Cada vez utilizamos más las
hierbas aromáticas para evitar la sal o el vinagre o bien para que nos aporte
esa sensación a lleno cuando comemos para que la ansiedad no se apodere de
nosotros. Pero no sabemos demasiado sobre las propiedades de dichas hierbas.
Hoy hablaremos de una muy popular
y agradable al paladar siendo, también, fácil de conseguir en cualquier lugar.
Es la albahaca.
Se hizo popular gracias a los
Italianos y a su mozzarella con tomate y albahaca, luego se fue incorporando a
diferentes platos y salsas hasta convertirse en algo popular, en nuestro país.
Esta plata crece en una mata con numerosas
ramificaciones que pueden alcanzar hasta los 60 cm de altura. El perfume de la
albahaca se adhiere de inmediato a nuestros dedos nada más tocar una hoja. Su
aroma es tan fuerte que domina incluso el del ajo, pero desgraciadamente es muy
fugaz y desaparece con el calor.
La albahaca procede de la cuenca mediterránea, por
lo que Grecia, Italia y Francia son los países en que se utiliza con más
frecuencia.
Existen más de cuarenta variedades diferentes. Dependiendo de los
países de procedencia y se diferencian entre sí por el tamaño de las hojas y la
intensidad del color y del aroma.
La albahaca no solo aporta aroma, sino que estimula la digestión y
combate las flatulencias. Contiene vitamina A y C en cantidad notable y también
minerales como calcio, potasio y magnesio. Claro está que, al ser utilizada
como condimento, la cantidad que aporta a la alimentación es insuficiente como aporte
nutritivo.

La albahaca se alía de maravilla con los tomates, los guisos de
cordero, los quesos frescos, sopas y pastas, pero siempre añadida en los
últimos instantes de la preparación, a fin de aprovechar al máximo su aroma,
sumamente volátil.
Cuando se compra hay que hacerlo dentro de su temporada que es desde
mayo hasta septiembre, aunque en un clima adecuado puede durar hasta diciembre.
Como es esencial usarla fresca, lo más adecuado es comprar una planta e ir
cogiendo las hojas a medida que nos hagan falta. Si se cortan los brotes
superiores evitaremos que salgan las flores por tanto saldrán más hojas ya que
los tallos laterales se desarrollaran mas.
Para su conservación, los tallos pueden durar hasta dos días en el
frigorífico envuelta en film transparente pero las hojas se ponen laceas y
pierden aroma. Una forma de hacerlas más duraderas es introducirlas en un tarro pequeño con capas
de sal entre las hojas y llenarlo de aceite de oliva. Antes, es preciso
lavarla, dejarla secar al aire y quitar las hojas de los tallos más duros. Los
tallos tiernos deben conservarse pues
son los que acostumbran a retener más el aroma.
El aceite debe rebasar las hojas y el tarrito debe guardarse en el
frigorífico. Si las hojas se mantienen siempre totalmente cubiertas por el
aceite, aguantan en buen estado hasta seis meses.
Aunque sean recolectadas de nuestra propia maceta o jardín, una regla
de oro para todas las hierbas es lavarlas y después secarlas muy bien. Así se
elimina el polvo o las sustancias nocivas del ambiente que hayan podido
acumular. En el caso de la albahaca es mejor dejarlas secar al aire para
mantener su aroma ya que es muy volátil.
Sometidas a cocción, el aroma de la albahaca se esfuma casi en su
totalidad. Se debe, pues, agregar a los platos en el último momento y, a lo
sumo, calentar ligeramente.
Para terminar os dejo una receta de una ensalada estupenda para el
verano. La ensalada de mejillones con albahaca. Esta receta tiene su origen en
Francia.
Ingredientes:
2kg de mejillones
1 cebolla picada
1 lechuga o escarola
½ cucharadita de tomillo
1 cucharada de aceite de oliva
Para la salsa:
20 hojas de albahaca
2 dientes de ajo
6 cucharadas de aceite de oliva
1 cucharada de vinagre de jerez
Sal y pimienta negra
Hay que sofreír la cebolla picada y el tomillo en la cazuela en la que
se van a cocer los mejillones. Incorporarlos tan pronto la cebolla empiece a
adquirir color. Tapar y cocer a fuego vivo sacudiendo la cazuela de vez en
cuando para que todos los mejillones se abran por igual. Una vez abiertos
todos, sacarlos de las valvas y dejarlos enfriar.
