no lo comprendes hasta que estas en un lugar donde los naranjos estan por
doquier y en primavera sus diminutas flores blancas empiezan a soltar un aroma
suave, dulce y envolvente que hace que tus sentidos sean tibios y te llenes de
felicidad. Esa maravillosa flor es de la que todo el mundo habla en el Sur, la
flor de azahar.
Pero no solo su aroma es un don de dioses, se pueden hacer muchas cosas con
ella como infusiones, que ayudan a conciliar el sueño o por lo menos a
relajarnos.
Es una flor que la produce el árbol del naranjo y se dan en climas
Mediterraneos. Entre otros usos que se les da es la famosa agua de azahar, muy
requerida en productos de pastelería, cosmética, perfumería y aromaterapia.
Para ello las flores se recolectan cuando están todavía algo cerradas y se
utilizan de inmediato para aprovechar su máximo potencial de aroma. En caso de
que quieran utilizarse secas, se ponen en un sitio fresco, bien aireado y a
cubierto de la luz, para que pierdan la humedad y se sequen.
En lo que hace a la cocina, señalan algunos escritos del siglo VIII, que el
azahar figuraba en el listado de condimentos que se utilizaban en aquella
época. Entre otros se contaban además con el orégano, cilantro, hiebaluisa,
clavo y azafrán.
La flor de azahar que tiene una mayor calidad en sus aceites esenciales es
la que proviene del naranjo amargo. Su origen es China meridional, desde donde
vino a Europa de la mano de Alejandro Magno aunque su rival, por aquellos
tiempos, era el limonero.
La terapia de la flor de azahar
Se puede utilizar de diversas maneras: infusiones de la flor seca, aceite
esencial (llamado aceite de neroli), tintura madre y agua de azahar.
Básicamente se le conocen cualidades calmantes, por lo que se emplean en
casos de molestias menstruales, dolor de cabeza, nervios y tensiones que
originan malestar estomacal e insomnio.
Para elaborar el agua de azahar la fórmula que saca mayor partido de su
esencia es la destilación por vapor de las flores frescas; otra opción es dejar
macerar flores secas en agua. Otras
afecciones en las que el azahar puede ser de utilidad : las vías respiratorias
como tos, gripe , dolor de garganta y anginas.
Receta: ATUN CON TOMATE CONFITADO
Y SALSA DE AZAHAR
Como ingredientes necesitamos: 500gr de atún rojo (para 4 personas); 50 ml
de salsa soja; 1 cucharadita de aceite de sésamo; 200ml de zumo de naranja; 4
cucharadas de agua de azahar; 50gr de azúcar; 1 cucharadita de maicena; 4
tomates rojos de rama; flores de azahar.
Sustituciones: si no tenemos agua de azahar, podemos prescindir de ella
pero tendremos que utilizar flores de azahar en la infusión de la salsa.
Si no tenemos flores de azahar, las podemos sustituir por flor de limonero,
jazmín o flor de saúco.
Desarrollo de la receta: En primer lugar cortamos el atún en medallones del
mismo tamaño y dejamos reposar/ macerar en la salsa de soja mezclada con el
aceite de sésamo.
Preparamos una salsa de azahar: ponemos a hervir el zumo de naranja con el
agua de azahar, dos cucharaditas de azúcar y ligar con un poco de maicena
previamente disuelta. Pasar por un colador y reservar.
Para confitar los tomates, primero escaldarlos en agua hirviendo durante 10
segundos, luego quitarles la piel y las semillas. Rodarlos por azúcar y llevar
a la sartén bien caliente y sin aceite para que se caramelicen.
Presentación: En el momento de servir, marcar los lomos de atún marinados
en una sartén bien caliente durante 30 segundos por cada lado, de manera que el
centro del atún se conserve crudo. Servir el atún con el tomate confitado y la
salsa de naranja. Acompañar con unas hojas de rúcula y coronar con flore de
azahar.
Otra idea sería servir el atún crudo, cortado finamente y dejarlo marinar
en la soja y el sésamo. Sirva sobre la misma base de tomate y salsa de azahar.

Curiosidades
Cuenta la leyenda que en el siglo X el califa cordobés Abderramán III hizo
construir una bella ciudad extramuros de Córdoba que llevaría el nombre de su
amada, la favorita Zahra. Ésta había convencido al califa para que crease un
lugar especial, como un paraíso de placer y belleza que fuera el fiel reflejo
de lo que aquel jerarca representaba: lujo, poder y esplendor. Así fue como se
erigió la hoy desaparecida ciudad de Madinar Al-Zahra o Flor de Azahar
(significado del nombre de su amada).
Esta flor también suele utilizarse en los ornamentos de las bodas y en los
tocados de las novias, ya que, además de identificarse con la pureza y la
virginidad, se cree que su fragancia calma los nervios de las parejas en su
noche nupcial.

Recipe: TUNA WITH TOMATO
CONFITADO AND SALSA DE AZAHAR
As ingredients we need: 500gr of bluefin tuna (for 4
people); 50 ml soy sauce; 1 teaspoon sesame oil; 200ml of orange juice; 4
tablespoons of orange blossom water; 50gr of sugar; 1 teaspoon cornstarch; 4
red tomatoes; Orange blossom flowers.
Substitutions: if we do not have orange blossom
water, we can do without it, but we will have to use orange blossom flowers in
the infusion of the sauce.
If we do not have orange blossoms, we can
replace them with lemon blossom, jasmine or elderflower.
Recipe Development: First cut the tuna into medallions
of the same size and let stand / macerate in the soy sauce mixed with the
sesame oil.
Prepare an orange blossom sauce: we boil the
orange juice with the orange blossom water, two teaspoons of sugar and attach
with some previously dissolved cornstarch. Go through a colander and book.
To confit the tomatoes, first scald them in

Curiosities
Legend has it that in the tenth century the
Cordoba caliph Abderramán III built a beautiful city outside the walls of
Cordoba that would bear the name of his beloved, the favorite Zahra. It had
convinced the caliph to create a special place, as a paradise of pleasure and
beauty that was the faithful reflection of what that hierarch represented:
luxury, power and splendor. Thus was erected the now-defunct city of Madinar

This flower is also often used in bridal
