América. Es un producto nutritivo y energético pero hablemos poco a poco de él
pues merece una atención especial y es un pequeño olvidado en nuestra cultura.
Este tubérculo que , normalmente, se cocina al horno. Su sabor es dulce y
suave. Si la cocción es larga ese sabor dulce se intensificará. Hay diferentes
maneras de prepararlo cocido, horno, frito pero nunca crudo por su difícil
digestión. En estos momentos está muy de moda hacer chips de boniato pero si se
hacen al horno, se utiliza menos aceite y están realmente ricos.
Como propiedades importantes:

energía, fibra, potasio y mucho ácido fólico así como antioxidantes.

deportistas, en el embarazo, lactancia…

Es bueno para
la hipertensión y alteraciones del aparato digestivo.
El boniato es rico en
carbohidratos, es fuente de almidones naturales muy fáciles de digerir y sin
los alérgenos de los cereales ni los antinutrientes de las legumbres. El
boniato equilibra el aporte de azúcares con alto contenido en fibra. La fibra
del boniato es del tipo pectina y enlentece la digestión de los carbohidratos,
reduciendo su índice glucémico y evitando las hiperglucemias. Importante para
evitar ataques de ansiedad.
Pero también aporta
vitaminas y minerales. Destaca en betacarotenos y tocoferol proporcionando
resistencia a nuestras arterias y cuidado a nuestra piel.

Debemos adquirirlos con

Os dejo un par de ideas
para preparar el boniato y disfrutar de su sabor y sus aportes nutricionales y
energéticos.
Crema de boniato
Saltear el boniato crudo con puerro y después
cuécelo en agua o caldo vegetal. Tritúralo y decóralo con chips de boniato y
zanahoria.
Lávalos bien y mételos en el horno hasta que estén
tiernos, los dejas enfriar un poco y se comen tibios. De este modo, puedes
disfrutar de su dulzor sirviendo de tranquilizante y saciador de dulce pero con
muchos beneficios para la salud.
También se pude hacer un milhojas de boniato con
bacalao. Os explico y os doy la receta:
Ingredientes:
1 o 2 boniatos
600gr de bacalao
desalado
4 ajos tiernos
400gr de acelgas
30gr piñones
Una pizca de canela
en polvo
Aceite de oliva,
pimienta y sal
Preparación:
Rehoga por tandas
los ajos, los piñones y las acelgas en aceite.
Mezcla y sazonar
con sal, pimienta y canela.
Confita en
diferentes cazos el bacalao y los boniatos en láminas, cubiertos de aceite a
80ª.
Alterna los
ingredientes en capas. Puedes servir con chutney de tomate.
