En el mes de Abril empieza la
temporada de la Lamprea manjar para algunos y no tan buena para otros. Este es
uno de los platos que te apasiona o lo odias, quizás por el su apariencia “no
es muy guapiña” por su aspecto y su fuerte sabor es solo para algunos paladares
pero también dependen
de cómo se
prepare …. Para gustos colores..
El caso es que en Galicia y su
cultura culinaria se expone a la máxima potencia donde sus maravillosos
productos, sus formas de cocinar y su rica variedad hace un todo.
En Arbo, a la misma distancia de
Vigo que de Ourense y a menos de una hora de Santiago y Oporto, este municipio
de 4000 habitantes aspira a que la fiesta de la lamprea sea de interés
turístico nacional y divulgar además su pasado romano, sus paisajes y su
producción vinícola.
Hay quien duda en Arbo de que
todavía exista alguien que pise la tierra que no haya probado nunca la lamprea.
Pero, por si acaso, no se arriesgan a que algún incauto se quede sin probar
este manjar tradicional del sur de Pontevedra. Este concello de A Paradanta,
con 3700 habitantes organiza anualmente la fiesta. Durante dos dias , Arbo se
convierte en el centro gastronómico de Galicia. Este evento trasciende al
propio municipio. Los alcaldes emplearon a lo largo de la fiesta gastronómica
para atraer a figuras políticas del nivel nacional para lograr mejoras en su
villa.
Esta celebración ya es de interés
turístico de Galicia, y aspiran a serlo de toda España. La fiesta de la lamprea
no es solo comer, aunque sea por lo que es más conocida. El esfuerzo de los
habitantes de Arbo se centra en dar a conocer su patrimonio paisajístico y su
pasado relacionado con el imperio romano. Las pesqueiras son estructuras de
piedra que ayudan a los pescadores a capturar con red a este pez, tarea
complicada. Es a raíz de estas características, explica el alcalde.
Como veréis el pez no tiene
atractivo alguno, es como una anguila y una boca redonda parecida a una lapa
dentada. Yo os doy una receta de lamprea por si queréis prepararla en casa o
bien ir a comerla a un buen restaurante, que merece la pena.
RECETA LAMPREA EN SU SANGRE

