas tartas que no se hacían en casa y que pedir un postre era sinónimo de felicidad aunque estuvieran cargados de azúcar o mejor dicho era el exceso de azúcar que nos aportaba y proporcionaba esa felicidad aunque luego eso se volviera en nuestra contra porque el cerebro pedía más.

En aquel entonces a nadie le importaban los picos glucémicos, la obesidad o el exceso de un postre a la semana. Porque esos postres solo se tomaban cuando había un comida importante o especial fuera de casa. Porque los avances y estudios nutricionales eran pocos y básicos pero ahora y después de la revolución nutricional que estamos viviendo  y asimilando todos , los postres llevan bastante menos azúcar y mucha creatividad obligándonos, inconscientemente, a desarrollar otros sentidos minimizando el del sabor dulce. Una vez más los ojos le pueden al cerebro.
En estos momentos y no solo en la alta cocina, se utilizan azucares más puros, menos refinados y se incorporan productos dulces por naturaleza como boniatos, calabaza, castañas, mango, manzana, pera … que hacen que los postre tomen un dulce suave, natural pero sin renunciar al sabor ya que de alguna manera esto hace que el sabor propio del producto se realce pudiéndolo disfrutar más.
El dulce no es necesario pero cuando los niveles glucémicos en sangre se alteran , el deseo del postre se acrecenta  así que esa necesidad del postre puede estar más vinculado a la gula que a una necesidad.

Las posibilidades en cuanto a creatividad en los postre es infinita y si además añadimos la globalización y fusión de culturas nos podemos encontrar maravillas al paladar y a la vista.
La salud es importante y todos somos conscientes de ello por eso se utiliza más chocolate negro, toques cítricos o la utilización de frutas frescas acompañadas de un chantillí suave o una base de bizcocho.
Lucina Carnero ganó el Premio Madrid fusión con sus creaciones donde se mezclan toques japoneses, franceses, catalanes y argentinos de donde son sus raíces.  De esta mezcolanza de culturas, ideas y productos salen postre extraordinarios con un toque exótico y un buen hacer excepcional.

THE DESSERTS EACH TIME LEAD LESS SUGAR
Years ago when you went to a restaurant and asked for a dessert it was something sweet until it got to be cloying but we were used to those cakes that were not made at home and that asking for a dessert was synonymous with happiness even if they were loaded with sugar or rather it was the excess sugar that gave us and provided that happiness even if that turned against us because the brain asked for more.

At that time, nobody cared about glycemic peaks, obesity or the excess of a dessert a week. Because those desserts were only taken when there was an important or special meal away from home. Because the advances and nutritional studies were few and basic but now and after the nutritional revolution that we are living and assimilating all, desserts carry much less sugar and a lot of creativity forcing us, unconsciously, to develop other senses minimizing the sweet taste. Personajes: Leonor Espinosa


Leonor Espinosa De La Ossa es una reconocida
chef colombiana.  Su restaurante rinde culto a la gastronomía colombiana y su restaurante LEO  ubicado en la ciudad de Bogotá, fue calificado como uno de los mejores del mundo en el 2007. 
Su formación profesional parte de estudios de economía, publicidad y artes plásticas. En 2008 su vocación por la investigación gastronómica, la llevó a materializar sus incursiones sociales a través de la Fundación Leo Espinosa, mediante la cual crea iniciativas que difunden estos conocimientos a comunidades campesinas, indígenas y afrodescendientes del país, como una forma busca retribuir lo aprendido de la cultura popular.

Su propuesta culinaria actual se denomina CICLO-BIOMA se basa en el estudio periódico de las especies biológicas promisorias de diferentes biomas y ecosistemas colombianos para ser usadas en la culinaria y en el maridaje actual.. En cada bioma, trabaja con biólogos, agricultores y productores para dar paso a una cocina de productos locales recreados en la memoria de los saberes de su país.
En 2017 Leonor Espinosa recibió el Basque Culinary World Prize 2017, premio que se le otorga a los chefs que presenten proyectos innovadores que demuestren que la gastronomía puede traducirse en un motor de cambio en ámbitos como el de la innovación, educación, medio ambiente, desarrollo social o económico, salud o, en general, que impactan positivamente la industria alimentaria.
Sin embargo, en la familia, no solo ella destaca. Su hija ,Laura Hernández Espinosa,  es internacionalista y sommelier profesional, especialista en responsabilidad social y master en estudios sobre desarrollo con énfasis en seguridad alimentaria. Laura es actualmente su socia en los distintos emprendimientos empresariales y así mismo se desempeña desde 2009 como directora de la Fundación Leo Espinosa, FUNLEO.

Según Leo: Soy una artista plástica que recrea vivencias pero centrada también en mostrar un país con una gran biodiversidad. Quiero hacer una cocina que conecte Colombia y que mejore las condiciones económicas y sociales de las comunidades. Porque los ingredientes que utilizo provienen de los territorios donde están asentadas esas comunidades y donde está la gran parte de la biodiversidad colombiana y el patrimonio cultural del país.
Espinosa acaba de publicar un libro de relatos personales vinculados a la cocina, Lo que cuenta el caldero. En esta entrevista explica su relación con el mundo del arte del que ella procede, o la curiosidad por lo prohibido que ha marcado su vida. También expone su visión sobre el papel de la mujer en la cocina o sobre la superficialidad con que a veces se relacionan .
Ha sido y es una mujer que experimenta con todo y lo prueba todo. Llena de curiosidad y de poder saber , a veces le ha llevado a limites increíbles de los que ha sacado una gran experiencia y ha hecho que creciera como profesional creando platos llenos de erotismo, estudio y raíces.

According to Leo: I am a plastic artist who recreates experiences but also focused on showing a country with great biodiversity. I want to make a kitchen that connects Colombia and that improves the economic and social conditions of the communities.
