Últimamente con tanto programa de
cocineros, unos acabamos por sentirnos inútiles debido a nuestra carencia de
talento culinario y otros aprenden y abren su mente a nuevas técnicas
desarrollando esas cualidades que no todos poseemos.
Pero no nos apartemos de nuestro
tema, la mujer en la cocina. No hay muchas famosas pero las que hay lo son y lo
son de verdad, aunque a base de muchísimo sacrificio y trabajo. Un ejemplo es
Maria Marte. Una mujer que empezó lavando platos y en estos momentos lidera las
cocinas del club Allard. Ella es de República Dominicana y al llegar solo pedía
una oportunidad aunque no cobrara. Pidió
colaborar , la dirección aceptó pero con la condición de no desatender sus
obligaciones con la limpieza. No le importó doblar turnos. Por tanto, su sueño
se empezaba a acercar. Quizás muchas personas que lean esto dirán, porque nos
explica este comienzo tan sombrío? Pues bien, porque las estrellas no caen del
cielo y estar en un puesto importante tampoco se regala, por lo menos, casi
nunca.
Su primer plato fue una menestra
de verduras que le pidieron hacer en un momento de apuro en la cocina. El
cliente que la degustó quiso felicitarla. Poco tiempo después , el chef Diego
Guerrero confirmó su corazonada y pidió que se contratara a otra persona para
fregar.
María nació con un dón pero lo
llevaba en los genes gracias a sus progenitores, su padre cocinero y su madre
pastelera. Ella montó un catering en su pueblo, negocio que funcionaba bien
pero el hecho de que su hijo mayor decidiera venir a España con su padre, hizo
que pensara en venirse ella también.
En el 2006, María había quemado
todas las etapas y ya era la mano derecha de Guerrero. Un año después, el
restaurante era premiado con una estrella Michelin y en el 2011 la publicación
francesa otorgaba al club su segunda estrella.
En el otoño 2013 Guerrero decide
marcharse. Ambos toman direcciones diferentes, él es el rey de los trampantojos
y ella por el sabor. Con esta situación María toma la jefatura de la cocina, empezando una nueva
etapa/transición para el restaurante y para ella. No cabe duda que sustituir a
alguien es complicado pero si además añadimos una personalidad creativa de
Guerrero no era tarea fácil. No faltaron opiniones negativas.
En este mundo de hombres fue otra
mujer quien le dio la alternativa en la Champions League de la gastronomía:
Luisa Orlando, directora general del Club Allard. Tras unos meses de reflexión,
decidió no fichar a un cocinero reputado y nombrar chef principal a María.
El club Allard mantiene sus dos
estrellas y su chef ganó en 2015 el Premio Nacional de Gastronomía. María sigue
la estela de Carme Ruscalleda y otras pioneras ue ha peleado mucho en un
negocio con tanto macho alfa.
Resulta desconcertante que la
mujer, tan determinante en la cultura gastronómica doméstica desde tiempos
inmemoriales, tenga aún tan poco peso en el estrellato de la restauración.
La chef se levanta a las nueve.
Una hora después está trabajando. Durante la mañana se organizan los dos
servicios del día. A las cinco termina
el primer turno y se marcha a descansar. Dos horas después regresa para
preparar la cena. Su jornada laboral concluye sobre la una, cuando saluda a los
últimos clientes.
Solo pueden haber elogios y
aplausos para mujeres, como está, donde la suerte, al fuerza y el talento
encontraron la misma senda. Muchas felicidades María, yo no nací con tu dón.
