El crosne ,
conocido como alcachofa china o alcachofa betónica, es un pequeño tubérculo
originario de Asia. Surge de una planta herbácea perenne que crece en zonas
húmedas.
Se dice que su
nombre proviene del municipio francés,
donde fue introducido a finales del S.XIX. en la década de 1880, de la mano del
médico Monsieur Pailleux de Crosne que lo cultivo en su pueblo Crosne (Francia)
por primera vez y le dio su nombre. En
estos momentos, es una planta extendida en todos los continentes.
Es un cultivo
muy caro y de escaso rendimiento ya que necesita mucha mano de obra para la
separación de los bulbos y la limpieza, quitar la tierra y dejarlo listos para
comer. Son muy delicados y se estropean muy rápido por lo que hay que
protegerlos de la luz y mantenerlos en la nevera pero tapados para que no les
afecte la humedad.
Este
ingrediente, el crosne, es utilizado en la alta cocina- que gracias a programas
como Master Chef se ha hecho popular o
por lo menos nos ha dado la oportunidad de descubrirlo. Es un tubérculo que
aporta frescura y una textura crujiente con sabor dulzón con un toque de nuez.
Aunque la
mejor temporada del crosne se encuentra entre noviembre y marzo, actualmente lo
podemos encontrar todo el año. Como podéis apreciar en la fotografía que
adjunto al post, tiene una forma muy
particular. No olvidemos que si vamos a comprarlos, debemos comprobar que
conserve su color blanco crema, que está firme y suave al tacto.
Su consumo es
variado como el uso y consumo de cualquier tubérculo, generalmente cocidos,
pero hay que cocinarlos poquito para que conserven su textura crujiente. Los
crosnes salteados con mantequilla o aceite de oliva son otra forma de comerlos
ofreciéndote una experiencia. No
olvidemos que también pueden ser un buen acompañamiento.
En Japón se
comen para Año Nuevo teñidos con soja, en China les gustan encurtidos en
vinagre, para acompañar a otras verduras,
en escabeche o con el arroz con leche tradicional chino.
PROPIEDADES NUTRICIONALES
El crosne es rico en carbohidratos, particularmente
en estaquiosa ,un oligosacárido (que contiene varias unidades de azúcares), que
nos produce flatulencias, ya que nuestro
sistema digestivo no posee las enzimas digestivas que los descompongan en
azúcares simples. Por este motivo no conviene comer mucha cantidad.
Tiene un alto contenido en fibra por lo que es
estupendo para el tránsito intestinal, contiene betaina un nutriente necesario
para el metabolismo ya que colabora en la absorción de las grasas, calcio,
hierro, vitamina B12 y las proteínas por lo que nuestro bonito tubérculo mejora
la digestión y estimula las secreciones biliares.
No contienen grasas, nos proporciona minerales y
proteínas, y aporta 75 kcal. por cada 100 gramos consumidos.

THE CROSNE
The crosne, known
as Chinese artichoke or betonic artichoke, is a small tuber native to Asia. It
arises from a perennial herbaceous plant that grows in humid areas.
It is said
that its name comes from the French municipality, where it was introduced at
the end of the 19th century. in the 1880s, by the hand of the doctor Monsieur
Pailleux de Crosne who grew it in his village Crosne (France) for the first
time and gave it his name. At the moment, it is an extended plant in all the
continents.
It is a very
expensive crop and poor yield because it needs a lot of labor for the
separation of bulbs and cleaning, remove the soil and leave it ready to eat.
They are very delicate and spoil very quickly so you have to protect them from
the light and keep them in the fridge but covered so that they do not affect

best season of the crosne is between November and March, nowadays we can find
it all year round. As you can see in the photograph that I attached to the
post, it has a very particular shape. Let's not forget that if we are going to
buy them, we should check that they retain their creamy white color, which is
firm and soft to the touch.
Its
consumption is varied as the use and consumption of any tuber, usually cooked,
but you have to cook them a little to preserve their crispy texture. The
crosnes sautéed with butter or olive oil are another way to eat them offering
you an experience. Let's not forget that they can also be a good accompaniment.
In Japan they
eat for the New Year dyed with soy, in China they like pickled in vinegar, to
accompany other vegetables, pickled or with the rice with traditional Chinese
milk.
NUTRITIONAL PROPERTIES
The crosne is
rich in carbohydrates, particularly in estaquiosa, an oligosaccharide (which
contains several units of sugars), which produces flatulence, since our
digestive system does not have the digestive enzymes that break them down into
simple sugars. For this reason it is not advisable to eat much quantity.
It has a high
fiber content so it is great for intestinal transit, contains betaine a
nutrient necessary for metabolism as it helps in the absorption of fats,
calcium, iron, vitamin B12 and proteins so our beautiful tuber improves
digestion and stimulates biliary secretions.
