ALGA COCHAYUYO
interesantes que la han hecho pasar de ser un alga
desconocida a ser cada vez más popular.
Yo la he descubierto en Santiago
de Chile donde campesinos vienen a la ciudad a venderla. EL primer día que la
vi pensé que era un alga pero la verdad es que no pude más que buscar
información sobre ella y aquí la tenéis.
Se trata de un alga marina de
gran tamaño que puede llegar a alcanzar los 15 metros de longitud. Su aspecto
es muy diferente al de la mayoría de las algas que se comercializan. Su
consistencia es carnosa y firme. Su sabor es intenso y su aroma, al igual que
el alga Hiziki, nos recuerda mucho al mar.
Su intenso sabor la hace ideal
para sopas, estofados, paellas y todo tipo de pasta (a trocitos pequeños y
salteada)
El alga Cochayuyo ha sido uno de
los recursos alimenticios de comunidades indígenas americanas durante siglos.
El pueblo mapuche, especialmente
los Lafkenche (hombres de la costa), han combinado, durante siglos, el cultivo
de la tierra con la peligrosa "recolección" del Cochayuyo.
Recordemos que se corta la base
del alga de las rocas de los acantilados y se deja que sea la marea la que
saque las algas a la orilla, donde será recogida y puesta a secar sobre las
rocas. Después las mujeres y los niños ayudarán en la playa a trasladarla en
carreta hasta la casa.
Hasta hace poco para venderlas
debían ir a las ciudades en carreta con bueyes y debían ausentarse durante
semanas.
Ahora con la Carretera de la
Costa lo tienen mucho mejor. De hecho incluso algunos compradores se acercan
ellos mismos a comprarlas.
Los retos de este pueblo son
continuar recolectando el alga Cochayuyo sin agotar los recursos marinos,
conseguir buenos precios y que los jóvenes quieran continuar con la tradición.
Se verá en la evolución de la
vida y en un futuro próximo.
Propiedades del alga Cochayuyo
Muy recomendable en dietas de
control de peso. Por un lado es rica en fibra (efecto saciante y combate el estreñimiento), bajo contenido en
grasas y alto contenido en yodo.
Ayuda en el control de
colesterol. Su fibra arrastra parte del colesterol junto con las heces,
contribuyendo a reducir sus niveles en sangre.
Ideal para el estreñimiento ya
que tiene un altísimo nivel de fibra (47,5 g. por cada 100 g.)
Previene el bocio y el
hipotiroidismo gracias a su alto contenido de yodo (490 microgramos
/100 gramos)
Buen efecto depurativo debido a
su riqueza en ácido algínico.
En épocas de cansancio o
agotamiento crónico. Su gran cantidad de minerales, proteínas y oligoelementos
ayudan a tonificar nuestro organismo.
Aconsejable para la acidez de
estómago. Sus mucílagos atrapan los ácidos y ayudan a eliminar su exceso.
Respecto a su composición
nutricional cabe destacar su gran aporte de fibra y de minerales tales como
yodo, calcio, hierro, magnesio y manganeso.
Hay dos tipos de alga cochayuyo
para la venta: negros y amarillos. El negro se deja solear un día nada más y se
vende entre las comunidades del interior (Huenteche y Pehuenche), ellos
prefieren así el cochayuyo porque es más sabroso.

Contraindicaciones
Dado su elevado contenido de
sodio (3460 mg/100 g), su consumo no está aconsejado en caso de hipertensión y
por su alto aporte de yodo, en personas que sufren de hipertiroidismo.

SEAWEED COCHAYUYO
The Cochayuyo alga has very interesting
