Las algas
tienen una elevada concentración de vitaminas del grupo B, E y A. Pero también
es una privilegiada fuente de yodo y calcio. En menor medida también
encontramos cinc, silicio y cromo todos minerales indispensables para que
nuestro metabolismo siga funcionando bien.
Para poder
aprovechar todos sus beneficios hay que consumirlas crudas o bien beber el
caldo donde se hayan cocido o cocinado.
Alga azul verde del lago Klamath
Estas algas
crecen en aguas dulces y cristalinas del Upper Klamath, un lago situado en el
estado de Oregón. En los meses estivales las algas se reproducen cada cuatro
días creando una floración masiva de hasta 50 millones de kilos anuales. Se
cosechan diariamente y directamente del lago, se filtran y se congelan y almacenan a -100 ºC hasta el
momentos de procesarlas. Esta alga ha demostrado ser un alimento alto en valor
proteínico, contienen hasta ocho aminoácidos, dos de ellos esenciales y seis no
esenciales.
COMPOSICIÓN: Proteínas 60%; lípidos 5%; hidratos de carbono 22%.

Algas Kelp
Este nombre se le da a un conjunto de algas que
proceden del océano Pacífico. Son cosechadas con fines medicinales y
cosméticos. Son ricas en yodo y oligoelementos y se utilizan como complemento
en dietas de adelgazamiento y como estimulantes.
COMPOSICIÓN: Ácido algínico 26%;
minerales Cl, I, Fe, Mg; vitaminas A, B1, B2, E.
PROPIEDADES: Aumenta el rendimiento
físico e intelectual. Estimula el crecimiento ce-
lular de las glándulas endocrinas. Es
útil en dietas de adelgazamiento. Evita el es-
ñimiento.
Arame
Es un alga marrón, ancha y rugosa. Sus tonos son
parduzcos y se utiliza mucho en la medicina tradicional para baños curativos
gracias a las propiedades que tiene para favorecer la circulación sanguínea. Es
rica en Yodo y calcio. Tras su recolección se hierve y se corta en tiras finas.
Su sabor es ligeramente dulce por su alto contenido en azucares naturales. No
precisa de cocciones largas y se conserva en el frigorífico.

PROPIEDADES: Favorece la circulación
sanguínea. Reduce la tensión arterial. Es útil

HIZIKI
Esta alga es muy apreciada en la cocina tradicional
japonesa. Para consumirla es necesario ponerla en remojo durante 15 minutos,
dejarla escurrir y no cocerla. Se utiliza para salteados de legumbres,
ensaladas o paellas vegetales. Es una fuente de minerales y oligoelementos
destacando por su alto contenido en hierro calcio y vitamina A.
