productos que son como “el fondo de armario” pero hay uno que es el top, hablamos de la alcachofa. Su composición nutricional nos beneficia en la digestión, en el buen funcionamiento del hígado, nos ayuda a regular el colesterol malo y controla el nivel de azúcar en sangre. No le podemos pedir más.
Entre sus
bondades encontramos triptófano, fibra que favorece a la digestión, el
estreñimiento y la retención de líquidos, aporta vitamina A, B y C, contiene
inulina, potasio que ayuda al funcionamiento neuromuscular, magnesio, calcio y
fosforo entre otros.
Para las
personas que sufren de hígado, se recomienda su utilización ya que contribuirá
a la depuración del mismo y ayudando a metabolizar las ingestas con normalidad.
Estimula menos producción de insulina en el páncreas y favorece el buen control
de azúcar en la sangre y beneficia la digestión de grasas por su contenido de
inulina. También es un producto que al llegar al intestino potencia el
desarrollo de bacterias intestinales beneficiosas, evita la proliferación de

El extracto de
alcachofa se puede encontrar en capsulas como complemento alimenticio para un
efecto diurético o adelgazante, al igual que el diente de león, el boldo y el
cardo mariano, que purifican el hígado pero cuidado con las cantidades ya que
el cardo mariano puede hacer subir la tensión. En cualquier caso antes de tomar
nada hay que consultar con un especialista para asegurarnos que las cantidades
y el producto es apto para nuestro organismo.
La preparación
de la alcachofa tiene muchas opciones, siendo así, variada y por tanto, difícil
que nos cansemos de ella si nos gusta.
Al vapor, cocidas
y aprovechando el agua que hemos utilizado para cocerlas, nos favorece el
organismo pero no olvidemos quitar las primeras hojas más duras. Al horno con
aceite , sal y pimienta, a la plancha o fritas son siempre un suculento plato
ya que se pueden combinar con huevo haciendo un revuelto o una tortilla,
acompañando un filete de pavo o unas albóndigas… es muy versátil. Lo ideal es
evitar los fritos y acompañarlas de amaranto, quinoa o arroz integral. Pero hay
otra forma de comerla, deliciosa que va muy bien para el verano y es marinada
con limón y lima, luego la podemos incorporar a una ensalada o bien acompañarla
con un poco de jamón ibérico o salmón ahumado, como ejemplos.
Pero cuales
comprar? Pues bien hay algo en que todos estamos de acuerdo a la hora de
comprar y son aquellas alcachofas prietas con un agujero en el centro y con el
acabado en punta redonda. La mejora época para recolectarla es entre octubre y
abril, así que su temporada es corta y se debe aprovechar. Yo prefiero las alcachofas
del Prat, las de mi pueblo, donde su sabor es exquisito y su tersura es única
pero es cierto que hay otras denominaciones a nivel nacional como las de
Benicarló o las de Tudela.
Se pueden
decir muchas cosas de ellas yo solo os sugiero que las probéis y disfrutéis de
ellas porque este mes de abril se acaban

The artichoke: the queen of health
When we start
talking about diet there are a series of products that are like "the
bottom of the closet" but there is one that is the top, we talk about the
artichoke. Its nutritional composition benefits us in digestion, in the proper
functioning of the liver, helps us regulate bad cholesterol and controls the
level of blood sugar. We can not ask for more.
Among its
benefits we find tryptophan, fiber that
favors digestion, constipation and
fluid retention, provides vitamin A, B and C, contains inulin, potassium that

For people

preparation of the artichoke has many options, being that way, varied and
therefore, difficult to get tired of it if we like it.
Steamed,
cooked and taking advantage of the water we have used to cook them, the
organism favors us but we do not forget to remove the first harder leaves.
Baked with oil, salt and pepper, grilled or fried are always a succulent dish
as they can be combined with egg making a scrambled or an omelette, accompanying
a turkey fillet or meatballs ... it is very versatile. Ideally, avoid fried
foods and accompany them with amaranth, quinoa or brown rice. But there is
another way to eat it, delicious that goes very well for summer and is
marinated with lemon and lime, then we can incorporate it into a salad or
accompany it with a bit of Iberian ham or smoked salmon, as examples.
But which ones
to buy? Well there is something that we all agree when buying and are those
artichokes prietas with a hole in the center and with the round tip finish. The
best time to harvest it is between October and April, so its season is short
and should be exploited. I prefer the Prat artichokes, those of my town, where
its flavor is exquisite and its smoothness is unique but it is true that there
are other national denominations like those of Benicarló or those of Tudela.

many things about them I just suggest you try them and enjoy them because this
April they are over
