¿Cómo nos damos cuenta de la falta de vitaminas?


Siempre se ha dicho que tomar suplementos vitamínicos no era necesario si no había un motivo o una carencia. Hay opiniones para todos los gustos. Lo que sí es cierto es que hay un negocio estratosférico relacionado con estos suplementos. Las ventas superan los 100 mil millones de euros anuales y se esperan aumentos del 7% anual hasta el 2019.
Según el doctor Howard Sesso, profesor de Medicina en Harvard, no ve riesgos y si beneficios de tomar estos suplementos en las mujeres . Pero lo cierto, es que en un mundo como el nuestro donde hay obesidad también hay déficit de vitaminas y nutrientes esenciales. Según Marta Garaulet, profesora de la Universidad de Murcia e investigadora en Harvard, dice que puede ser debido a la sobre explotación  de la tierra que reduce los nutrientes de los cultivos. En cualquier caso, antes de tomar suplementos alimenticios, hay que consultar al médico y ver si esa idea es adecuada para nosotros o no. (fuente: mujerhoy, 29 de julio de 2017)

La vitamina D es deficitaria en la mitad de la población occidental. Esta vitamina la obtenemos al exponernos al sol. Es esencial para absorber el calcio de la dieta. Podemos carecer de ella si no hacemos vida al aire libre sin protección solar, si tenemos la piel oscura, si superamos los 50 años, si se es obeso… los signos que delatan su carencia son la debilidad ósea.
Para poder obtenerla hay que exponerse al sol de manera breve, exponiendo piernas y brazos unos 15 minutos al día. Si tomamos suplementos, mirar que sean de vitamina D3 pero cuidado con las ingestas ya que un exceso de esta vitamina puede ser tóxica.

Ácidos grasos, omega-3 EPA y DHA  Nuestra dieta actual es pobre en omega-3 de pescados, mariscos y algas (DHA y EPA) y excesiva en omega-6 (en aceites de girasol, maíz o soja). Es necesario tener EPA y DHA porque tienen un efecto antiinflamatorio y los omega-6 tienen efecto inflamatorio. El desequilibrio aumenta el riesgo de enfermedades inflamatorias . El riesgo de carecer de estos ácidos  aumenta si se cocina con aceites de girasol, maíz o soja. Si se sigue una dieta altamente procesada y se consume poco pescado, mariscos y algas.
Los síntomas que notamos son piel y uñas secas, quebradizas, insomnio, trastornos de la atención y comportamiento sensible, ansiedad y depresión. Para evitarlo, se debe consumir pescado dos veces a la semana y si no aumentara, deberíamos tomar suplementos. Los de krill se absorben mejor y contienen el antioxidante  astaxantina, que evita que los omega-3 se oxiden.

La colina pertenece al grupo de la vitamina B y es precursora del neurotransmisor acetilcolina, esencial para el cerebro, la memoria, el control muscular y las membranas celulares. Se puede carecer de ella si no se consumen huevos y carnes, pescados salvajes o leche cruda. Sus signos son de apatía, problemas de memoria, letargo, ..Para poder incluirla en nuestra dieta, es necesario ingerir carnes e hígado, huevos, salmón salvaje, coles de Bruselas, germen de trigo , brócoli…

Magnesio es necesario para las reacciones bioquímicas del organismo; es vital para los huesos, el corazón y la relajación física. Si carecemos de ella es porque nuestra dieta es demasiado rica en alimentos procesados y pobre en legumbres, frutos secos, semillas y verduras de hoja verde. Hay que estar alerta si sufrimos de migrañas, nerviosismo, arritmias, resistencia la insulina… si tenemos este tipo de dolencias es aconsejable consumir verduras de hoja verde ancha, legumbres, frutos secos, semillas y cacao (chocolate negro). Otra forma de que nuestro cuerpo absorba magnesio es tomando baños de sales de Epson.

Vitamina B12. Se calcula que el 25% de las personas tienen déficit de esta vitamina y es esencial para la producción de sangre, fabricación de ADN . Esta vitamina no la produce el organismo así que debemos conseguirla mediante  la dieta. Los alimentos de origen animal son los que más B12 aportan. Si nos sentimos cansados, debilidad, estreñimiento o diarreas, taquicardia, hormigueos, falta de memoria… para evitar la carencia de vitamina B12 podemos incluir en nuestra dieta pescados, mariscos, carnes magras, huevos, yogur y quesos que son ricos en B12.

Yodo. El yodo no lo fabrica el cuerpo al igual que la vitamina B12, con lo que debemos proveer el organismo del mediante la dieta o suplementos. Pero mucho cuidado con los suplementos. Siempre hay que consultarlo con un especialista. Sirve para la fabricación de hormonas tiroideas. Su déficit puede provocar hipotiroidismo, bocio, infertilidad, depresión…por lo que hay que consumir pescado y mariscos, sin olvidar las algas que son ricas en ello. La sal yodada ayuda a compensar el déficit pero cuidado con las cantidades . No olvidemos que todo extremo es perjudicial.
Como síntomas de déficit podríamos decir además la presencia de taquicardias,  aumento de peso, piel seca, uñas quebradizas, estreñimiento…

Hierro. El hierro se encarga, entre otras cosas, de transportar el oxígeno a las células. Hay dos tipos de hierro el hemo (proviene de alimentos de origen animal) y el no hemo (que proviene de alimentos vegetales). De los dos, el que mejor absorbe el humano es el hemo pero ambos son importantes. Se corre el riesgo de carencia si hay reglas abundantes y si la dieta es pobre en alimentos ricos en hierro. Sus delatores son el cansancio, debilidad, palidez, mareos… para evitar estos síntomas es importante comer carne, hígado, almejas, pulpo, legumbres, brócoli, espinacas, kale y no olvidemos que la vitamina C ayuda a absorber mejor el hierro pero cuidado con el exceso ya que nos provocaría hemacromatosis que es hereditaria y genera radicales libres que dañan el ADN . Por ello, es importante controlar la ferritina y acudir a un especialista para que nos indique que hacer.

Vitamina K12. Se necesita porque transporta el calcio allí donde se necesite y lo mantiene alejado del corazón, cerebro y otros lugares no adecuados.  Pero también es esencial para la salud de las arterias, la renovación de células y tejidos… Consumir pocos fermentados puede producir carencia de esta vitamina. Algunos signos que podemos sufrir si carecemos de esta vitamina son moratones, caries, niveles altos de glucosa, fracturas… Es importante consumir fermentos, queso brie, gouda, hígado, huevos … aportan K2.
