Los encontraremos en forma de
suaves smoothies o en batidos de frutas,
o en forma de jugos de hortalizas combinados con frutas, o bien en los zumos
“verdes” muy ricos en clorofila, a base de verduras de hoja y brotes de
semillas germinadas y tanto si se preparan
para un uso terapéutico o festivo, las tisanas son también un excelente
recurso a la hora de elegir nuestras bebidas preferidas. Vamos a recordar unas
cuantas recetas y consejos para disfrutarlos al máximo.
Los jugos frescos de frutas y
verduras, son ricos en enzimas, minerales, oligoelementos y vitaminas, a
condición insistiremos siempre en ello de beberlos despacio, a sorbitos, y
saboreándolos bien. El contraste negativo lo tenemos en las bebidas comerciales
azucaradas, con o sin burbujas, y también en bebidas como los llamados
“néctares”, preparados industriales a base de agua, azúcar y un pequeño
porcentaje de concentrado de fruta. En el mejor de los casos, estas últimas
bebidas favorecen el olvido de los sabores auténticos y saludables.
Por suerte, y ya que los zumos y
batidos naturales, con o sin leche, o bien preparados con “leche” vegetal, son
muy fáciles de preparar en casa y todos podemos hacerlos en cualquier ocasión,
vale la pena tenerlos en cuenta: son una delicia para el paladar y sus
virtudes, sobre todo recién hechos, resultan incomparables.
El exceso de grasas, de dulces, o
de alimentos desnaturalizados intervienen muy de cerca en la aparición de las
ganas de beber, sobre todo con la llegada del calor. Por eso nos hemos referido
otras veces a la relación de la comida con la sed exagerada que se observa en
muchas personas. Por el contrario, las ensaladas y los platos sencillos a base de hortalizas y fruta, a
menudo crudos o poco cocinados, hacen casi innecesaria la compra de bebidas.
A parte del agua, se consume más
té y café que ninguna otra bebida. La pausa que se hace para beberlos nos da
momentos de descanso y un tiempo para la relación social, pero tanto el café
como el té negro, son excitantes, un inconveniente que acelera y desgasta
nuestras vidas. Ambos son agentes que producen radicales libres en el
organismo, esas moléculas instables y muy reactivas que aceleran el
envejecimiento.
Sólo se salva de esta
consideración el té verde, gracias a las ventajas que ofrece para la salud y a
que contiene muy poca teofilina .
Sorprende la gran variedad de
bebidas calientes que existen, muchas de ellas olvidadas y qe se basan en una
simple infusión de plantas y flores frescas o secas. Han venido empleándose
durante siglos, y la mayoría poseen propiedades medicinales que las hacen altamente
aceptables, tanto para los jugos digestivos como para el paladar . Gran parte
de los tés de flores y plantas están hechos con flores comunes, en su mayor
parte silvestres y no cuestan prácticamente nada. Con todo, muchos de los
sustitutos del café no son fáciles de encontrar, y en general el ingrediente
principal tiene que elaborarse en cierta
medida.
Como ejemplo de estas bebidas son
la hierbabuena, romero, salvia, tomillo…
Para hacer una infusión, de
flores o de hojas, colocadlas en un paño limpio y de boca ancha, verted agua
hirviendo sobre las mismas, movedlo suavemente y dejadlo reposar unos momentos
antes de colar la infusión.
Otro procedimiento es hervir el
agua y verter en ella las flores o las hojas, retirando en ese instante el
recipiente del fuego, y dejándolo reposar unos minutos.
La fuerza y sabor de estas
tisanas o tés alternativos depende en gran medida de los gustos particulares.
Se puede experimentar hasta obtener el grado de intensidad deseado.
Pueden hacerse unos tés
excelentes combinando hojas y flores de más de una planta, de la misma forma que los tés de alta calidad chinos e
indios se hacen con mezclas. Probad la combinación de menta y orégano por
ejemplo, ola de trébol y manzanilla. Son muy refrescantes.
