Lo más usual
son los aceites refinados que son sometidos a tratamientos químicos para
asegurar y alargar su conservación. Esos tratamientos se basan en la presión de
altas temperaturas pero después de su tratamiento habrá perdido propiedades.
Luego están los refinados por presión en
frio; con este tratamiento las propiedades se siguen conservando aunque es más
inestable y con más posibilidades de estropearse. Los aceites biológicos de
primera extracción en frio conservan toda su fuerza en cuanto a sabor original
y mantiene sus virtudes pero su periodo de conservación es corto, por tanto,
deben ser consumidos con mayor rapidez.
Los beneficios
de los aceites vírgenes y de primera presión en frío son:
· No contienen colesterol y reducen su concentración en sangre.
· Disminuye el riesgo de padecer enfermedades cardiovasculares.
· Contribuye a disminuir la tensión arterial y los niveles de azúcar
en sangre.
· Contienen una dosis importante de vitamina E, gran antioxidantes.
· Regula el tránsito intestinal y reducen la acidez gástrica.
Pero hablemos de algunas propiedades y
composición de algunos aceites en concreto.
Aceite de amapola
El aceite se extrae de las semillas. Es
aromático. Contiene muchos ácidos grasos esenciales y vitaminas del grupo B. Siempre
se ha utilizado como tranquilizantes y protector hepático.
COMPOSICION: Ácido oleico: 17% ; Ácido
linoleico: 70%; Ácido linolénico: 1%.
PROPIEDADES: Aporta proteínas, estimula
el apetito, es antioxidante, regula el sistema
Inmunitario, es un
protector hepático, favorece a la secreción glandular de las
Hormonas en torrente
sanguíneo, previene problemas cardiovasculares y arteri-
osclerósico, ayuda a expulsar los
parásitos intestinales.
Aceite de comino negro
Este aceite se obtiene a partir de la
primera presión en frío de las semillas del ajenuz o neguilla. Sus semillas se
utilizan para preparar salsa curry y en repostería. Este aceite es rico en
ácidos grasos insaturados actuando como un excelente digestivo.
COMPOSICIÓN: Ácidos grasos insaturados
y melantina.
PROPIEDADES: Alivia los espasmos
gastrointestinales. Reduce los gases y la hinchazón
abdominal. Facilita la expulsión de
lombrices intestinales. Alivia síntomas alérgi-
cos y el asma.
Alivia los dolores reumáticos.
Aceite de germen de trigo
Se obtiene del prensado del trigo y
luego se somete a un proceso de refinado para eliminar impurezas, corrigiendo
la acidez. Posee mucha vitamina E y con un alto poder antioxidante. Este aceite
se utiliza en crudo, no en caliente y es bueno para las ensaladas y las
verduras.

Aceite de girasol
Se obtiene de
las semillas sometiéndolas a un proceso de primera presión en frío. Su origen
era México y Sudamérica pero se cultiva en muchos otros países. Su uso es
grande en la cocina para aderezos, guisos y frituras. Tienen un alto contenido
en vitamina E y es rico en minerales. Para freir es mucho mejor usar el aceite
de girasol que el de oliva.
