productos que nos aportan los minerales, vitaminas y las propiedades necesarias
para combatir las inclemencias del tiempo, que se supone, aparecerán. Dejaremos
atrás la playa, el sol y las temperaturas veraniegas o agradables, en Septiembre
pero hay que estar preparados y aquí os dejo algunos productos que nos pueden
ayudar.
Cherry Amarillo: existen más de
20000 variedades de tomate de todas las formas y colores. Si los rojos son ricos en licopenos, el cherry amarillo
abunda en luteína y zeaxantina. Estos carotenoides protegen los ojos frente a
las cataratas y la degeneración macular, trastornos que amenazan la visión de
las personas mayores. Tiene una textura
crujiente y un sabor dulce equilibrado.
Patata morada: Es tan
antioxidante como una baya. Contiene antocianinas, que se encuentran en la cima
de las sustancias antioxidantes. Es una variedad especialmente recomendable
para prevenir infecciones y problemas cardiovasculares, pues las antocianinas
benefician a los vasos sanguíneos. Si no se pela, se pueden aprovechar más
propiedades del producto y cocidas no es tiene una textura esponjosa y un
ligero aroma a nuez.
El color proviene de las
antocianinas, un flavonoide que se asocia a los pigmentos rojo, azul o púrpura
de alimentos como las granadas o los arándanos. Las antocianinas son

Rábano negro: La raíz del rábano negro es la más
medicinal. Su pulpa es blanca y es bueno para el hígado por el efecto de los
glucosinolatos, unos compuestos azufrados que favorecen la producción de bilis
y son desintoxicantes. Se recomiendan cuando se siente hinchazón o se sufre de
estreñimiento o gases. Las propiedades tanto colagogas (que facilitan la
eliminación de la bilis) y coleréticas (que estimulan la secreción biliar)
pueden utilizarse para aliviar problemas biliares y hepáticos, siendo muy
interesante para casos de cólicos hepáticos, insuficiencia hepática, alergias
digestivas, o migrañas de origen hepático. También previene las infecciones. Se
pude tomar en láminas crudas en las ensaladas, en zumo fresco diluido en agua o
en capsulas de extracto seco.
Contiene compuestos orgánicos azufrados que, en sí,
favorecen el drenaje tanto del hígado como de la vesícula biliar, por lo que
ayuda a la eliminación de toxinas y residuos.
Zanahoria purpura: las zanahorias
naranjas empezaron a imponerse en el siglo XVII; antes las había rojas,
amarillas, blancas y también purpuras, más cercanas a las originarias de Afganistán,
de donde proceden. Estas zanahorias moradas, ricas en antocianinas
antioxidantes, se cultivan casi siempre de manera tradicional. En España se
están recuperando variedades moradas como la de cuevas bajas (Málaga) o la
safarnaria, dulce y algo picante de Mallorca.
Calabacín amarillo: es un
calabacín redondo y amarillo parece haberse recogido la luz del sol. Muy
delicado, se presta para rellenarlo y comerlo con la piel, rico en vitamina C,
y del grupo B, además de en luteína y zeaxantina. Es una planta muy productiva.
Acelga roja: contiene hasta 13
polifenoles antioxidantes y prácticamente todas las vitaminas en cantidades
significativas. No es posible enumerar aquí todos los beneficios de la acelga
roja, pero destaca la capacidad del ácido siringico para reducir los picos de
azúcar en sangre.
Entre las funciones más
importantes de la vitamina A se encuentran, como decíamos los antioxidantes,
ideales para eliminar los radicales libres cuya presencia elevada en el
organismo puede ser responsable de la aparición de numerosas enfermedades degenerativas.
También contienen una buena cantidad de vitamina C, y cifras más modestas de
vitamina E, otros dos antioxidantes que nos ayudan a mantenernos más jóvenes y
fuertes durante más tiempo. La vitamina K, también tiene una presencia
importante, necesaria para la coagulación de la sangre y para el mantenimiento
de los huesos.
