COMO APROVECHAR LA COMIDA QUE SE COMPRA AL 100%


Cuando hablamos de “aprovechar” pensamos en reciclar y lo primero que se nos viene a la cabeza son las bolsas de plástico, los envases, el cristal, la basura espacial, los coches… pero nunca pensamos en la cantidad de residuos que cada uno de nosotros genera a lo largo del día, ni que decir, a lo largo de la semana.

Ya veis que como ejemplos de “basura” doy un amplio abanico pues no toda la culpa de contaminación la tiene el usuario de la calle, no, también el desarrollo de la sociedad, los inventos que nos ofrecen una vida más cómoda contaminan el ambiente directa o indirectamente. 
Si queremos solucionar problemas, siempre he dicho, que es indispensable decir la verdad y dar nombre a todo aquello necesario, de otro modo, lo único que hacemos es hablar sobre un problema para maquillarlo, no para solucionarlo.

Pues para esto escribo este post, para ayudar y dar ideas sencillas de como intentar aprovechar la compra semanal que hacemos evitando generar más residuos de la cuenta utilizando al máximo los productos que compramos y pudiendo ahorrar un poco más cada semana. Pero cuidado, no caigamos en la utopía, son pequeñas ideas para sacar partido a la compra no panaceas. Se compra bien pero quizás somos demasiados exquisitos.

Para poder entender esta información doy unas pequeñas pinceladas sobre desperdicios:
España es el séptimo país que más comida desperdicia con 7.7 millones de toneladas; Reino Unido está a la cabeza de este ranking con 14.4 millones de toneladas; Alemania con 10.3 millones; Holanda con 9.4 toneladas; Francia con 9 toneladas; Polonia con 8.9 toneladas e Italia con 8.8 toneladas, según datos de la comisión Europea.
En los hogares se calcula se desperdicia sobre el 42%, en fase de fabricación el 29%, en restauración el 14% y en distribución nos quedamos con un 5%. Es obvio que tenemos que trabajar la primera parte que es el hogar con su gran porcentaje.
Dinamarca es el país que más en serio se ha tomado este tema creando el movimiento Stop Spild Af Mad (parar el desperdicio de comida) ya que ha trasladado este tema a la agenda política. Una idea creada para y por los propios consumidores siendo un referente al que se ha unido supermercados y marcas. Los resultados han sido la reducción de un 25% de desperdicio.
En diciembre del 2016 Francia aprobó una ley obligando a los supermercados con más de 400 metros cuadrados a donar la comida que descartan para comedores sociales, alimentación animal o abonos. 
En España se ha avanzado poco en ese terreno.

Lo primero es saber que vamos a consumir o que acostumbramos a consumir para saber que comprar y como. No merece la pena comprar y que sobre porque al final se tirará. Hay que revisar la nevera antes de ir al mercado para saber que tenemos disponible y que necesitaremos, es bueno revisar la despensa para saber si algo caducará o si bien hay algún producto que no consumiremos , por tanto, es una idea congelarlo y aprovecharlo en otra ocasión antes de que se estropee.
Evidentemente, no se me ha ocurrido a mí la idea inicial pero si hay una corriente muy extendida sobre el TRASHCOOKING o lo que es lo mismo “cocinar con basura”. Dicho así, no es apetecible, cierto, pero expliquemos de que estamos hablando y veréis como esta idea que nos echa para atrás, tiene su razón de ser y es una buena idea.

Por ejemplo, cuando vamos a la pescadería a comprar una merluza, en varias ocasiones desechamos la cabeza o las espinar cuando son dos productos magníficos para transformarlos en algo sabroso.  Es obvio, que a veces se desechan las cosas por desconocimiento, falta de ideas… a mí me paso, pero ahora aprovecho absolutamente todo sacando el máximo partido a ese dinero que pago por un “pez”. Según el peso que tenga y los que seamos para comer, una parte de la merluza la preparo para el horno ( una comida) y el resto para hacerla cocida o frita (dos comidas). Con la espina y la cabeza hago un fumet de pescado que o bien lo tomamos con arroz, trocitos de pescado que sobraron como tropezones o bien para hacer una fideuá, fideos con calamar, cocer spaguetti dando un sabor de marisco al plato,  etc… como veis con alguna idea y un poco de organización tenemos tres o cuatro comidas con una sola merluza o pescadilla grande.

Con las mondas de las patatas también se pueden hacer unos chips estupendos si tenemos niños en casa o bien invitados, eso nos ahorraría una compra de aperitivo en el supermercado. Cómo? Fácil, se pelan las patatas con monda un poco más gorda, una vez bien lavadas las patatas, se dejan en un recipiente macerando con sal, pimienta o bien curry si le queremos dar un sabor especial. Se fríen crujientes y se sirven como aperitivo. Están buenísimas y además es algo especial.
En Galicia es muy típico, entre otros platos, el cocido. Como todos sabemos, siempre hay sobras pero la única solución para aprovecharlo no es solo la típica croqueta, también se pude hacer un arroz al horno estupendo, una lasaña, dependiendo de lo que haya sobrado se puede hacer un refrito añadiendo algún producto que le dé intensidad… y una vez hecho, si no dejamos pasar tiempo, lo podemos congelar para consumirlo otro día o un día que vayamos apretados de tiempo como plato socorrido.

