medios y son los mas conocidos aunque hayan mujeres , algunas, que salgan de
vez en cuando pero hablaremos de las 10 mueres chefs que están arriba de todo
así como los sacrificios que han hecho para poder encumbrarse: SACRIFICIO A
TODOS LOS NIVELES.
Lo sorprendente es que las
mujeres siempre han cocinado para las familias, han aprendido a cocinar con sus
madres y abuelas pero es una excepción que lleguen al “Olimpo” de la cocina.
Evidentemente, las que han llegado han demostrado una energía espectacular,
fuerza de voluntad y tesón.
Se preocupan por la alimentación
sana, la sostenibilidad, por el producto local y reinventan recetarios
tradicionales que aprendieron de sus madres y abuelas. Son cocineras que se han

Carme Ruscalleda. Nació en Sant
Pol de Mar, está casada y tiene dos hijos. Es la mujer con más estrellas
Michelin de España (7). Su aventura empieza en una charcutería donde su marido
y ella vendían comida para llevar. Debido a la demanda y exigencia de sus
clientes tuvieron que decidir entre remodelar la tienda o comprar un hostal con
enclave idílico incluyendo jardín y vistas al mar. “Abrimos el restaurante porque queríamos un
espacio con personalidad y sabor puro. Ese vuelo personal y libre tenía un
precio muy alto, ya que mi marido y yo somos autodidactas. “siempre he
trabajado con honestidad y entrega extrema”… “el camino no fue fácil aunque
tuvo ayuda de su madre. Ahora sus dos hijos continúan la saga y no paran de
innovar”.
Está convencida de que la
alimentación y la actitud alargan la vida y ha creado desde cartas antiaging
hasta un menú degustación de colores pasando por platos que son músicas bailables.

Elena Arzak nació en San
Sebastián, casada y tiene dos hijos. Posee 3 estrellas Michelin y en el 2012
fue nombrada la mejor chef del mundo. En su caso fue muy importante la figura de la abuela
paterna, que era cocinera. También su madre, muy valiente, con ideas claras
pero no olvidemos a su padre Juan Mari Arzak, el que le dio las pautas y juntos
han conseguido la hazaña de mantener el restaurante entre los mejores del mundo.
Su mundo es la creatividad y comparte su pasión con sus dos hijos, Nora y Mateo
“les enseño a cocinar porque es importante llevar una vida saludable y además
se divierten”. El 80% del personal del restaurante son mujeres.
María Marte, nació en República
Dominicana, casa y tiene tres hijos. Posee dos estrellas Michelin. Es una gran
admiradora de Carme Ruscalleda y Elena Arzak: “me gustó mucho visitar Arzak y
ver que las cocineras eran mujeres, y que también mandaban en sala. “ “Mi vida
ha sido muy sacrificada, de lucha muy dura”.
Ha logrado ya reconocimientos como el Premio Nacional de Gastronomía y
su reto es seguir cocinando desde el corazón. “las chef somos menos porque es

Fina Puigdevall, nació en Girona,
casada y tiene 3 hijas. Posee dos estrellas Michelin. “Me metí en esto hace 26
años por amor a la casa. Jamás me imaginé este recorrido”. Ha conseguido
premios de arquitectura y también de gastronomía “nuestra cocina es radical.
Nos hemos diferenciado con los productos. Nos gusta trabajar con el alforfón,
la harina más ancestral que se utiliza en nuestra zona, un producto que incluso
estuvo en peligro de extinción”. Se levanta a las 7 de la mañana para acompañar
a su hija al instituto y se acuesta a partir de la 1.30h de la madrugada, tras
el último servicio. “No distingo entre tiempo de ocio y de trabajo, porque me
lo paso igual de bien. Si consigues equilibrio, todo se sustenta. Tuve mucha
suerte de contar con mi madre”.
Susi Diaz nació en elche, casada
y tiene dos hijos. Posee una estrella Michelin. En el equipo, su familia: “ Mi
hija lleva la bodega y la sala. Tiene un don impresionante que ha heredado de
su padre. Mi hijo es mi agenda. Gracias
a su ayuda puedo estar en televisión, con mis cocineros…” “me gusta mimar cada

María José San Román. Nació en Valladolid, esta casada y tiene 3
hijos. Posee una estrella Michelin. Lleva 40 años en el sector de la hostelería
y dirige el grupo Gourmet en Alicante con cuatro restaurantes, un centenar de
empleados y diferentes proyectos gastronómicos. “Durante mucho tiempo fui
empresaria pero llego un momento en que quise volver a los fogones”. The New
York times destacó su trabajo como reina del azafrán. También es actualmente
embajadora del aceite de oliva virgen en todo el mundo. Su vitalidad es
arrolladora y se define como “una mujer superlibre a la que le encanta lo que

Pepa Romans Nació en Ondara,
casada y tiene 5 hijos. Posee una estrella Michelin. Es un claro ejemplo de la
lucha constante de la generación anterior. Nació en 1944, se casó por primera
vez con 16 años, tuvo cinco hijos y lleva tres décadas con su segundo marido.
Le apena que la igualdad esté todavía muy lejos: “un hombre puede tener niños y
dedicarse a lo que le gusta, pero nosotras nos ocupamos del negocio, de la
familia,… no tenemos el tiempo que necesitamos para crear”. Sus hijas se han
involucrado en el negocio. “Nunca he llevado los problemas de casa al
restaurante, porque es el lugar donde tengo la ilusión de estar y trabajar. Mis

Beatriz Sotelo. Nació en
Pontevedra, casada y tiene un hijo. Tiene una estrella Michelin. “Procedo de un
pueblo pequeño y de una familia donde todo sucedía alrededor de una cocina” ”en
mi casa cultivamos verduras, criábamos animales y se aprovechaba el producto de
temporada”. Se marchó de su casa a los 20 años para estudiar, pasó de estar con
su familia a sentirse sola: “trabajaba en un mundo de hombres y no tenía a
nadie con quien compartir y hablar de mis problemas”, reconoce.
Begoña Rodrigo nació en valencia,
esta casada y tiene un hijo. Estudió ingeniería industrial y acabó en un hotel
de amsterdam haciendo tapas. Fue allí donde descubrió su vocación. Fue ganadora
de Master Chef. Su jornada laboral comienza a las siete de la mañana en el
gimnasio, a las ocho desayuna con su hijo y termina el día a la una de la
madrugada. “cuando decidi ser cocinera entendí que mi vida iba a ser mi
profesión. Mi hijo de tres años se amolda a mis horarios”.
Macarena de Castro nacio en Palma
de Mallorca, soltera y no tiene hijos. Posee una estrella Michelin. EN un
congreso donde Carme Ruscalleda exponía
