Toda la potencia creativa de la
naturaleza estalla en formas, colores y sabores de las hortalizas de verano.
Nutrientes, fibras y agua en su estado puro. El verano es así, nos ofrece
grandes nutrientes para hacer frente al otoño y los cambios de temperatura por
ello, hablaremos brevemente de algunas productos que podemos encontrar en el
mercado en su máximo esplendor.
Pero no solo encontramos frutas
multicolor, también tenemos variedad de verduras y rica en antioxidantes,
nutritivas y refrescantes con texturas crujientes y frescas, muy aconsejables
en esta época del año.
Berenjena: El color púrpura
anticancerígeno en su punto. Su intenso color que, a veces, la podemos ver en
combinación con blanco o variedad rayada, se debe a la presencia de
antocianinas como la nasunina, un pigmento con propiedades anticancerígenas.
Están buenas de cualquier manera, al horno rellenas, a la plancha con queso de
cabra, a la plancha con aceite de oliva o bien fritas o empanadas. De cualquier
forma están buenísimas pero no las expongáis a altas temperaturas. Si las freís
y queréis evitar el efecto esponja, se pueden cortar en rodajas, las hacemos al
vapor unos minutos, enharinamos y las freímos en poco aceite y muy caliente.
Tomate rosado: o piel de doncella
como los de sierra de Aracena (Huelva) poseen una textura más carnosa y menos
agua que el clónico de invernadero pero con más sabor. Estos tomates están
incluidos por la organización Slow Food en su “Arca del sabor”.
Judía verde: Es la más nutritiva
de todo el verano y además ayuda a bajar el colesterol, a un tránsito
intestinal sin dificultades y muchos nutrientes, con un sabor excepcional.
Consumir 125gr aportan el 10% de las necesidades diarias de ácido fólico, el 8%
de la vitamina B1 y el 5% del hierro, el calcio y la vitamina A. Su composición
de quercitina, catequinas y otras sustancias que desactivan los dañinos
radicales libres, las hacen un producto antioxidante potente. También aportan
luteína y carotenoide que es un escudo frente a las cataratas.
Calabacín: Es una hortaliza de lo
más consumida. Probar la variedad redonda es descubrir, de nuevo, el producto.
Su piel y en crudo aportan las vitaminas y antioxidantes más activos que se
encuentran cerca de la superficie. Si lo elegimos ecológico y le limpiamos la
piel con un cepillo bajo el agua fría,
podremos disfrutar del total de sus aportes. Se pueden consumir a la plancha,
cocido, en crema y crudo cortado en láminas finas o bien fideos. Si se mezclan
con queso y frutas esta riquísimo y sin dañar ninguna propiedad.
Pimiento rojo: Durante el verano,
el pimiento rojo es el rey de la vitamina C. con solo 40gr es suficiente para
obtener toda la que se necesita en un día (60mg). La única condición es tomarlo
crudo pero en ensalada o bien mezclada con bacalao está buenísimo, dando sabor
y una textura crujiente al morder, muy agradable al paladar.
Lechuga: la variedad “maravilla”
es un cogollo denso de hojas rizadas, gruesas, dulces y tiernas que se
oscurecen y enrojecen en los extremos, lo que nos indica una alta concentración
des sustancias beneficiosas.
