Muchos vegetales que comemos a diario tienen variedades con
tonos diferentes y sorprendentes, aportándonos vitaminas adicionales. No tema
cambiar el color de sus ensaladas o verduras.
Las frutas y verduras entran por
los ojos antes que por la boca, por lo que su apariencia es clave a la hora de
decidir su compra o no.
Las grandes superficies cuidan
mucho la presentación de los vegetales que ponen a la venta, algo que
desgraciadamente no garantiza que el sabor sea el que promete su aspecto
externo. El color es, junto a la textura o la dureza, lo que determina el grado
de maduración de la pieza, y también algo con lo que relacionamos de manera
automática a cada producto de la tierra. Para los niños las zanahorias son naranjas, los tomates
rojos y las berenjenas moradas desde que aprenden a colorear, pero más allá de
las variedades más comunes hay otras, cada vez menos desconocidas, que
sorprenden por su tonalidad y que, quién sabe, hasta puedan ayudar a que los
más pequeños de lacas dejen de rechazarlas.
No es sencillo encontrarlas en
supermercados, pero cada vez hay más fruterías que se atreven a incluir en sus
estantes género con un color distinto al habitual. Ya no son sólo las cebollas
blanca, amarilla, roja o las manzanas y los pimientos verdes, rojos o amarillos
en ambos casos, los vegetales que no llaman la atención por su variada
tonalidad. En temporada no suponen una novedad las sandías amarilla, cultivadas
sobre todo en la zona de Salamanca, y de un sabor algo más dulce que las rojas
de toda la vida. Tampoco las judías verdes rojas Buenos Aires, que pierden el
rojizo cuando son cocidas, o los calabacines amarillos o blancos, competencia
cada vez más fuerte para el verde.
Aunque la aceptación de las
variedades es generalmente aceptada , todavía hay un tipo de público más reacio
y que prefiere las del color de siempre. Brócoli morado, que al igual que las
judías destiñe al ser hervido, o berenjenas blancas también están entre la oferta
actual.
Jesús Pérez, un experimentado
agricultor que lleva varios años plantando en su huerto de Ávila frutas y
hortalizas de colores: “lo primero que planté fueron calabacines blancos.
Compré la planta por curiosidad y la verdad es que su sabor es similar al verde
aunque no me convenció la dureza de su piel. Algo parecido me ocurrió con los
amarillos “. En su pequeña explotación también ha cultivado tomates negros,
realmente son verdes muy oscuros y cherry amarillos con resultados muy
satisfactorios: “No salen dos iguales pero su sabor no tienen nada que ver con
los rojos que se compran en el mercado”.
Disponer de un espacio en el que
poder cultivar vegetales no está al alcance de todo el mundo, pero para los que
tienen esa suerte las opciones de cambiar el color a sus comidas se
multiplican. Con una simple búsqueda por internet o acudiendo a tiendas
especializadas se pueden adquirir semillas o plantas de las especies
mencionadas y de muchas más.
En los últimos años, con el
desarrollo de las técnicas de manipulación alimenticia, los productos
transgénicos han pasado a formar parte de nuestra dieta aunque sin eliminar la
sombra de duda que pesa sobre ellos. El miedo a comer algo con un color
distinto al que se conoce hace que a una parte de los consumidores les cueste
aceptar las verduras y frutas en colores diferentes a los habituales cuando, en
algunos casos, es la mano del ser humano la que ha determinado la tonalidad que
hoy no se parece natural. La zanahoria sirve de perfecto ejemplo, pues hasta el
siglo XVII su color más común era el morado aunque ahora sean de color naranja.
Esto ocurrió cuando se cruzaron las semillas que se realizó en Holanda buscando
que su hortaliza más preciada fuera naranja, el color de la casa Orange, la
familia real que hoy día sigue en el trono , en la persona de Guillermo
Alejandro.
La nueva zanahoria gusto a los
holandeses, que no tardaron en exportarla. El naranja real fue ganando terreno
a la especie original hasta convertirla en minoritaria. Sin embargo, hubo
lugares en los que se continuó la plantación de la variedad morada.
Uno de ellos es Cuevas Bajas, en
la provincia de Málaga, donde la zanahoria morá es el motor económico de la
localidad y un orgullo para sus agricultores, que la han recolectado de manera
ininterrumpida desde hace más de 13 siglos, cuando la introdujeron los árabes
asentados en la zona. A partir de este exótico alimento que no debería serlo
pues es mucho más nuestro que la variedad holandesa se produce además vinagre
balsámico, mermelada y hasta caviar.
Como ven los cultivos que se
extinguieron y han sido recuperados, llegan a alcanzar las tiendas más
exclusivas de las ciudades como productos especiales lejos de pensar que son
