Ya terminamos con las comilonas
de Navidad, las invitaciones y ahora queda la época de las buenas intenciones y
entre ellas, comer más ligero y prepararnos para el próximo verano aunque con
estos temporales es difícil pensar en ello.
Pero hay siete productos
importantes que no deberían faltar en nuestra despensa y que además deberían
estar incluidos en nuestra dieta semanal.
Estos productos están llenos de nutrientes y son pobres en sustancias tóxicas.
Los huevos ecológicos cuya
normativa exige que las gallinas vivan en libertad y se alimenten con productos
de agricultura ecológica, son más nutritivos. En cuanto a vitamina A, son más
ricos que un huevo normal, tienen el doble de grasas omega-3, el triple de vitamina
E y siete veces más betacaroteno que los huevos convencionales. Todo esto con
menos colesterol y grasas saturadas. Su proteína es saludable y nuestro
organismo la metaboliza de manera que actúa como un fármaco antihipertensivo.
Hay muchas maneras de prepararlos
como cocido, en tortilla , pochados, fritos, con tomate o pisto, salsas y
postres.
Los boletus edulis es otro
producto importante, perfumado y delicioso. Estas setas aportan fibra,
minerales, cobre, potasio, zinc, selenio, vitaminas del grupo B y proteínas,
todo con un desprendimiento de aromas del bosque que despiertan nuestros
sentidos. Pero esto no es todo, se dice que son anticancerígenos y que podrían
ser una opción terapéutica frente al temible cáncer de colon.
Se pueden tomar de diferentes
maneras pero una de ellas es mezclado con pasta , arroces, con cebolla
caramelizada, en revueltos. De cualquier manera están sabrosos y exquisitos.
Los berros son uno de esos
superalimentos favoritos, en mi caso. Sus compuestos de azufre previenen infecciones
y hasta frenan el desarrollo de tumores, contienen folato, vitamina C, más
hierro que las espinacas y su fibra
“alimenta”las bacterias intestinales beneficiosas. 100gr de berros al día
duplican los niveles en sangre de antioxidantes que ayudan a prevenir tumores
de mama y de pulmón. Si se toman antes de hacer ejercicio ayuda a controlar los
radicales libres.
El alimento numero 4 es el arroz
salvaje. No es un cereal, sino una hierba nativa de los Grandes Lagos
norteamericanos, que los indios de esas zonas llevan siglos recolectando a mano
desde sus canoas. Rico en proteínas, fibra y vitaminas del grupo B, aportan
minerales, tienen el triple de magnesio que el arroz basmati y gran cantidad de
potasio.
Este tipo de arroz combina con
todo tipo de veduras,frutos secos, setas , pollo , tofu, huevos , legumbres,
ensaladas… Se puede cocinar cocido o bien al vapor. Tarda en cocer algo más que
el arroz normal.
Las sardinas, pescado azul y
aportador grande de grasas omega-3, por tanto un bálsamo para las neuronas. A
mi me encantan pero no hacerlas, solo comerlas, por ello , cada vez que tengo
la oportunidad de comerlas porque las hacen en un bar, restaurante, etc… allí
que me apunto. También hay otros pescados con grandes propiedades como el
salmon, arenques, caballa… pero intentemos no consumir pescados de grandes
dimensiones para evitar las cantidades de metales pesados que pueden acumular.
La almendras. Con gran contenido
de vitamina E, cobre, magnesio, calcio, zinc, potasio, proteínas, grasas sanas,
carbohidratos y mucha fibra. Los deportistas toman un puñado de almendras para
ayudar a mantener la energía. Para los no tan deportistas con 10 o 16 almendras
diarias es suficiente para absorber sus nutrientes y no aumentar de volumen
corporal. Las almendras ayudan a mantener el hambre y además ayuda al retraso del envejecimiento.
Se pueden consumir, crudas,
tostadas y fritas aunque no son muy aconsejables, estas últimas, ya que llevan
demasiado aceite y puede aumentar los niveles de colesterol y triglicéridos.
Las tostadas se digieren mejor que las crudas
y liberan más nutrientes.
También se puede hacer una salsa
deliciosas con gorgonzola y mostaza. Se coge un vaso de70gr de gorgonzola, una
cucharada de aceite de oliva virgen extra suave, un chorro de leche entera, una
cucharada de mostaza, 50gr de almendras tostadas , sal y pimienta.
Tritúrarlo y listo. Esta salsa puede
aliñar o acompañar carnes, verduras y ensaladas … y si la haces un poco espesa
como dip.
Por último, hablaremos del alga
kelp. ES de color marrón, aporta yodo, proteína, magnesio, potasio o calcio en
cantidades más elevadas que cualquier vegetal terrestre y es una fuente
importante de omega-3. Su gran aporte de fibra tiene efecto détox, previene el
estreñimiento y ayuda a controlar el apetito.
Se utiliza incorporándolas a
caldos, sopas, arroces y otros guisos. Cuando se adquieran hay que mirar que
lleven el certificado ecológico.
Bien pues hasta aquí una pequeña
información sobre 7 productos con grandes nutrientes que nos pueden favorecer al
consumirlos con asiduidad.

But there are seven important products that

weekly diet. These products are full of nutrients and are poor in toxic

development of tumors, contain folate, vitamin C, more iron than spinach and
its fiber "feeds" beneficial intestinal bacteria. 100gr of watercres
a day doubles the blood levels of antioxidants that help prevent breast and
lung tumors. Taking them before exercise helps control free radicals.
Food number 4 is wild rice. It is not a cereal,
but a native herb of the Great North American lakes, that the Indians of those
zones have been collecting by hand from their canoes for centuries. Rich in
protein, fiber and vitamins of group B, they contribute minerals, they have
triple of magnesium that the basmati rice and great amount of potassium.
This type of rice combines with all kinds of

You can also make a delicious sauce with
gorgonzola and mustard. Take a glass of 70gr of gorgonzola, a spoonful of extra
virgin olive oil, a stream of whole milk, a spoonful of mustard, 50gr of
toasted almonds, salt and pepper. Tritúrarlo and ready. This sauce can dress or
accompany meats, vegetables and salads ... and if you make it a bit thick as a
dip.
Finally, we will talk about kelp algae. It is
brown, it contributes iodine, protein, magnesium, potassium or calcium in
amounts higher than any terrestrial vegetable and is an important source of
omega-3. Its great contribution of fiber has détox effect, it prevents the
constipation and helps to control the appetite.
It is used incorporating them to broths, soups,
rices and other stews. When they are acquired, it is necessary to see that they
