PASOS A SEGUIR PARA LLEVAR A CABO UNA DIETA ANTI-AGING

Si queremos seguir una dieta anti-aging debemos
prepararnos antes evitando grandes cambios. Siempre es bueno ir habituándose poco a poco.
Es importante añadir verde a todas las recetas. La clorofila, que pinta de verde las plantas, es depurativa  y antioxidante. Además el verde revela la presencia de carotenoides que también lo son, y de ácido fólico, esencial para el buen estado del sistema nervioso. Por eso recomiendo el consumo diario de muchas hojas verdes, sobre todo tiernas, en forma de ensaladas y también como ingredientes de otros platos.

Hay que aficionarse a los batidos y zumos poco a poco. Al tomar batidos y zumos con ingredientes vegetales aumentamos la cantidad de estos alimentos en nuestra dieta. Presentan la ventaja de que al estar mucho mejor triturados de lo que los triturarían nuestros dientes, resultan más digestivos y los nutrientes y compuestos vegetales beneficiosas se aprovechan de manera más eficaz y con menor esfuerzo.

Hay que aprovechar la variedad o por lo menos preparar las comidas de manera variada y con muchos productos diferentes. Las plantas contienen sustancias como los alcaloides y los oxalatos que deben consumirse con moderación. Por otra parte, los antioxidantes de diferentes alimentos se combinan y potencian sus efectos. Son dos razones para recurrir a la mayor variedad de productos ( varios tipos de verduras de hoja, en lugar de una sola, por ejemplo) y combinarlos con creatividad.
Hay que aumentar los productos crudos poco a poco en nuestras comidas. Hacerse crudivegano no es sencillo ni nos podemos transformar de un día a otro y tampoco sería una buena idea. Para empezar, no todo se puede comer crudo: las berenjenas, las patatas y otros tubérculos y raíces se cocinan. Las legumbres secas y los cereales también se pueden germinar y posteriormente deshidratar en algunos casos. Lo mejor es aumentar la presencia de ingredientes crudos poco a poco, observando cómo nos sentimos, hasta que representen un 70% del total de alimentos que consumimos.

No entremos en los típicos ayunos milagro. Los ayunos tienen utilidad terapéutica, pero no recomiendo hacerlos para adelgazar o como requisito previo a una dieta más sana. No falta quien promete un aspecto radiante y rejuvenecido en pocos días, pero lo cierto es que el ayuno moviliza tóxicos acumulados en el cuerpo, lo que puede tener consecuencias negativas.
Una vez enumerados los cinco puntos también hay que decir que el grueso de la investigación anti-aging actual se centra en la nutrición . Además, de las propiedades de los antioxidantes, los estudios indican, aunque las conclusiones no son definitivas, que una cierta restricción calórica reduce el riesgo de desarrollar diabetes de tipo dos y aterosclerosis, entre otras alteraciones de la salud.
En el norte de la isla japonesa de Okinawa una de las comunidades más conocidas por sus saludables, longevos y centenarios habitantes, que todavía mantienen dietas y costumbres ancestrales. Estas comunidades no solo evitan comer ad libitum, sino que aconsejan quedarse con algo de hambre en las comidas, siguiendo la máxima confucionista hara hachi bu, que significa “ come hasta estar lleno al 80%”.

En resumen, el antídoto inmediato contra el envejecimiento es eliminar al máximo de nuestro día a día los alimentos procesados, refinados o preparados de manera inconsciente, así como los ambientes y situaciones tóxicas. Debemos recordar que no solo los alimentos nos nutren o desnutren, sino que también las experiencias que vivimos nos afectan.

Cronobiología: seguir los ritmos de nuestro cuerpo.
En la cronobiología se encuentran tres fases: Regeneración, depuración y asimilación. Nuestro cuerpo sabe qué hora es. Los procesos fisiológicos se adecúan al momento del día. Hay que tenerlo en cuenta a la hora de programar las comidas.
La fase de eliminación se produce de 4 a 12h. Durante estas horas el cuerpo activa los procesos de depuración y evacuación. Toma un vaso de agua tibia con zumo de limón nada más despertarte y el desayuno lo más tarde que puedas.

La fase de asimilación es de 12 a 20h. El cuerpo maximiza la apropiación de los nutrientes. Puedes almorzar a partir de las 12 y hasta las 16h. Procura cenar antes de las 20horas.
La fase de regeneración es de 20 a 4h. El cuerpo utiliza los nutrientes adquiridos para reparar y regenerar células y tejidos. Conviene que la cena temprana sea rica en proteína (legumbres, semillas, frutos secos…) e irse a descansar en torno a las 22.30h. Fuente: cuerpomente
