Cuando vas por las carreteras de
Corea del Sur ves innumerables campos cubiertos por telas de saco negras. Bajo
las lonas crece esta raíz tan popular y que posee una reputación férrea por
todo el mundo. Pero también debemos saber que esta planta es la causante de los
miles de millones que aporta al PIB de
este país asiático. Eso si, el secreto está bien guardado y es casi imposible
poder hablar con alguien sobre esta planta y su cultivo. El hermetico monopolio
al que está sometido empieza ya en su “nacimiento”.
En Seúl es común ver ejecutivos
que sustituyen una comida por una taza de esta bebida: agua, ginseng rojo y
azúcar. Así afrontan las jornadas de trabajo, con el subidón que les aporta
esta “tisana”. Según se dice y se cree. Yo debo decir que la he probado y si es
cierto que al tomarlo cada día, se nota un vigor especial pero no hay panaceas.
Sus exportaciones de ginseng rojo (Corea del Sur) , en todos
los formatos, rondan los 600 millones de
dólares. Pero el silencio absoluto sobre esta planta y todo lo que le pueda
rodear impera sobre todo el país.
Sin embargo, hay una persona que
sorteo la prohibición coreana de sacar
las semillas de ginseng y sus secretos fuera de sus fronteras. Antonio Esteban
Villalobos, dueño de una marca muy
importante y famosa de plantas medicinales en nuestro país, lo consiguió.
Antonio ya conocía la planta y de
hecho la había comprado para incluirla en algunos de sus productos ya
preparados pero en uno de sus tres viajes a Corea, dio con una persona que si
se abrió y le dio información llegando, previamente, a un acuerdo con él. Le enseño las plantas, le
enseñó cómo debía proceder y le dio unas cuantas semillas, las cuales guardo
como oro en paño.
Pero no fue fácil, ya que tratar
esas semillas era complejo, siguiendo las instrucciones del amigo coreano. Las
enriqueció en el laboratorio con hormonas vegetales del crecimiento. Una vez
potenciadas, construyó los invernaderos
y las enterró en profundos surcos. Necesitaban riego por aspersión, no quedar
nunca encharcadas, y estar protegidas del sol y del viento gélido por ello,
cubrió dichas planta, por una tupida cubierta de felpa negra.

ecológica. La tierra debía tener un ph neutro y, para más inri, tenían que ser
cubiertas por un lecho de paja de arroz. Ahora seis años después dan su fruto:
una hermosa raíz con hijos en forma de largos pelos y unas semillas rojizas que
servirán para extender y afianzar este proyecto pionero. Este es el primer
cultivo de ginseng en España y de Europa, seguramente. Esta planta medicinal se
da en zonas frías y montañosas de China, Corea, Rusia, Japón.. pero los
ejemplares que contienen más propiedades son los coreanos
Si observamos las plantas de
cerca, lucen esplendidas, con hojas de cinco lóbulos y unos frutos que, salvando
las distancias, recuerdan a los de los cafetales. Ahora los agricultores
esperan que sea cuarto menguante y caigan las primeras heladas para proceder a
desenterrar el botín vigorizante. Cuando estén a cero grados de temperatura, la
parte aérea se volverá amarilla, mandando toda su vida a las raíces para
garantizar su supervivencia. Pueden durar decenas de años.
Aunque el proceso para poner el
producto en el mercado no termina aquí, es más, acaba de empezar. Después de
desenterrarlas hay que llevarlas al laboratorio para que empiece el proceso de limpieza,
fermentación y vaporización que dura dos meses. De este modo modificarán las
moléculas de la planta para que el cuerpo asimile sus nutrientes. A partir de aquí se encapsularan
y llegaran al mercado.
Se aconseja tomar el ginseng
durante un periodo de dos meses, en épocas de decaimiento descansando luego.
Cuidado con el consumo en personas hipertensas. No está indicado para niños, ni
embarazadas, ni personas muy mayores.
Algunos tips:
La industria coreana aprovecha el
100% del ginseng. Por un lado trata las hojas, creando extractos; por otro
procesa las semillas para conseguir un tónico y, por último, transforma la
raíz, que es la auténtica guardiana de las esencias beneficiosas de esta planta
medicinal. Carlos Carricajo, nos explica como es el proceso de transformación de la raíz hasta conseguir
el producto que llegará al mercado.
Hay ginseng blanco y rojo pero se
utiliza más el rojo porque sus propiedades (ginsenósidos) son más asimilables
por el cuerpo humano.
¿Cómo se transforman los
ginsenósidos para que el cuerpo no los rechace? El procedimiento más asentado
pasa por la vaporización y la fermentación. Las moléculas de los ginsenósidos,
cuyo esqueleto es parecido a las del colesterol o la testosterona, se retiran
por el tratamiento de los azúcares de la molécula para conseguir que deriven en
el llamado Compuesto K, una sustancia de alta actividad y fácilmente asimilable
por el sistema digestivo. Si no se sometiera a este proceso, la mayoría de los
nutrientes y beneficios de la planta no serían absorbidos por nuestro cuerpo al
ser desaprovechados por el organismo, dice Carricajo.
En cada capsula de ginseng lleva
6 miligramos de compuesto K, el auténtico responsable de la actividad de esta
planta energizante.
¿En qué consiste la
vaporización? El primer paso es lavar
las raíces para quitarles la tierra. Luego, se introducen en un horno de vapor,
a 60-70 grados durante tres horas. Es importante no exceder esta temperatura
para que la raíz y sus pelos no lloren, perdiendo sus principios activos a
través de una sudoración excesiva. El vapor produce una reacción química por la
que se desgajan los azúcares y se va liberando el Compuesto K. Luego, se dejan
las raíces a temperatura ambiente, aunque en un entorno totalmente controlado,
durante 24 horas. Este ciclo se repite nueve veces.
¿Cómo funciona el proceso de la
fermentación? Tras los 9 vaporizaciones, las raíces se han arrugado,
adquiriendo el color rojo que le hace tan característico. Los principios
activos, lejos de perderse, se han concentrado por la deshidratación. A partir
de ahí, se muele y da lugar a una masa con la textura de una resina pastosa.
Entonces llega la fermentación en sustrato sólido. Es el momento en el que las
bacterias y hongos deben ponerse manos a la obra para que siga la
transformación. Se humedece la pasta y se deja
que crezcan las bacterias y los hongos para que se sigan rompiendo los
azúcares y se redondee el mencionado compuesto. Para entonces, la mayoría de
los ginsenósidos se habrán convertido en compuesto K y por tanto serán de un
altísimo valor nutricional y 100% asimilables. A partir de ahí, se deja secar,
se muele y se encapsula.

