El Otoño ya está aquí y es
momento de pasear y visitar los bosques pero eso sí, con respeto y con cuidado.
El motivo, para estar en contacto con la naturaleza y sobre todo para ver todo
aquello que nos puede proporcionar el bosque y no solo a belleza me refiero,
también a sus frutos y productos llenos de propiedades nutricionales que nos
favorece nuestro organismo.
Pero empecemos a enumerar algunos
de los más conocidos y más fáciles de encontrar:
Las endrinas
Estos frutos, sirven para mucho
más que para elaborar el licor de pacharán. Son bayas ricas en pectinas y
antocianinas antioxidantes con efectos protectores y antiinflamatorios sobre el
tubo digestivo. Con ellas se pueden hacer compotas y jaleas. También se toman
en decocción (una cucharada de endrinas en una taza de agua).
Con las hojas de las endrinas son
preparadas en infusión están indicadas para tratar la diarrea o los síntomas de
la menopausia.
Los escaramujos
Son los frutos del rosal
silvestre (Rosa canina), que crece en los márgenes de bosques ysotos ribereños.
Se pueden tomar crudos o en decocción, jarabe o tintura. Gracias a los
falvonoides y ácidos orgánicos evitan la inflamación de las paredes de los
vasos sanguíneos y previenen enfermedades vasculares.
Son muy ricos en vitamina C; 10gr
batan para satisfacer la necesidad diaria.
Rebozulos
Las setas son un manjar y para mi
lo mejor que puede ofrecer el bosque en otoño. Son mis favoritos y los
rebozuelos son uno de ellos. Además de la alegría que supone encontrárselos
junto a una conífera, un alcornoque o un roble al llevarlos a la mesa,
salteados con ajo y cebolla, por ejemplo, se convierten en una dulce y afrutada
fuente de polisacáridos inmunoestimulantes.
Pero hay que distinguir bien las
variedades pues podría ser peligroso. El más apreciado es el Cantharellus
cibarius, de color casi anaranjado, pero se venden como rebozuelos las
variedades pallens (blanquecina) y alborufescens ( aún más blanca).
Las castañas
Estos maravillosos frutos son
deliciosos, tanto crudos, como horneados, como en puré… las castañas son
deliciosas siempre y si se saben trabajar es una bomba de energía para los días
fríos de otoño.
Para los gallegos y otros pueblos
la castaña fue una de sus principales fuentes de energía hasta que los cereales
y la carne fueron más accesibles. Hoy
las comemos ocasionalmente y asadas, pero hay otras formas muy ricas de
consumirlas.
Cuando están frescas (se escaldan
unos minutos para que el almidón resulte más digestivo); confitadas en almíbar
(marrón glacé); pilongas (peladas y sacadas con humo), en guisos, en forma de
harina.
Los madroños
Son tan delicados que no se han
prestado para su cultivo y comercialización masivos, por eso los disfrutamos
sobre todo en las salidas al campo. No
solo son dulces y jugosos, sino que contienen sustancias isoquercitina,
taninos… muy beneficiosas para el corazón (reducen el riesgo de infartos, según
la Universidad de Pisa, en Italia). También reducen el riesgo de infarto.
Son dulces y de color rojo ,
cuando están maduros. Hay que recolectarlos pronto, en cuanto enrojecen pues se
pasan enseguida y se secan.
Son buenos para hacer mermeladas
que acompañan a quesos y tostadas.
Los piñones
Los piñones son de los mejores
frutos que he probado. Su sabor peculiar, fresco y que llena los sentidos.
Encerrados en la apretada coraza de las piñas, cuando estas se sean o se queman
y se extraen se convierten en un alimento apreciado pero también muy caro.
Destaca por su contenido en hierro y en vitaminas del grupo B, lo que los hace
adecuado para prevenir la anemia. Son muy proteínicos, contienen un 24% de
proteína, una cantidad superior a otros frutos secos (15% en las nueces) útil
en las etapas de crecimiento.
Yo los utilizo para hacer un
postre especial típico de Cataluña llamados panellets. Son bolas que están
hechas de patata, harina de almendras y rebozado de piñones, se ponen al horno
y listo. Salen deliciosos y acompañados con un vino dulce están deliciosos.

FRUITS OF THE
FOREST
Autumn is already here and it is time to walk
and visit the woods but yes, with respect and with care. The reason, to be in
contact with nature and above all to see everything that can provide us the
forest and not only to beauty I mean, also its fruits and products full of
nutritional properties that favors our body.
But let's start to list some of the best known
and easiest to find:
The sloes
These fruits, they serve for much more than to
elaborate the liquor of pacharán. They are berries rich in pectins and
antioxidant anthocyanins with protective and anti-inflammatory effects on the
digestive tract. With them you can make jams and jellies. They are also taken
in decoction (one tablespoon of endrinas in a cup of water).
With the leaves of the endrinas are prepared
infused are indicated to treat diarrhea or symptoms of menopause.
The rose hips
They are the fruits of the wild rose (Rosa
canina), which grows in the margins of forests and rivers. They can be taken
raw or in decoction, syrup or tincture. Thanks to the falvonoides and organic
acids they avoid the inflammation of the walls of the blood vessels and they
prevent vascular diseases.
They are very rich in vitamin C; 10gr batter to
meet daily need.
Rebozulos
Mushrooms are a delicacy and for me the best
that the forest can offer in autumn. They are my favorites and the chanterelles
are one of them. In addition to the joy of finding them next to a conifer, a
cork oak or an oak when brought to the table, sautéed with garlic and onion,
for example, become a sweet and fruity source of immunostimulating
polysaccharides.
But you have to distinguish the varieties well
because it could be dangerous. The most appreciated is Cantharellus cibarius,
almost orange in color, but the varieties pallens (whitish) and alborufescens
(even whiter) are sold as chanterelles.
Chestnuts
These wonderful fruits are delicious, both raw
and baked, as in puree ... chestnuts are always delicious and if you know how
to work is an energy pump for the cold days of autumn.
For the Galicians and other peoples the
chestnut was one of its main sources of energy until the cereals and the meat
were more accessible. Today we eat them occasionally and roast, but there are
other very rich ways to consume them.
When they are fresh (scald a few minutes for
the starch to be more digestive); candied in syrup (brown glacé); pilongas
(peeled and smoked), in stews, in the form of flour.
The madroños
They are so delicate that they have not been
lent for its massive cultivation and commercialization, for that reason we
enjoy them especially in the exits to the field. Not only are they sweet and
juicy, they contain isoquercitina substances, tannins ... very beneficial to
the heart (reduce the risk of heart attacks, according to the University of
Pisa in Italy). They also reduce the risk of heart attack.
They are sweet and red when they are ripe. We
must collect them soon, as soon as they redden because they pass quickly and
dry.
They are good for making jams that accompany
cheeses and toast.
The sprockets
The pine nuts are among the best fruits I have
ever tasted. Its peculiar taste, fresh and that fills the senses. Encased in
the tight shell of the pineapples, when they are or are burned and extracted
they become an appreciated but also very expensive food. It stands out for its
content in iron and in vitamins of group B, which makes them suitable to
prevent anemia. They are very protein, contain 24% of protein, a quantity
superior to other nuts (15% in the nuts) useful in the stages of growth.
I use them to make a special dessert typical of
Catalonia called panellets. They are balls that are made of potato, almond
flour and batter of pine nuts, are put to the oven and ready. They come out
delicious and accompanied with a sweet wine are delicious.
