uno por un motivo diferente aunque el denominador común sea siempre el talento
, esfuerzo y amor al trabajo.
Hoy hablamos Eneko Atxa
un cocinero vasco que viaja, aprende y disfruta de cada instante que le brinda
su profesión. Es un hombre con energía, tiene creatividad y cuenta con capital
humano para afrontar el reto. En su hogar, es donde desarrolla su compromiso
con la sostenibilidad. En sus menús o mejor dicho, en su casa el placer en el
comensal a través de la comida y una experiencia única, es lo que ofrece.El construyó la
casa-restaurante pensando más en convivir que en invadir. Si, el entorno
era importante en su filosofía y en su
manera de contar las cosas, había que respetarlo. Salvaguardar la materia
prima, el producto y los productores, pero también el continente.
Para el sostenible tiene
un significado más amplio. Su curiosidad por la agricultura local le hizo
descubrir la cantidad de especies que habían desaparecido o estaban a punto de
hacerlo. Decidió ponerse en contacto con el Instituto Vasco de Investigación y
Desarrollo agrario para construir un banco de más de 400 semillas autóctonas.
No solo pretenden recuperar semillas, sino también guardar y mostrar que en una
zona geográfica tan pequeña como ésta tenemos cerca de 70 variedades de maíz,
90 tomates diferentes y un centenar de alubias.
Su vinculación con el
territorio tiene que ver, y mucho, con el respeto y la admiración que siente
hacia quienes le tren los productos de la tierra, con los productos. A nivel
mundial, hay muchos chef y restaurantes que tiene sus propios jardines
vegetales para autoabastecerse pero él prefiere comprar al productor cercano,
hacer relación, compartir las experiencias y trabajar la identidad del
producto.
No le interesan las
tendencias y si los valores de cada lugar y de cada persona que está en un
proyecto. Las conexiones con el territorio, con la historia personal. Le gusta
que le cuenten cosas interesantes a través de los platos.
Persigue la excelencia y
confiesa ser feliz cada mañana al dirigirse al trabajo. Transmite a su equipo
la importancia de cambiar una pequeña cosa cada día. Que los helados sean más
cremosos; que una determinada salsa quede más ligera; que el pan resulte más
crujiente o variar el tipo de cocción de
un producto. Junto a él trabajan cerca de 60 personas. Se siente orgulloso de
contar con capital humano altamente competente.
Es un hombre que viaja
continuamente, que no olvida sus raíces ni a su familia, que hace frente a sus
proyectos y sus nuevos proyectos en el extranjero… hombre incombustible que
lucha por el producto y la
sostenibilidad de productos y lugares.
