Os presento una nueva receta ,
perfecta para la época en que estamos .
¿Por qué?, pues porque los ingredientes
que vamos a utilizar son de plena temporada y además fáciles de encontrar en el
mercado . Tenemos que intentar conseguir productos km 0 .
¿Qué significa? pues que son
productos de huerto cercano a nuestra población y que por tanto, son productos
frescos que mantienen la mayor parte de nutrientes .
Seguiremos hablando de ello en
otros post. Ahora vamos a hablar sobre esta receta en la que utilizaremos
coliflor y manzana, ambos de invierno.
La Coliflor cuenta con un alto
poder antioxidante gracias a su riqueza en vitamina C. La fibra y los
compuestos azufrados son los responsables de la flatulencia y dificultad para
su digestión. Por su alto contenido en compuestos azufrados, desprende al
cocerla un olor característico (llegando incluso a ser desagradable) que se
puede rebajar añadiendo al agua de cocción un trozo de pan empapado en vinagre.
A la hora de comprar una coliflor hay que elegir los ejemplares limpios,
firmes, compactos y de hojas verdes y tiernas. Se conserva bien en el
frigorífico en una bolsa de plástico perforada durante al menos una semana o 10
días. Es aconsejable no lavarla hasta el momento de su consumo. Una vez cocida,
también se puede mantener en el frigorífico durante unos días, bien escurrida y
cubierta con papel aluminio. (fuente:

La manzana es otro producto que
se encuentra durante todo el año pero una de las mejores épocas para consumirla
es ahora.
La manzana es excelente para la
salud, es fuente de vitaminas A y del grupo B, aunque los contenidos cambian
según la variedad. Entre otras cosas, es rica en pectina (fibra) y en quercetina,
un antioxidante. Se recomienda comer con piel a mordiscos, pues ayuda a limpiar
los dientes y a regular el tránsito intestinal. La manzana es rica en fibra
soluble e insoluble, pero si se toma rallada y sin piel, resulta astringente
por la presencia de taninos, de ahí que se recomiende para la recuperación de
la diarrea. La manzana no se usa sólo para postres: es buena acompañante de
asados de carne o ensaladas de pollo.

La coliflor reparte sus nutrientes de la siguiente manera:
45% en proteínas, 8% lípidos y 47% carbohidratos.
Para la manzana el reparto es de 2% de proteínas y 98%
carbohidratos; con lo cual hacen de estos dos productos , productos anti fatiga
cargados de energía.

RECETA
Hay que tener en cuenta la
cocción de los productos, que es tan importante como la elección de los mismos
ya que podemos destruir los nutrientes debido a la exposición de altas temperaturas de cocción y largos
tiempos en el horno. Así que cuidado con esto, yo os doy alguna idea para
evitar la destrucción aunque siempre se pierde algún porcentaje.
Ingredientes 2 personas
½ coliflor
1 manzana
1 huevo
1,5 cuchara sopera de nata
líquida
50gr de queso rallado
1 pizca de nuez moscada rallada
Sal y pimienta
Preparación
Calentamos el horno a 180ªC
mientras preparamos los ingredientes pero intentar no superar los 200 grados.
Empezamos limpiando la coliflor
quitándole las hojas y el tronco central. Separar las ramitas y poner a
calentar el agua en una olla.
Cuando hierva, poner la coliflor
y dejar que cueza 5 minutos sin tapar. Luego, escurrimos bien la coliflor y
volvemos a repetir la operación , dejando cocer 10 minutos más y al terminar lo
escurrimos bien.
Luego, pelamos la manzana y la
cortamos en láminas finas.
En unas bandejas de horno
individuales, poner la coliflor, una
capa de manzana y después esparce un poco de gruyer rallado. Haz lo mismo de
nuevo hasta terminar los ingredientes, reservando dos cucharadas de queso
gruyer rallado.
Romper el huevo en un bol y añadir
la nata batiendo todo, salpimentar y agregar la nuez moscada. Batir de nuevo y
añadimos el resto de gruyer rallado. Vertimos esta mezcla sobre la coliflor y
lo ponemos a hornear. Dejar hornear durante 15 minutos aproximadamente pero que
nunca exceda de 20 minutos a 180 grados, tiene que estar dorado.
Intentar elegir manzanas dulces
para que haga un buen maridaje y de pulpa tierna, de este modo se deshará en la
cocción dando un sabor especial y rico.

GRATIN CAULIFLOWER
WITH APPLES
I present a new recipe , perfect for the time we are .
Why? , Because the ingredients that we
use are of high season and also easy to find on the market . We have to try to
get products km 0 . What does it mean ? they are products of garden close to
our village and therefore are fresh products that maintain the most nutrients.
We'll talk about it, in another post . Now we
will talk about this recipe that use cauliflower and apple, both belong winter
season .
Cauliflower has a high antioxidant due to its
richness in vitamin C. Fiber and sulfur compounds are responsible for
flatulence and difficulty in digestion. For its high content of sulfur
compounds , emits a characteristic odor when cooking ( even becoming unpleasant
) that can be lowered by adding to the cooking water a piece of bread soaked in
vinegar.
When buying a cauliflower have to choose clean
, firm , compact, green and tender leaves copies. Keeps well in the
refrigerator in a perforated plastic bag for at least a week or 10 days. It is
advisable not washed until the time of consumption . Once cooked , you can also
keep in the fridge for a few days , well drained and covered with foil.

The apple is excellent for health is a source

RECIPE

Ingredients 2 people
½ cauliflower
1 apple
1 egg
1.5 tablespoon of cream
50g grated gruyere cheese
1 pinch of grated nutmeg
Salt and pepper
Preparation
Heat the oven to 180 º C, while we prepare the
ingredients but try not to exceed 200 degrees.
We begin cleaning cauliflower leaves and
removing the central stem. Separate twigs and put warm water in a pot.
When boiling , add the cauliflower and let cook
5 minutes uncovered . Then drain well cauliflower and repeat the operation , leaving
to cook for 10 minutes , drain well again finishing
the cooking time .
Then peel the apple and cut into thin slices.
In single oven trays , place the cauliflower, a
layer of apple , then spread some grated gruyere . Do the same again to finish
the ingredients , reserving two tablespoons of grated gruyere cheese.
Break the egg into a bowl and add the cream
whisking all , season and add the nutmeg. Beat again and add the remaining grated
gruyere . Put this mixture over the cauliflower and put bake . Let bake for
approximately 15 minutes but never exceed 20 minutes at 180 degrees, must be
golden.
Tips:
Try to choose sweet apples make a good pairing
and tender flesh , so is cooking away in giving a special and rich flavor.
