de vaca. En Inglaterra la llaman Kale y es prima hermana del brécol, la
coliflor y de las coles de Bruselas. Con el asesoramiento y ayuda de Agustina

Hay que saber que cada 70gr de
kale nos aporta 30 calorías, es un producto recomendado para incluirlo en
dietas bajas en calorías. Esta verdura contiene muchas vitaminas y minerales,
entre ellos vitamina A y C ( el doble de lo recomendado diariamente). En cuanto
a vitamina K aporta 7 veces más de la cantidad recomendada diariamente.
En cuanto a minerales, podemos
decir que aporta 100mg por cada 70gr de kale, el 10% recomendada por día.
También aporta mucha fibra
favoreciendo a la digestión y debido a su aporte de vitaminas y minerales es
muy aconsejable consumirla frecuentemente.
La manera de consumirla es
variada, pero eso sí, intentemos que sea al vapor para que no se destruyan los
nutrientes y en caso de cocerla procurar tomar el caldo pues los minerales se
encontraran concentrados en el líquido.
Su forma de uso es diversa,
cocida, vapor, wok, escaldada, en sopas, batidos, rellenos, etc… su sabor es
característico y por tanto puede ir muy bien como relleno de pasta fresca y
queso parmesano.
En cuanto al huerto y tal como
nos informa Sergio Ruiz, el kale pertenece al grupo de crucíferas como el
repollo, coliflor, coles de Bruselas, rúcula, brécol… se plantan en almácigos a
finales del verano y trasplantan en los meses de marzo-abril. Se desarrollan
bien hasta su floración al final de la primavera, comienzo del verano.
Soporta bien el invierno, el poco
sol y hasta llega a soportar las bajas temperaturas inferiores a 0 grados,
siempre que no sea muy prolongado. Hace falta buena calidad de agua para el
riego y mucha cantidad de materia orgánica para su desarrollo.
Como curiosidad podríamos decir
que en Estados Unidos, le han dedicado un día al año: el primer miércoles de
