Hay muchas especias que al
olerlas, solo su aroma, invita a utilizarla, saborearla y utilizarla en
cualquier medio.
Una de ellas es la canela.
Particularmente a mi me fascina y la utiliza bastante, en postres y sobretodo
en la leche. Le da un sabor avainillado que llena los sentidos y el paladar,
saciándote.
Tuve la ocasión y la suerte de
poder conocer de dónde salía la canela; de la corteza de un árbol llamado canelo.
Yo lo vi en Amazonas pero su origen es de Sri Lanka. Tiene propiedades
medicinales utilizadas por muchos años por la medicina Tradicional China y por
Ayurveda. No es una especia barata, por lo que cuando se compra hay que
conservarla bien en un tarro de cristal hermético y romper la rama de canela en
el momento de usarlo, desprendiendo un aroma inconfundible y muy relajante.
Según la Medicina tradicional
china, este especia es de naturaleza caliente y su sabor picante suave, dulce y
amargo. Tomado con moderación potencia el yang del riñón y ayuda a que la
energía fluya por los meridianos. Es importante mantener la energía yang activa
ya que es el responsable de acelerar el metabolismo.
La falta de energía yang conlleva
una ralentización general de las funciones metabólicas produciendo un cuadro de
estancamiento por frío y humedad que perjudica sobretodo al sistema digestivo.
Las propiedades secantes y caloríficas de la canela se aprovechan en fitoterapia y dietoterapia energética china para dispersar la humedad y el frío internos. De esta forma se contrarresta el efecto contraproducente de alimentos generadores de mucosidades como por ejemplo los lácteos, dulces y alimentos muy fríos.