Limpieza:
La lamprea se sumerge en agua
bien caliente para que la viscosidad externa se pueda retirar pasando el filo
de un cuchillo todo a lo largo, de cola hacia cabeza, sin herir la piel y por
toda la superficie del cuerpo del bicho. Esta operación de sumergirla y
rasparla se repite tres veces.
Ahora la lamprea ya no se
presenta resbalosa al tacto. Aun así se frota entera con sal gruesa. A
continuación se lava en agua fría y se seca frotándola con un paño áspero.
De la sustancia viscosa que la
cubría ya no queda nada.
Básicamente es un corte en forma
de “S” que comienza en la parte inferior a la altura del último orifico
branquial y termina en la parte superior de la cabeza del animal nada más
sobrepasar el punto del primer orificio branquial.
Con este corte la lamprea vierte
prácticamente toda su sangre. Añadimos una cuarta parte del vino para que la
sangre no coagule.
Se desecha la cabeza y se limpia
bien la zona branquial.
Pasamos ahora dar unos cortes
semicirculares en la parte ventral, uno cada cuatro o cinco centímetros, pero
ha de cortarse con el cuidado suficiente para no seccionar el tubo digestivo.
En la parte anterior, si es hembra nos encontraremos con la huevas al lado del
tubo digestivo. En cualquier caso veremos también el hígado en la misma zona.
Al llegar al extremo posterior,
haremos un corte alrededor del orificio cloaclal a fin de desprender el extremo
del tubo digestivo pero sin cortarlo.
Ahora tenemos que meter el dedo
índice en cada corte, pasándolo por debajo del tubo digestivo y tirar del mismo
hacia fuera. Este trabajo lo haremos en cada corte de los que hemos hecho. El
tubo irá saliendo por cada sección como si de ojales se tratase.
En el extremo anterior
encontraremos el hígado que desprenderemos junto con el tubo digestivo y
desecharemos ambos.
Si es hembra nos encontraremos
las huevas que retiraremos a un recipiente y añadiremos al líquido de cocción
en su momento.
Una vez retirados el tubo
digestivo, hígado y, eventualmente, las huevas; repasaremos la cavidad
intestinal para limpiarla de cualquier resto que pueda quedar.
Dejaremos el animal en el fondo
de la cazuela e iniciaremos el paso siguiente: el adobo. En la ilustración se
pueden ver los lugares aproximados de corte.
Adobo:
La sangre de la lamprea
300 cl de vino tinto (ribeiro o condado)
Un chorro de vino blanco ribeiro, albariño o
condado
2 dientes de ajo
3 ramas de perejil
Una pulgarada de sal gruesa
Unos granos de pimiente machadados
Una hoja de laurel
Cuando limpiamos la lamprea, la
sangramos y mezclamos la sangre con el vino tinto. Reservamos. Con la ayuda de
la sal, machacamos en el almirez los ajos y el perejil haciendo una pasta.
Reservamos
En un recipiente adecuado para
que el líquido cubra al animal, se coloca la lamprea y la embadurnamos con la
pasta de ajo y perejil . A continuación la regamos con el vino y la empapamos
bien.
Queda en este adobo durante 24
horas.
Guiso:
Una cebolla mediana bien picada
2 dientes de ajo
Una cucharada y media de café de pimentón dulce
Una cucharada de café de pimentón picante
3 ramas de perejil picadas
½ vaso pequeño de vino blanco albariño, ribeiro o
condado
½ loncha de tocino entreverado picado
1 pocillo de café de aceite de oliva
Pimienta negra
Sal
(Le añadí un papel de azafrán al
sofrito...pero no estaba en la receta original)
En un recipiente conveniente al
tamaño de la lamprea, ponemos el aceite a calentar y pochamos la cebolla y el
ajo. Cuando pierden un poco la bravura, añadimos el tocino. Al transparentar
este, ponemos los pimentones y revolvemos cuidando que no se queme.
Ahora añadimos el perejil y
revolvemos otra vez. Es el momento de añadir el vino blanco y dejar hervir un
poco. Es muy importante que la cebolla se confite un poco sin que se queme, por
supuesto.
Hecho esto, sacamos la lamprea de
la marinada y la secamos. La llevamos al sofrito caliente y le damos un par de
vueltas en ese sofrito, primero por un lado; luego por el otro.
Téngase en cuenta que la lamprea
no está completamente torada, estas rodajas se marcan pero al animal hay que
manejarlo entero. Por esto es necesario maniobrar con cuidado al darle la
vuelta con ayuda de dos espátulas de madera.
Una vez bien empapado en el
sofrito, lo regamos con la marinada y subimos el fuego para que hierva. En este
momento le suavizamos el calor y ponemos la sal y la pimienta recién molida.
Tapamos la cazuela y dejamos
cocer durante unos 15 minutos. Es el momento de darle la vuelta para que cueza
uniformemente.
A partir de ahora hay que vigilar
su dureza pinchándola con una brocheta. El punto de cocción justo es cuando
está firme sin que llegue a triscar bajo el diente.
Una vez que consideramos que está
cocida. La pasamos a otra cazuela y la troceamos. La regamos con un cucharón de
líquido de cocción y la mantenemos caliente a fuego muy suave.
Entretanto reducimos el líquido
de cocción a dos tercios aproximadamente del volumen inicial y lo pasamos por
el chino habiendo quitado antes la hoja de laurel.
Es el momento de ajustar la salsa
en el punto de pimentón picante, pimienta y sal.
Le damos otro hervor y rociamos
la lamprea con ella. La mantenemos caliente hasta servir.
Se acompañar con rebanadas de pan
frito y arroz blanco.
No está mal ponerla al arroz una
verduras del momento, ahora en primavera unos guisante, tirabeques y/o
cebolletas

Cleaning:
The lamprey is immersed in warm water so that

we will detach along with the digestive tube and we will discard both.
If it is female we will find the roe that we
will remove to a container and we will add to the liquid of cooking in its
moment.

eventually, the roe; We will go over the intestinal cavity to clean it of any
rest that may remain.
Leave the animal in the bottom of the pan and
start the next step: the marinade. In the illustration you can see the

Dressing:
The

cl of red wine (stream or county)
A

When we clean the lamprey, we bleed it and mix

In
a container convenient to the size of the lamprey, we put the oil to heat and
pochamos the onion and the garlic. When they lose a little bravery, we add the
bacon. When transparent, we put the paprika and turn around taking care that it
does not burn.
Now
add the parsley and stir again. It is time to add the white wine and let it
boil a little. It is very important that the onion is confit a little without
it being burned, of course.
This
done, we removed the lamprey from the marinade and dried it. We take it to the
hot sauce and give it a couple of turns in that sauce, first on one side; Then
the other.
Note
that the lamprey is not completely twisted, these slices are marked but the
whole animal must be handled. This is why it is necessary to maneuver with care
when turning with two wooden spatulas.
Once
well soaked in the sofrito, we water it with the marinade and raise the fire to
boil. At this point we soften the heat and put the salt and freshly ground
pepper.
Cover
the casserole and let cook for about 15 minutes. It's time to turn it over to
cook evenly.
From
now on, it is necessary to monitor its hardness by pricking it with a skewer.

under the tooth.
Once
we consider it cooked. We passed it to another casserole and chopped it. We
water it with a ladle of cooking liquid and keep it warm to very gentle fire.
Meanwhile
we reduce the cooking liquid to about two-thirds of the initial volume and pass
it by the Chinese having previously removed the bay leaf.
It
is time to adjust the sauce at the point of spicy paprika, pepper and salt.
We
give him another boil and we spray the lamprey with it. We keep it hot until
serving.