South Korea you see innumerable fields covered by black sack cloths. Under the
canvases grows this popular root and that has a strong reputation all over the
world. But we must also know that this plant is the cause of the billions that
contributes to the GDP of this Asian country. Yes, the secret is well kept and
it is almost impossible to talk to someone about this plant and its
cultivation. The tight monopoly to which it is subjected begins already in its
"birth".
In Seoul it is common to see
executives who substitute a meal for a cup of this drink: water, red ginseng
and sugar. This is how they face work days, with the rush that this
"tisane" brings them. It is said and believed. I must say that I have
tried it and if it is true that when you drink it every day, you notice a
special vigor but there are no panaceas.
Its exports of red ginseng (South
Korea), in all formats, are around 600 million dollars. But the absolute
silence about this plant and everything that can surround it reigns over the
whole country.
However, there is a person who
drew the Korean ban on taking ginseng seeds and their secrets out of their
borders. Antonio Esteban Villalobos, owner of a very important and famous brand
of medicinal plants in our country, got it.
Antonio already knew the plant
and in fact he had bought it to include it in some of his ready-made products
but on one of his three trips to Korea, he found a person who opened it and
gave him information, previously reaching an agreement with he. I show him the
plants, he taught him how to proceed and gave him a few seeds, which I keep as
gold in cloth.
But it was not easy, since
treating those seeds was complex, following the instructions of the Korean
friend. He enriched them in the laboratory with plant growth hormones. Once
strengthened, he built the greenhouses and buried them in deep furrows. They
needed sprinkler irrigation, they never got waterlogged, and they were
protected from the sun and the icy wind because of it, they covered those
plants, by a dense cover of black plush.
At two years, when the
germination curdled, they were transplanted under the criteria of organic
farming. The land had to have a neutral pH and, to make matters worse, they had
to be covered by a bed of rice straw. Now six years later they bear fruit: a beautiful
root with children in the form of long hairs and reddish seeds that will serve
to extend and strengthen this pioneering project. This is the first ginseng
crop in Spain and Europe, surely. This medicinal plant occurs in cold and
mountainous areas of China, Korea, Russia, Japan .. but the specimens that
contain more properties are the Koreans
If we observe the plants closely,
they look splendid, with leaves of five lobes and fruits that, saving the
distances, remember those of the coffee plantations. Farmers now expect it to
be a waning quarter and the first frosts fall to proceed to unearth the
invigorating booty. When they are at zero degrees of temperature, the aerial
part will turn yellow, sending all their life to the roots to guarantee their survival.
They can last for tens of years.
Although the process to put the
product on the market does not end here, it is more, just started. After
unearthing them, they must be taken to the laboratory to begin the process of
cleaning, fermentation and vaporization that lasts two months. In this way they
will modify the molecules of the plant so that the body assimilates its
nutrients. From here they will encapsulate and reach the market.
It is advisable to take ginseng
for a period of two months, in times of decay resting afterwards. Beware of
consumption in hypertensive people. It is not indicated for children, pregnant
women, or very old people.
Some tips:
Korean industry uses 100% of

How are ginsenosides transformed

through vaporization and fermentation. The molecules of the ginsenosides, whose

In each capsule of ginseng
carries 6 milligrams of compound K, the real responsible for the activity of
this energizing plant.
What is vaporization? The first
step is to wash the roots to remove the soil. Then, they are placed in a steam
oven, at 60-70 degrees for three hours. It is important not to exceed this
temperature so that the root and its hairs do not cry, losing their active
ingredients through excessive sweating. The steam produces a chemical reaction
whereby the sugars are broken and Compound K is released. Then, the roots are
left at room temperature, although in a totally controlled environment, for 24
hours. This cycle is repeated nine times.
How does the fermentation process
work? After the 9 vaporizations, the roots have wrinkled, acquiring the red
color that makes it so characteristic. The active principles, far from being
lost, have been concentrated by dehydration. From there, it is ground and gives
rise to a dough with the texture of a pasty resin.
Then the fermentation arrives in
solid substrate. It is the moment in which bacteria and fungi must get down to
work to continue the transformation. The paste is moistened and the bacteria
and fungi are allowed to grow so that the sugars continue to break and the
aforementioned compound is rounded. By then, most of the ginsenosides will have
become compound K and therefore will be of a very high nutritional value and
100% assimilable. From there, it is allowed to dry, grind and encapsulate.