Cuando pelamos los calabacines, que yo no lo hago nunca, podemos aprovechar esas pieles para dar color a un puré, también se pueden freír como chips, si han sido cortados finos o bien para hacer una moussaka junto con otros productos.
Si compramos un jamón, las partes secas que no comeremos las podemos trocear para hacer salteados y el uso, se puede llevar a cortar y aprovecharlo para hacer buenos caldos de verduras o carnes dando un sabor extraordinario al plato.
Sé que la vida ha cambiado y que no tenemos demasiado tiempo libre para pensar pero pensemos en esas personas, cada vez más, que su tiempo lo invierten en cocinar para relajarse, pues bien, ese es un buen momento para descongelar esos desperdicios o preparar algo y tenerlo como “plato socorro” una noche. No olvidemos que el mejor cocinero es aquel que con poca cosa o con ingredientes muy básicos, da placer al paladar. Luego están los creativos que además inventan y dan imagen a los platos pero ya estamos hablando de “cracs” de cocina
No es suficiente dar ideas teóricas , hay que pensar, crear e involucrar a las nuevas generaciones para que estas ideas y sobre todo esta actitud forme parte de su vida para poder ponerlo en práctica en un futuro como algo normal y habitual, divertido y positivo no solo para el bolsillo también para el medio ambiente.

HOW TO USE THE FOOD THAT IS PURCHASED 100%
When we talk about "taking advantage of" we think about recycling and the first thing that comes to mind are plastic bags, packaging, glass, space junk, cars ... but we never think about the amount of waste that each of we generate throughout the day, needless to say, throughout the week.
You see that as examples of "garbage" I give a wide range because not all the blame for pollution is the user of the street, no, also the development of society, the inventions that offer us a more comfortable life contaminate the direct environment or indirectly.

If we want to solve problems, I have always said that it is essential to tell the truth and give name to all that is necessary, otherwise, all we do is talk about a problem to make up, not to solve it.
Well for this I write this post, to help and give simple ideas of how to try to take advantage of the weekly purchase we do avoiding generating more waste of the account using the products we buy and to save a little more each week. But beware, let's not fall into utopia, they are small ideas to take advantage of the non-panaceas purchase. It buys well but perhaps we are too exquisite.
To understand this information I give a few small brushstrokes on waste:

In households, it is estimated that 42% is wasted, 29% is in production, 14% is in restoration and 5% is in distribution. It is obvious that we have to work the first part that is the home with its large percentage.
Denmark is the country that has taken this issue most seriously by creating the Stop Spild Af Mad movement (stop the waste of food) as it has moved this issue to the political agenda. An idea created for and by the consumers themselves being a reference to which has joined supermarkets and brands. The results have been reducing waste by 25%.
In December 2016, France passed a law obliging supermarkets with more than 400 square meters to donate the food they discard for soup kitchens, animal feed or fertilizers.
In Spain, little progress has been made in this area.

The first thing is to know that we are going to consume or that we usually consume to know what to buy and how. It is not worth buying and what about because in the end it will be thrown away. You have to check the refrigerator before going to the market to know what we have available and what we need, it is good to check the pantry to know if something will expire or if there is a product that we will not consume, therefore, it is an idea to freeze it and take advantage of it in another chance before it breaks down.

Obviously, I have not thought of the initial idea but if there is a widespread current on the TRASHCOOKING or what is the same "cooking with garbage." That said, it's not appetizing, true, but let's explain what we're talking about and you'll see how this idea that throws us back, has its reason for being and is a good idea.
For example, when we go to the fish shop to buy a hake, on several occasions we discard the head or the thorn when they are two magnificent products to transform them into something tasty. Obviously, sometimes things are discarded because of ignorance, lack of ideas ... it happened to me, but now I take advantage of everything, making the most of that money I pay for a "fish". Depending on the weight you have and those that you are to eat, one part of the hake is prepared for the oven (one meal) and the rest to make it cooked or fried (two meals). With the spine and the head I make a fish fumet that we either take with rice, pieces of fish that were left over as stumbles or to make a fideuá, noodles with squid, cook spaghetti giving a seafood flavor to the dish, etc ... You see with some idea and a little organization we have three or four meals with a single hake or big whiting.

With potato chips you can also make some great chips if we have children at home or guests, that would save us a snack purchase at the supermarket. How? Easy, the potatoes are peeled with a little more fat, once the potatoes are well washed, they are left in a bowl macerating with salt, pepper or curry if we want to give a special flavor. They are fried crispy and served as an appetizer. They are delicious and it is also something special.

In Galicia it is very typical, among other dishes, the cocido. As we all know, there are always leftovers but the only solution to take advantage of it is not only the typical croquette, you could also make a great baked rice, a lasagna, depending on what you have left you can make a refried adding some product that gives intensity ... and once done, if we do not let time pass, we can freeze it to consume another day or a day that we are tight of time as a dish.
When we peel zucchini, which I never do, we can take advantage of those skins to give color to a puree, they can also be fried like chips, if they have been cut thin or to make a moussaka along with other products.
If we buy a ham, the dry parts that we will not eat can be sliced to make sautéed and the use, it can be cut and used to make good broths of vegetables or meats giving an extraordinary flavor to the dish.
I know that life has changed and we do not have too much free time to think but think of those people, more and more, who spend their time cooking to relax, well, that's a good time to thaw those wastes or prepare something and have it as "relief dish" one night. Let's not forget that the best cook is one who, with little or very basic ingredients, gives pleasure to the palate. Then there are the creatives who also invent and give image to the dishes but we are talking about kitchen "cracs"
It is not enough to give theoretical ideas, you have to think, create and involve new generations so that these ideas and especially this attitude is part of your life to be able to put it into practice in the future as something normal and habitual, fun and positive. only for the pocket also for the environment.
