Estados Unidos después de Nueva york, pues está
dotada de impresionante arquitectura, rica cultura musical y , obviamente,
orgullo en el mundo del baloncesto. Lo que se desconoce es su tradición y
oferta gastronómica, las cuales son tan ricas como las de la Gran Manzana.
No es de extrañar que en Chicago
haya habido desde siempre una tradición gastronómica latente. El nombre de la
ciudad viene del vocablo shikaakwa, que
significa “cebolla silvestre”. Por algo será. Pero lo que realmente influyó de
forma muy positiva para que la culinaria actual sea tan multiforme fue la
cantidad de diferentes culturas que durante siglos desembarcaron en esta urbe
inmensa pero entrañable. Y no existe mejor ejemplo para corroborar esta
comida-manía que la famosa reunión anula llamada Taste. Durante este festival
gastronómico, que se celebra en el verano, se sirve una gran cantidad de platos
en restaurantes o puestos de alimentos. Dentro del variado menú hay comida
local pero también una diversidad de sabores que confirman el carácter
cosmopolita del lugar.
Durante años Chicago presumió de
platos que se hicieron mundialmente famosos: la Deep-dish pizza, el hot dog
Chicago style o la barbacoa. Pero una pieza
clave e indiscutible en el desarrollo de la gastronomía contemporánea de
la ciudad fue el recientemente desaparecido Charlie Trotter, que durante 25
años mantuvo en primera fila el restaurante que llevaba su nombre,
alcanzando dos de las preciadas
estrellas Michelin.
Pero centrémonos en una nueva ola
“casual” o “confort”de restaurantes que surgió allí hace más de una década,
particularmente en los últimos cinco años. El principal precursor de este
movimiento es el chef local Paul Kahan. Aunque el restaurante que le lanzó a la
fama, Blackbird, es mas de tipo fine-dinning, sí sentó las bases después en
esta categoría gastronómica con Avec o The Publican.
Pero hay otros dos lugares que
llaman bastante la atención. Uno es The Purple Pig, que por su nombre ya nos
dice que el protagonista de su rico menú es el cerdo.
En la famosa Michigan Av. Se
encuentra este simpático establecimiento, liderado por el chef Scott Harris.
Por su decoración, recuerda a un típico bar de tapas madrileño.
Y en su carta encontramos una muy
buena selección de quesos y carnes frías, así como unos interesantes
antipastos. En su carta con estilo mediterráneo-americano, se destaca el
corazón de cerdo con pimientos dulces y
giardiniera, la cola de cerdo braseada con salsa gribiche o el secreto
un corte de cerdo muy español.
Volviendo a Paul Kahan, no
podemos dejar de lado su última aventura, Nico Ostería. Con una gran barra que
sirve de cocina a la vista, la cantidad de platos de cocina italiana con cierta
fusión asiática, hechos con pescados y mariscos, son increíbles. Nada como el
menú de crudos, que es para llegar al éxtasis- caviar , ostras, hamachi con
kumkuats salmón salvaje marinado con sal de lava, atún con tomates frescos y
vinagreta de icewine-, mientras se disfruta de unas copas de frío prosecco.
También cuenta el menú con pasta, pescado del mercado y plato fuerte.
En unos meses abrirá sus puerta
en chicago un gran restaurante-mercado de cocina latina y española. Sin duda,
será otro destacado en este repertorio de joyas gastronómicas que existe en

CASUAL FOOD IN CHICAGO
They say chicago is the second most interesting
city in the United States after New York, as it is endowed with stunning
architecture, rich musical culture and obviously pride in the basketball world.
What is unknown is its tradition and gastronomy, which are as rich as those of
the Big Apple.
No wonder it has always been latent in Chicago
