comida donde se añada.
El tiempo de la flor de azafrán
es muy breve, ya que al abrirse, el 15 de octubre, se inicia el proceso de
recolección hecha a mano. Para reunir 1 kg de azafrán , necesitamos sobre
100.000 flores y tanto su proceso como la cantidad que se necesita hace que su
precio sea tan elevado.
El azafrán es un ingrediente que
se identifica profundamente con la cocina española y que también es muy apreciada en otras gastronomías,
como la árabe y la india. Pero no solo
tiene un uso gastronómico, también se usa para aromatizar ambientes.

Según la medicina popular, el azafrán tiene
propiedades emenagogas, es decir, regulador de la menstruación. También
estimula la sudoración y es incluso empleado para tratar las llagas y otras
infecciones bucales.
Aquí os dejo una receta típica
donde el azafrán es el ingrediente. Arroz
con azafrán y habitas baby.
Ingredientes
1 diente de ajo
250gr de arroz bomba
4 flores de azafrán
750ml de caldo de pollo
1 vaso de nata líquida
Sal
200gr de habitas
La receta es para cuatro personas y procederemos de la siguiente
manera; Pelar el ajo y picar la mitad; sofreírlo en un cazo con un chorrito de
aceite de oliva, el arroz y las hebras de azafrán correspondientes a las 4
flores. Incorporar el caldo caliente y dejar cocer a fuego lento durante 15
minutos. Añadir una pizca de sal y medio vaso de nata líquida, dejar cocer 5
minutos más hasta que el arroz esté
tierno y el caldo prácticamente se haya evaporado.
Pasar el arroz a un molde y dejar reposar 2 minutos.
Mientras el arroz reposa, escaldar las habitas peladas en agua
hirviendo durante 2 minutos, secar y saltear con el otro medio diente de ajo
laminado.
Para la presentación; en un cazo dejar reducir el medio vaso de nata
líquida restante con una hebra de azafrán y una pizca de sal y pimienta. Servir
el arroz acompañado de la salsa y
decorar con la flor del azafrán.
Para no abusar de la nata o crema de leche, se pude ligar este arroz
con una nuez de mantequilla o con un poco de queso parmesano rallado. También
se le puede dar 2 minutos más de cocción y presentar un arroz seco al azafrán.
Las flores de azafrán, que se consiguen a finales de octubre, casan
muy bien con setas de temporada. Así, este arroz resultará muy interesante si,
por ejemplo, al final de la cocción se le añade un manojo de trompetas de la

Pass the rice into a
