LOS VEGETALES VIOLETAS Y SUS PROPIEDADES

Hemos hablado de muchos vegetales e incluso de la influencia en su color debido a los componentes nutricionales que lleva. Ahora les toca a los violetas.
Se recomienda consumir vegetales y frutas color violeta, ya que su alto contenido de antioxidantes y antocianina ayudan a combatir algunos cánceres, enfermedades cardiovasculares y la diabetes. Estos beneficios particulares de los vegetales y frutas oscuras se deben al pigmento de sus pieles.

Según datos de la National Health and Nutrition Examination Study, los adultos  que comen frutas y vegetales azules  o violetas reducen el colesterol bueno y malo (HDL y LDL respectivamente).
No obstante, las frutas y vegetales azules o violetas solo componen el 3% de la dieta  diaria de muchos habitantes en ese país. Hoy en todo el mundo, la tendencia a comer arándanos y otros frutos del bosque, ha aumentado.

Al margen de las características generales a la mayoría de los antioxidantes, los beneficios de las antocianinas  más apreciados se deben a su poder en la prevención de enfermedades visuales degenerativas, y en especial en el caso de la degeneración macular asociada a la edad, la cual acaba ocasionando ceguera.
Por otro lado, las antocianinas ejercen una acción protectora sobre los microcapilares y ayudan a mejorar la agudeza visual aunque no existan enfermedades, el riego cerebral e incluso, combinado con otras plantas medicinales, se empelan en el tratamiento natural de vértigos.
