Optar por un
régimen alimenticio vegetariano basado en alimentos energéticos es una decisión

para aprender a combinarlos y prepararlos de manera saludable para toda la
familia.
A tener en cuenta:
Tenemos que tener
en cuenta que los vegetales seleccionados deben ser biológicos para poder
asegurarnos de todos sus aportes vitamínicos y que no han sido tratados con productos
químicos.
Por otro lado,
también es importante tener en cuenta esas frutas, verduras… que sean de
temporada y de huertos cercanos a nosotros para aprovechar los nutrientes y
evitar las neveras y refrigeraciones largas debido a transportes.
Las dietas
vegetarianas basadas en alimentos energizantes tienden a tener bajas ingestas
calóricas debido a sus bajos contenidos en grasas y altos en fibra.
La cantidad de
grasas y de hidratos de carbono de la dieta vegetariana va a determinar su
valor energético total, y esta cantidad deberá estar ajustada a las necesidades
individuales de quien sigue la dieta.
Los alimentos
energéticos son los que dan fuerza y calor al organismo, y los que revisten los
músculos de grasa normal; son estos alimentos los que podríamos llamar el

energético es indispensable para el organismo en todas las edades.
Existe una variedad
de alimentos energéticos. Algunos dulces que provienen de la caña de azúcar, o
de la remolacha, o de los dátiles, higos secos, miel, ciruelas secas, uvas
pasas, frutas dulces secas o frescas en general; también algunos cereales como:
arroz, centeno, avena, trigo, cebada, maíz y sus derivados pan, sémola, pastas,
etc…
La cantidad de
calorías que consumimos tiene una alta relación con las que gastamos. Hay
muchos casos donde se requieren comidas de un alto índice energético para
acomodarse a la demanda del cuerpo. Los deportistas tienen mayores necesidades
de energía que oscilan entre las 2000 y las 6000 calorías diarias.
También habría que
decir que algunas personas asocian la dieta vegetariana con una dieta baja en
calorías porque incluye una amplia gama de vegetales, donde abundan las frutas
y las verduras, y estas se combinan con cereales integrales y legumbres, entre otros alimentos.
No obstante, las calorías de la dieta van a depender, en parte importante, de
la cantidad de alimentos ricos en hidratos de carbono y en grasas.
¿Qué recomendaciones se deben seguir para un régimen
alimentario vegetariano?
Lo importante en la
dieta vegetariana es consumir cada uno de los nutrientes que necesita el
organismo en las cantidades necesarias.
Una dieta
vegetariana es equilibrada si se ajusta a la siguiente proporción en cuanto al
aporte de macronutrientes: 30-35% de grasas, un 50-55% de hidratos de carbono y
un 10-15% de proteínas.
Los gramos de
grasas, provengan de uno y otro alimento, van a aportar las mismas calorías, al
igual que ocurre con las proteínas y los hidratos de carbono.
Una alimentación
equilibrada y saludable requiere de una educación alimentaria que permita seleccionar las mejores opciones para cada
momento y evite, a la vez, sentirse continuamente “a dieta”. Por esa razón, si su
objetivo es recuperar fuerzas, aumentar su vitalidad y protegerse de las
múltiples presiones que provocan
trastornos y pérdida de bienestar , la consigna es transformar su modo de
