LAS FLORES ,SU BELLEZA Y SU UTILIDAD EN LA COCINA
Hace unos meses, cayó en mis manos un libro hermoso llamado el
sabor de las flores. Me chocó su portada pues tenía un aspecto Luis XV  ( por su portada y puesta en escena) , una imagen glamurosa , equilibrada, bella y delicada . Con una letra escrita a plumilla y esos volúmenes que toman las letras antiguas de libros codiciados por todos.

Empecé a leerlo porque me pareció muy atractivo e interesante. Cocinar con flores. Aprovechar su olor y fragancia para que realcen nuestros platos no solo en ese equilibrio de sabores y olores, también en esa belleza efímera que dan los frutos creados por el sol y la luz de la vida.

A mí me encantan las flores , sobre todo aquellas que desprenden aromas especiales y sensuales como la gardenia, jazmín, flor de azahar, mimosas,  lilium… y tantas flores hermosas que hay y se pueden encontrar en el  Mundo.
En algunas ocasiones he hablado sobre el significado de alguna de ellas, pero esta vez hablaremos de su utilidad en la cocina de la mano del  cocinero Iker Erauzkin.

Desde luego a las personas que nos gustan las flores y sus aromas, que nos gusta oler la vida no hay nada mejor que cerrar los ojos y olor una flor que desprende un aroma que para nosotros, es algo especial y agradable. Nos transporta a un lugar que se ilumina con la luz que dicho aroma nos ofrece y esa luz se transforma en un color y una sensación especial que para cada uno de los receptores visualizará de forma diferente dependiendo de cada uno y de su sensibilidad.
 Bien en primer lugar, dejad que os presente quien es Iker a grandes rasgos o lo que es lo mismo una biografía rápida.
Iker Erauzkin, nacido en Bilbao en 1976, aprendió desde muy temprana edad, las recetas más tradicionales  junto a su abuela. Con 16 años se va a Paris donde descubre todo lo que la buena mesa puede ofrecernos.
En 1999 comienza en el País Vasco a trabajar hasta 2002 cuando decide trasladarse a Cataluña. Allí recibe varios premios y reconocimientos por su buen hacer en la cocina de vanguardia del país.
También se dedica a impartir cursos-talleres de cocina en el Aula de la Boqueria, así como cocinando para eventos especiales y en su último proyecto, como asesor creativo de la empresa Openpan, que se trata de una empresa de catering de “sandwich enrollados” destinada al servicio de almuerzos en Barcelona, gimnasios, aeropuertos, etc  y han creado unos “enrollados” gourmets, dando mucha importancia a la parte nutricional y con una filosofía de sostenibilidad.

Es autor de los libros "El sabor de las flores", "Sabores de ayer, cocina de hoy" y "Cocina de fiesta". Su libro ,,el sabor de las flores, que os presento hoy, es un disfrute para los sentidos. Nos habla de sus propiedades, belleza, aroma, sabor y la multitud de posibilidades en la cocina que nos ofrecen y nos lo demuestra con un buen número de recetas tradicionales y de vanguardia donde las utiliza. De una manera sencilla nos enseña a descubrir qué flores combinan con ciertos alimentos.

Yo os iré colgando diferentes post incluyendo información para que así todos podamos participar del saber hacer de este profesional y estudioso, enamorado de su trabajo.

Algunas personas piensan que con la comida no se “juega” pero pensad por un momento un plato rico, de los de antes o ahora, bien condimentado y que además de ser nutritivo y saludable tiene una presentación excepcional que cuando coges y pruebas un pedacito todos tus sentidos se nublan y llegas a levitar por un momento gracias al placer que te produce el sabor, la olor, la textura y la imaginación. Algo explosivo con un solo objetivo el del éxito asegurado.

Las flores en la gastronomía vienen de antigüo: griegos, romanos, chinos y Arabes ya las utilizaban.
Lo más difícil es elegir la variedad, pero el tipo de plato nos guiará para descubrir sus afinidades. Encontraremos varias pistas en los textos de cada flor.
Otro punto importante es el origen: las flores deben tener unos cuidados mínimos, sin productos químicos, y la planta debe estar sana y libre de plagas. Al comprarlas hay que asegurarse que ha sido cultivada con fines comestibles y  no hay que olvidar lavarlas con agua fría.

