ACEITE DE OLIVA VIRGEN Y SUS PROPIEDADES

Hace años, el aceite de oliva era comprado solo para ocasiones especiales o para las ensaladas ya que su precio nunca fue asequible a todos los bolsillos pero sus propiedades eran conocidas.
 Con el paso del tiempo, el marketing, la evolución y la sabiduría nutricional, ha hecho que ese aceite se convirtiera en “Oro líquido” por diferentes circunstancias.
Antes solo había algunas marcas  en el mercado que comercializaban aceite de oliva y los precios eran más o menos parecidos. Pero hoy en día, y después de conocer sus propiedades, aceptar por lo comunidad médica que es un bien para la salud y estar más de moda que nunca,  en el mercado se pueden encontrar pequeñas producciones hechas con mimo, cuidando la calidad al máximo y embotellándolo con frascos preciosos que entran por los ojos, dando un gran valor añadido al producto que por sí ya es bueno.

Jaén es el primer productor de aceite pero aún tenemos pendiente la asignatura del marketing donde Italia es el rey , todavía. Pero la cultura del aceite ya está en marcha y eso se hace patente cuando encontramos tantos pequeños productores con aceites de calidad.
Antonio Merino tiene 61 años y sus orígenes se encuentran en una familia que llegó a Sierra de Segura hace 300 años. Los conocimientos han ido pasando generación tras generación perfeccionando y mejorando las producciones y su cuidado aunque el seguro de dicha continuidad se encuentra en la propia familia que en cada generación hay alguien que quiere continuar con el negocio y lucha por ello y por la marca.
El camino no es sencillo y el trabajo que hay detrás es arduo, promocionar una marca propia, llevar los controles de calidad y producción… venderlo en tiendas pequeñas y selectas… conlleva mucho esfuerzo.

Pero  el proceso del aceite no es sencillo y requiere de mucho conocimiento y cuidado para que su clasificación sea de calidad superior.
Durante la recogida, se tienden fardos para que la aceituna nunca toque el suelo. La aceituna cae con vibradoras manuales. Lo que no se arranca por esa vibración se termina rematando con una vara que llevan los recolectores. Después, se limpian con una sopladora para quitar las hojas y que vaya a la almazara lo más limpia posible. Una vez  exprimida, se decanta y se lleva a los toneles a temperatura constante hasta que se envasa. Conseguir que un aceite consiga la denominación de origen es difícil y deben pasar y someterse a muchos controles de calidad. Lo primero es comprobar en la almazara que la aceituna pertenece al área protegida, cuyas características son muy peculiares y armonizadas y donde los olivos no crecen en exceso. Si una parte del proceso  no se hace correctamente, el aceite ya no es virgen extra, sino virgen o lampante, y ya no se puede certificar. La cata es lo más importante. Un grupo de expertos evalúa el aceite y puntúa sus aspectos positivos y negativos. Debido a los fraudes detectados es importante que en los aceites de oliva extra lleven el sello.

¿Por qué el boom del aceite de oliva?
Ø  Aunque es un alimento muy calórico, una cucharada sopera aporta unas 90 kcal. La energía que aportan, tienen funciones biológicas de gran importancia y es importante incluirlo en nuestra dieta diaria en cantidades pequeñas.
Ø  El aceite de oliva virgen extra ayuda a bajar el colesterol, debido a su alto contenido en ácidos grasos monoinsaturados, favorece la absorción de calcio, evita la pérdida de densidad ósea, previene la osteoporosis y tiene efecto cardioprotector, entre otras propiedades.
Ø  El componente principal del aceite de oliva son los ácidos grasos (98%), Oleico (75%), polifenoles (1-2%) que actúan como antioxidantes sobre el organismo; esteroles, tocoferoles (vitamina E) y otras vitaminas (A,D  y K).

Years ago, olive oil was bought only for special occasions or for salads since its price was never affordable to all pockets but its properties were known.
 With the passage of time, marketing, evolution and nutritional wisdom, has made that oil became "liquid gold" for different circumstances.
Before there were only a few brands in the market that sold olive oil and the prices were more or less similar. But today, and after knowing their properties, accept for the medical community that is a health good and be more fashionable than ever, in the market you can find small productions made with care, taking care of quality to the maximum and Bottling it with precious jars that enter through the eyes, giving a great added value to the product that by itself already is good.

Jaén is the first producer of oil but we still have pending the subject of marketing where Italy is the king, yet. But the oil culture is already underway and that is evident when we find so many small producers with quality oils.

The road is not easy and the work behind it is arduous, promoting a brand of its own, carrying quality and production controls ... selling it in small and select stores ... involves a lot of effort.
But the oil process is not simple and requires a lot of knowledge and care so that its classification is of superior quality.

During collection, bales are laid so that the olive never touches the ground. The olive falls with manual vibrators. What is not started by that vibration ends up finishing with a rod that the collectors carry. Afterwards, they are cleaned with a blower to remove the leaves and to go to the mill as clean as possible. Once squeezed, it is decanted and brought to the barrels at a constant temperature until it is packed. Getting an oil to get the appellation of origin is difficult and must pass and undergo many quality controls. The first thing is to check at the mill that the olive belongs to the protected area, whose characteristics are very peculiar and harmonized and where the olive trees do not grow in excess. If a part of the process is not done correctly, the oil is no longer extra virgin, but virgin or lampante, and can no longer be certified. Tasting is the most important thing. A group of experts evaluates the oil and punctuates its positive and negative aspects. Due to the detected frauds it is important that the extra olive oils carry the seal.

Why the boom of olive oil?
Ø   Although it is a very caloric food, a tablespoon gives about 90 kcal. The energy they provide, have biological functions of great importance and it is important to include it in our daily diet in small quantities.
Ø  Extra virgin olive oil helps to lower cholesterol, due to its high content of monounsaturated fatty acids, favors the absorption of calcium, prevents loss of bone density, prevents osteoporosis and has a cardioprotective effect, among other properties.
Ø  The main component of olive oil are fatty acids (98%), oleic (75%), polyphenols (1-2%) that act as antioxidants on the body; Sterols, tocopherols (vitamin E) and other vitamins (A, D and K).
