BIMI: VERSIÓN MODERNA DEL BRÓCOLI

Esta verdura la descubrí en Murcia, durante mi estancia
laboral en el 2016-2017. Cuando la vi me sorprendió y me pareció agradable de aspecto pero todavía no sabía qué me iba a deparar su sabor.
Sus orígenes están en Japón, donde fue desarrollada por la empresa Sakata Seed como una especie de cruce entre el brócoli y la col china. Es un superalimento lleno de vitaminas, muy nutritivo, que le ha valido el apodo de verdura “súper poderosa”.

El nombre “Bimi” es su identificativo comercial, por lo que puede ser encontrada con otros nombres en diferentes lugares, como “broccolini” en Europa.
Sus tallos y sus floretes han conquistado a muchos chefs importantes de nuestro país y no me extraña ya que su sabor, y sus propiedades hacen del producto una maravilla.

Lo describiría como un brócoli de tallo largo y elegante. Puede prepararse cocido, a la plancha escaldado, etc… de cualquier manera esta rico pero lo mejor es cuando lo muerdes; es crujiente y de sabor suave, sabor entre esparrago triguero y brócoli. Es muy digestivo con pocas calorías y lleno de propiedades.  Es algo increíble que merece la pena probar y utilizar a diario.
El sistema de cultivo tecnificado permite separar esta novedosa verdura en pequeños ramilletes caracterizados  por un tallo más largo (12-15 cm) y delgado que el del brócoli y de aspecto similar al de los espárragos trigueros.

En España comenzó cultivándose en Murcia y a día de hoy se cosecha especialmente en el norte del país y en otros países de la UE como Reino Unido. El proceso de recolección es artesanal, tomando cada dos o tres días algunos floretes de cada planta. Los brotes se enfrían poco después de cortarlos y se conservan en torno a 0-5 grados centígrados hasta que llegan al lineal del mercado. De este modo se busca conservar al máximo sus propiedades nutritivas, sus beneficios y su sabor.
El bimi tiene un punto de verdura convencional que está ganando terreno como producto sano e idóneo para poder perder peso por sus fibras y por contener ácido linoleico. Es muy rico en glucosinolatos.

Los brotes verdes comparten otras características con el brócoli como su acción anticelulítica, alcalinidad y capacidad reguladora del PH de la sangre. Ambos contribuyen a proteger la vista, son un antiinflamatorio natural y benefician el sistema digestivo. El bimi, por su lado, posee mucho calcio y sirve para cuidar el sistema cardiovascular. Tiene diez nutrientes esenciales y contiene más ácido fólico, antioxidantes, zinc y vitamina C que los espárragos verdes, la col rizada, las espinacas o el brócoli.

Los tallos y sus flores ofrecen un amplio abanico de posibilidades a la hora de su preparación; Desde ingerirlo crudo, hasta saltearlo (4min),al vapor o hervido (4min), micro (1-2min), en tempura o como se le ocurra. La empresa que lo impulsa en España, recomienda: “cortar aproximadamente un centímetro de su tallo y después cocinarlo”. El secreto de su cocción está en no exceder los cuatro minutos y una vez retirado del fuego enfriarlo en un bol lleno de hielo para detener el calor y lograr una fijación de la clorofila.

Propiedades del Bimi
Varios estudios científicos han descubierto que el bimi ayuda a prevenir enfermedades cardiovasculares y neurodegenerativas, así como la formación de cataratas. El Bimi ayuda a mantener la salud general por sus cualidadaes antioxidantes, esto quiere decir que neutraliza los efectos de los radicales libres, agentes causanes de muchas enfermedades.

Además, tiene propiedades antioxidantes, antiinflamatorias y anticancerígenas, más incluso que el brócoli. En concreto, está comprobado que el bimi es bueno para prevenir los cánceres de colon, pulmón y estómago.
Pero hay todavía más: los compuestos nutricionales del bimi son más fáciles de absorber por nuestro organismo que los del brócoli, la coliflor o la col.

Vitaminas y nutrientes del bimi
Ninguna de las verduras es capaz de superar al bimi en cuanto a nutrientes. Por eso, el bimi es uno de los superalimentos más beneficiosos para el organismo.
Es el superbrócoli y es que las flores de la parte superior continen más fibra, proteínas y minerales que el brócoli.

El Bimi surgió del cruce natural de dos especies de plantas crucíferas del grupo de Brassica oleracea el brócoli y la col china. Su origen es japonés y aunque se creó a mediados de los 90 hasta hace pocos años no se había comercializado en Europa.
Basados en estudios científicos las propiedades de este producto superan a las del propio brócoli, con índices más altos de vitaminas y nutrientes. Pueden prevenir enfermedades cardiovasculares y la formación de cataratas. Tiene compuestos antiinflamatorios y antioxidantes. Otra propiedad es que su composición es más fácil de absorber por el cuerpo humano que el brócoli o la coliflor.
Las flores de la parte superior de este nuevo híbrido poseen un mayor contenido de fibra dietética, proteína total y minerales lo que hace que el Bimi sea más saciante.

BIMI: MODERN BROCCOLI VERSION