Las flores de las hierbas aromáticas también merecen atención: son fáciles de guardar y puede aprovechar sus floraciones para añadirlas a los platos que lleven hierbas: tomillo, romero, etc…

Recomendaciones
·         No cortar nunca flores de jardines desconocidos, ni de parques protegidos o árboles frutales.
·         No comprar flores en la floristería, sino en tiendas especializadas en flores comestibles.
·         Asegurarse que no han sido tratadas con pesticidas o productos químicos.
·         Consumir solo los pétalos.
·         Utilizar la justa medida para evitar que tapen el sabor de los productos principales.
·         En general, las flores se conservan en la nevera, unos mejores que otros pero siempre en un recipiente tapado.

FLOWERS , YOUR BEAUTY AND YOUR INCOME IN THE KITCHEN
A few months ago , I came across a beautiful book called The flavor of the flowers. I ran the cover because he had a look Louis XV ( by its cover and staging ) , a glamorous , balanced , fine and delicate image . With a pen and written to those volumes that take the old lettering books coveted by every letter.

I started reading it because I found very attractive and interesting . Cooking with flowers. Harnessing the smell and fragrance to enhance our dishes not only in the balance of flavors, and also in that fleeting beauty that give the fruits created by the sun and the light of life .

Personally, I love flowers , especially those that give off special and sensual scents like gardenia , jasmine , orange blossom , mimosa , lily ... and there are so many beautiful flowers and can be found in the World .
Sometimes I talked about the meaning of any of them, but this time we will discuss its utility in the kitchen of Chef Iker Erauzkin hand .

Of course the people we love flowers and aromas, we like to smell life there is nothing better to close your eyes and smell a flower gives off a scent that for us, is something special and nice. We are transported to a place that glows with the light scent that offers us and that light is transformed into a color and a special feeling for each of the receptors displayed differently depending on each and sensitivity.
 Well first, let me introduce who is Iker broadly or what is the same thing a quick biography.
Iker Erauzkin , born in Bilbao in 1976 , he learned from an early age, the most traditional recipes with her grandmother . With 16 years is going to Paris where she discovers all that good food can offer .
In 1999 in the Basque Country begins to work until 2002 when he decided to move to Catalonia. There he received several awards and recognition for their good work in avant-garde cuisine of the country.
It is also dedicated to teaching courses , cooking workshops in the Aula de la Boqueria , and cooking for special events and on his latest project , as a creative consultant Openpan company , which is a catering company " rolled sandwich" intended to serve lunch in Barcelona , gyms , airports, etc. and have created a " wound " foodies , giving much importance to the nutrition part and with a philosophy of sustainability.

He is the author of the books " The taste of flowers" , " Flavors yesterday kitchen today " and " kitchen party " . His book, The flavor of the flowers, that I present today is a delight for the senses. It talks about its properties , beauty , aroma , taste and the multitude of possibilities in the kitchen that we provide and we demonstrate with a number of traditional recipes and cutting edge where used. In a simple way teaches us to find out what flowers combine with certain foods .

I will go post including hanging different information so that everyone can participate in the expertise of the professional and student , in love with his work.

Some people think that the food is not " playing " but think for a moment a rich dish of before or now , well seasoned and in addition to being nutritious and healthy has a fantastic presentation that when you pick up and testing a bit all cloud your senses and get to levitate for a moment by the pleasure it affords you taste, smell , texture and imagination. Something explosive with a single objective of assured success.

The flowers come in gastronomy Oldest : Greeks, Romans, Chinese and Arab and used .
The hardest part is choosing the variety, but the kind of dish will lead us to discover their affinities . Find several clues in the texts of each flower.

Recommendations
• Never cut flowers unknown gardens or parks or protected fruit trees.
• Do not buy flowers at the florist , but edible flower shops .
• Ensure that they have not been treated with pesticides or chemicals.
• Eat only the petals.
• Use the right size to avoid clogging the flavor of the main products .
• In general , the flowers are kept in the fridge, some better than others but always in a covered container.
