Cuando vemos alguna película
antigua americana siempre
hablamos de “un clásico” pues bien, la cebolla es
otro clásico que nos acompaña en todos o casi todos los guisos. Da sabor, es
fácil de encontrar, sus variedades son muy amplias y además tiene propiedades
que favorecen a nuestra salud.
Es muy versátil debido a las
diferentes formas de prepararla y cocinarla pero para aprovechar todos sus
beneficios es mejor comerla cruda. A groso modo podemos decir que nos aporta
fibra, potasio y folatos. Su contenido calórico es muy bajo ya que su principal
componente es el agua (90%).
Tipos de cebolla
Cebolla grano: Es la más
cultivada en nuestro país. Se puede encontrar desde julio hasta mayo. Su sabor
es medio fuerte por lo que se puede tomar cruda. Ideal para hacer
caramelizados.
Cebolla spring: Recolección
temprana entre abril y junio, redonda y blanca por fuera, dulce y jugosa y se
utiliza para todo tipo de platos. Hay que consumirla rápido pues su
conservación es corta. Esta se puede usar tanto en crudo como cocinada.
Cebolla dulce: es una cebolla
blanco-amarillenta y achatada. Su bajo contenido en ácido pirúvico le
proporciona un sabor mucho más suave, menos picante que el resto de cebollas.
Es una buena opción para usarlas en ensaladas.
Cebolla roja: su carne es de
color blanco-violáceo aunque puede ser un poco áspera y picante pero al
cocinarse, su sabor se suaviza. Se puede encontrar todo el año en los mercados
pero en verano y principios de otoño tienen un sabor más suave. Es un buen
adorno para los platos y para que la ensalada tome un sabor agradable.
Cebolla blanca: Su sabor es
fuerte y la podemos encontrar todo el año en el mercado. Es muy crujiente, está
indicada para recetas con ingredientes potentes, como la carne de caza.
Cebolletas: se recolecta cuando
esta tierna y aún no ha madurado del todo. Se encuentran todo el año en el
mercado. Estas son más alargadas y delgadas y poseen un sabor dulce y suave por
lo que suelen comerse crudas aunque a mi me encanta usarlas para todo. Su
textura es crujiente y jugosa.
Chalota: es una cebolla pequeña y
algo alargada, con el exterior dorado y la carne blanca. Es muy aromática, con
un sabor suave y dulce entre la cebolla y el ajo. Es habitual cocinarlas
enteras como guarnición, aunque también es ideal para guisos y salsas.
Francesa: es esférica y tamaño
pequeño, por lo que suele usarse entera como guarnición. Su color es marrón-
cobrizo y cocinada tiene un aspecto muy agradable a la vista. Idónea para el
horno.
Como véis, hay cebollas para
todos los gustos y momentos pero no solo sirven para el sofrito, ensaladas,
etc… también tienen propiedades curativas, las cuales, enumero ahora.
* Alivian
el dolo de garganta y para ello hay que hervir una taza de agua con algunos
gajos, dejarlos reposar y beber después la infusión calmando el dolor.
* Atenúa
la tos nocturna y hay que cortar la cebolla en varios trozos y disponerla en un
recipiente al lado de la cama, ayuda a paliar la tos.
* Calman
las picaduras de insectos y quemaduras frotando la cebolla cruda sobre la zona
afectada durante un minuto para aliviar las molestias.
* Repelen
los insectos y basta con frotar un trozo de cebolla recién cortada sobre la
piel para mantener alejado a los insectos de una forma natural y efectiva.
* También
es diurético debido a la cantidad de potasio, ácido cafeico, glicólico, aceites
esenciales y flavonoides. Favorece la eliminación de líquidos corporales y
sustancias residuales del metabolismo.
Como veis, las
propiedades son múltiples y adecuadas para nuestro organismo con lo que os
recomiendo una vez por semana cocer cebollas y beber el agua colado como
depurativo.

White onion: Its flavor is strong
and we can find it all year round in the market. It is very crispy, suitable
for recipes with potent ingredients, such as game meat.
Chives: it is harvested when it
is tender and has not fully matured. They are all year round in the market.
These are longer and thin and have a sweet and soft taste so they are usually
eaten raw although I love to use them for everything. Its texture is crisp and
juicy.
Shallot: is a small and somewhat
elongated onion, with the golden exterior and white meat. It is very aromatic,
with a sweet and sweet taste between the onion and the garlic. It is common to
cook them whole as a garnish, although it is also ideal for stews and sauces.
French: it is spherical and
small, so it is often used as a garnish. Its color is brown-copper and cooked
has a very pleasing to the eye. Ideal for the oven.