En el mortero, picar los ajos y la albahaca hasta convertirlos en una
pasta. Ligar esta con un hilo de aceite, hasta agotarlo. Agregar vinagre, sal y
pimienta. Verter la salsa sobre los mejillones y macerar 30 minutos.
Servirlos sobre un lecho de hojas de lechuga o escarola cortada en
trozos pequeños.

BASIL AND ITS PROPERTIES
Each time we use more aromatic herbs to avoid salt or vinegar or to
give us that sensation full when we eat so that anxiety does not take over us.
But we do not know too much about the properties of these herbs.
Today we will talk about a very popular and pleasant to the palate
being, also, easy to get anywhere. It's the basil.
It became popular thanks to the Italians and its mozzarella with tomato
and basil, then it was incorporated to different dishes and sauces to become
something popular, in our country.
This silver grows in a forest with numerous ramifications that can
reach up to 60 cm in height. The perfume of the basil immediately adheres to
our fingers just touching a leaf. Its aroma is so strong that it dominates even
the one of the garlic, but unfortunately it is very fleeting and it disappears
with the heat.
The basil comes from the Mediterranean basin, so Greece, Italy and
France are the countries where it is most frequently used.
There are more than forty different varieties. Depending on the
countries of origin and differentiate each other by the size of the leaves and
the intensity of color and aroma.
The basil not only provides aroma, but also stimulates digestion and
fights flatulence. Contains vitamin A and C in remarkable amounts and also
minerals such as calcium, potassium and magnesium. Of course, when used as a
seasoning, the amount it provides to food is insufficient as a nutritional
contribution.
I attach additional nutritional information per 100gr of this
herb consumed, above.
Basil is a great ally with tomatoes, lamb stews, fresh cheeses, soups
and pastas, but always added in the last moments of the preparation, in order
to take full advantage of its aroma, extremely volatile.
When you buy it you have to do it within its season that is from May
until September, although in a suitable climate it can last until December. As
it is essential to use it fresh, it is best to buy a plant and go picking up
the leaves as we need them. If the superior shoots are cut, we will avoid that
the flowers leave so more leaves will emerge as the lateral stems will develop
more.
For its conservation, the stems can last up to two days in the
refrigerator wrapped in transparent film but the leaves become lace and lose
aroma. One way to make them more durable is to put them in a small jar with
layers of salt between the leaves and fill it with olive oil. Before, it is
necessary to wash it, to let it dry in the air and to remove the leaves of the
stems harder. The tender stems should be preserved as they are the ones that
usually retain the aroma.
The oil must pass the leaves and the jar should be stored in the
refrigerator. If the leaves are always completely covered by the oil, they
remain in good condition for up to six months.
Although collected from our own pot or garden, a golden rule for all
herbs is to wash them and then dry them very well. This removes dust or harmful
substances from the environment they have accumulated. In the case of basil it
is best to let them air dry to maintain their aroma as it is very volatile.
When cooked, the aroma of the basil leaves almost completely. It should
be added to the plates at the last moment and, at the most, slightly warm.
To finish I leave you a recipe for a great salad for the summer. The
mussels salad with basil. This recipe has its origin in France.
Ingredients:
2kg of mussels
1 chopped onion
1 lettuce or endive
½ teaspoon thyme
1 tablespoon olive oil
For the sauce:
20 leaves of basil
2 cloves garlic
6 tablespoons olive oil
1 tablespoon sherry vinegar
Salt and black pepper
You have to stir the chopped onion and the thyme in the casserole in
which the mussels will cook. Incorporate them as soon as the onion begins to
acquire color. Cover and cook over a hot fire by shaking the pan from time to
time so that all the mussels are opened equally. Once all open, remove them
from the valves and let them cool.
In the mortar, chop the garlic and basil into a paste. Connect it with
a thread of oil, until it runs out. Add vinegar, salt and pepper. Pour the
sauce over the mussels and macerate 30 minutes.
Serve them on a bed of lettuce leaves or escarole cut into small
pieces.
