Hemos maridado vino, agua, hemos
mezclado ensaladas y frutas, carnes y pescados, etc… no terminaríamos nunca de
enumerar la cantidad de mezclas y
combinaciones que podríamos conseguir con éxito, pero ahora un poco más. Maridemos
la cerveza. Sí, hay una cerveza por cada plato y hoy los pondremos a
observación
Edgar Rodríguez, sumiller de
cervezas en un restaurante de Barcelona, lleva muchos años maridando los platos
del chef con algunas de las más de 160 cervezas que tiene en su nevera para
ofrecer a su clientela. El objetivo es buscar un sentido a la combinación que
nos facilite la digestión y que pueda realzar el sabor del plato que vamos a
degustar. Pero como todo, siempre con sentido común.
Sin duda, no hay un criterio
único, pero lo más habitual es buscar sabores paralelos, aunque también se pude
hacer un tándem por oposiciones. Por ejemplo, Isabel Jiménez, sumiller
independiente, nos comenta que unos boquerones en vinagre con una caña van bien
porque la cerveza te sostiene un poco ese vinagre de las aceitunas y
encurtidos. También se hace con los quesos, jugando con la untuosidad y las
grasas del alimento.
Lo más importante es siempre el
denominador común llamado respeto. Los sabores no se pueden tapar ni eclipsar
entre ellos. La cerveza y el plato son el resultado del trabajo de un chef y de un maestro cervecero y con la
combinación se establece un diálogo entre ambos.
La gran variedad de cervezas y
estilos de la misma que existen permite que esta bebida se pueda ajustar a muchísimos
platos que, a priori, pueden resultar más complicados de emparejar con el vino.
Un ejemplo. A la yema liquida de los huevos puede resultar complejo encontrarle
un compañero de viaje en la viña, pero una cerveza de trigo , es perfecta.
La carbonatación de las cervezas
es una de las características que define su maridaje y que le otorga un gran
potencial. La viveza del gas, presente en todas las cervezas, ayuda a limpiar
muy bien las grasas. El amargor es otro de los puntos fuertes. Platos picantes
y especiados funciona muy bien con cervezas que presenten un amargor fuerte.
La temperatura también es un
factor importantísimo pero concretemos, la temperatura del cristal y del
servicio, ya que nos harán disfrutar de los matices dela cerveza en todo su
esplendor. Por tanto, la elección de la
copa y su forma son importantes a la hora de poder probar la cerveza asi como
poder captar los matices de la misma.
Pero diréis, bien todo esto hecho
por un chef es fácil y divertido pero cuando estamos en casa y queremos
sorprender a nuestros comensales? Pues bien, primero elegir los platos o menú,
tener claro los sabores y luego buscar
la cerveza que posea la misma potencia de sabor. Para ponerlo algo más
sencillo, platos ligeros con cervezas ligeras, platos más complejos y
contundentes de sabor con cervezas con
más contundencia y cuerpo. De cualquier manera, siempre nos pueden asesorar los
especialistas que venden cervezas y probar con un par de ellas antes de que lleguen
nuestros invitados para poder sorprenderlos.

supuesto , no son originales mías, son aprendidas.

Paella o fideuá: el frescor del trigo y el vigor
del gas de la cerveza combinan con este sabroso plato de arroz o pasta (
Paulaner, Blanche de Namur, Ludwig, arriaca de trigo…). Vaso, Largo con boca más
ancha que la parte de soporte (vaso tubo con boca más ancha)

Pescado frito; El sabor suave de una Pale ale,
jopen, Bourgogne Des, Olañeta…
·
Ensalada de patata: Una ensalada de verano con
el frescor de una pilsner o una Koslch.

Barbacoa de carne: El amargor de una Indian Pale
y la contundencia de Triple Belga, London Pale… son buenas opciones .
·
Postres dulces: Una Barley Wine, Kolbach Barley,
Three Floyds…
Como véis hay opciones para todos
los platos y gustos, solo hace falta ser original, pensar y dejarse aconsejar
para triunfar.
