Estamos acostumbrados a comer
carne desde pequeños, es más, en mi época, el comer carne era imprescindible y
además no todo el mundo podía adquirirla. De aquí hemos pasado casi a demonizar
a los carnívoros, sea por sus abusos, por modas, etc… pero ahora que todos nos
hemos vuelto “healthy” aparece una nueva moda saludable, la carne vegetal y de
ella hablaremos hoy.
Yo la he probado, no en todas sus
fórmulas pero debo decir que si se saben cocinar son ricas al paladar y
digestivas aportando beneficios al organismo. Su forma, sabor y textura pueden
acercarnos sorprendentemente a la original, pero es cierto que su perfil
nutricional es mejor: menos grasas y colesterol, y proteínas de calidad. Una
alternativa fácil para complementar la dieta. Pero hay que buscar las de más
calidad y estar atentos a las etiquetas y a las denominaciones Bio y
ecológicas.
Tips
Para ello una ración de 75-100 gr debe aportar un
mínimo de 10gr de proteína. En cuanto a grasas, no deberían superar los 20gr.
La cocción o preparaciones de estas “carnes” pueden
ser a la plancha utilizando salsa de soja, caldos, especias para darles mayor
sabor.
Estofadas con verduras y jugando con sabores dulce
amargo pero utilizando poco aceite. En cualquier caso son ricas al paladar si
se saben tratar bien.
Estos productos nos ayudan a pasar de una dieta
omnívora a una vegetariana con más facilidad. Satisfacen el apego emocional a
determinados platos y alimentos. Permiten seguir cocinando recetas
tradicionales con sabor, reconfortándonos.
Pero hablemos de lo que nos aportan estos
sustitutivos de la carne:
El impulso para poner en el mercado este tipo de
alimentos, no solo bien dado por los vegetarianos, las personas que no quieren
ver sufrir a los animales… sino que también viene dado por la calidad de algunas
carnes en el mercado.
Las carnes vegetales mejoran la salud de las
personas omnívoras ya que suelen tener menos grasas saturadas que la carne
animal, no contienen colesterol y aportan fibra y fitoquímicos beneficiosos. El
objetivo de estos sustitutos es aportar los nutrientes saludables de la carne: proteínas de alto
valor biológico, es decir, con un perfil completo de aminoácidos esenciales.
Contienen lisina, un aminoácido difícil de
conseguir aunque si tomáramos pipas de calabaza, cacahuetes, trigo sarraceno o
pistachos que también aportan este tipo de aminoácido aunque no en tan gran
cantidad como la carne.
Pero no solo este tipo de productos son
importantes, las legumbres y el seitán son alimentos proteicos ricos en lisina.
EN cuanto a legumbres podemos tener en nuestra despensa: lentejas, garbanzos,
alubias, guisantes, azukis, soja y sus derivados.
La calidad si es importante, tal y como comentaba.
Muchos productos que se presentan como hamburguesas vegetales contienen más
hidratos de carbono y grasa que proteína: suelen aportar unos 5gr, menos de la
mitad que una ración de tofu , tempeh o
seitán. Una buena alternativa debería cumplir las siguientes condiciones: el
ingrediente principal debe ser rico en lisina,
el aporte proteico por ración alcanza los 10gr, no están fritas, no
contienen mucho aceite de girasol y no tienen azúcares, cereales refinados ni
aditivos innecesarios.
El tofu es un producto versátil con el que se
pueden hacer infinidad de recetas. Su sabor depende de las especias y las
verduras que lo acompañen. El tempeh y el natto tienen un sabor particular
gracias a su proceso de fermentación.
Actualmente se encuentran nuevos productos con
sabor, color y textura muy similares a la carne. En Estados Unidos las empresas
pioneras son Beyond Meat e Impossible Foods. En Europa tenemos Vegetarian Butcher, Like Meat y Quorn. Aunque
se han hecho algunos estudios creando alguna que otra controversia.
Beyond Meat ha creado sustitutos de pollo y de la
carne de ternera que no se diferencian de los originales. En algún caso
recurren a aditivos cuya seguridad es controvertida, como el dióxido de titanio
utilizado para conseguir el blanco de la carne de pollo.
Impossible Meat se han propuesto imitar a la
perfección una hamburguesa de ternera. Según ellos el secreto está en la
molécula “hemo” y han encontrado la versión vegetal en la raíz de algunas
leguminosas. Todavía no han sacado el producto al mercado.
Vegetarian Butcher unos de sus productos
destacables es el pollo a base de proteína de soja y especias.
Like Meat tiene pollo en trozos, filetes o
empanado. Todo sin aditivos, gluten ni lactosa. La empresa es alemana y todavía
no distribuye en España.
Quorn Esta empresa es británica y consiguen una
textura cárnica gracias a las micoproteínas del hongo Fusarium venenatum.

VEGETABLE MEAT
We have been accustomed to eating meat since

provide this type of amino acid but not as much as meat.
But not only these types of products are important,
legumes and seitan are protein foods rich in lysine. As for legumes we can have
in our pantry: lentils, chickpeas, beans, peas, azukis, soy and its
derivatives.
The quality is important, as I said. Many products
presented as vegetable burgers contain more carbohydrates and fat than protein:
usually provide about 5gr, less than half a serving of tofu, tempeh or seitan.
A good alternative should meet the following conditions: the main ingredient
should be rich in lysine, the protein intake per serving reaches 10gr, are not
fried, do not contain much sunflower oil and have no sugars, refined cereals or
unnecessary additives.
Tofu is a versatile product with which you can make
infinite recipes. Its flavor depends on the spices and vegetables that
accompany it. Tempeh and natto have a particular flavor thanks to its
fermentation process.
Currently there are new products with flavor, color
and texture very similar to meat. In the United States the pioneering companies
are Beyond Meat and Impossible Foods. In Europe we have Vegetarian Butcher,
Like Meat and Quorn. Although some studies have been done creating some
controversy.
Beyond Meat has created chicken and veal
substitutes that do not differ from the original ones. In some cases they
resort to additives whose safety is controversial, such as the titanium dioxide
used to get the target chicken meat.
Impossible Meat have set out to imitate a veal
burger perfectly. According to them the secret is in the molecule
"hemo" and have found the vegetable version in the root of some
legumes. They have not yet brought the product to market.
Vegetarian Butcher One of its remarkable products
is chicken based on soy protein and spices.
Like Meat has chicken in chunks, fillets or
breaded. All without additives, gluten or lactose. The company is German and
still does not distribute in Spain.
Quorn This company is British and get a meaty
texture thanks to the mycoproteins of the fungus Fusarium venenatum. Source:
