enero en latitudes bajas y de febrero más al norte,
el almendro deja ver con su floración que los días soleados están a punto de
aparecer. Es el primer adelanto de la primavera: los almendros abren al viento
sus pequeñas flores rosadas y perfuman el ambiente delicadamente.
Quizás sea ése un excelente
momento para aprovecharlas y darles uso
en la cocina, incluso juntarlas con el fruto ( la almendra) para elabora tanto
platos dulces como salados.
El ajoblanco es un buen ejemplo,
una estupenda crema para el verano a base de ajo y almendras que bien se puede
presentar con las flores, como una “decoración comestible”. La cocina oriental
suele utilizar flores de almendro, además de limonero y de manzano, en
elaboraciones como sopas, infusiones o postres. De hecho, con la repostería casa particularmente bien,
ya que su sabor algo dulce y su aroma suave resultan muy interesantes en la
confección de salsas, almíbares y macedonias
de primavera.
Los italianos elaboran con el
fruto seco el famoso licor amaretto, un ingrediente habitual del no menos
célebre tiramisú. Y con las flores puedes preparar una infusión digestiva.
Las almendras dulces son de valor
reconocido por sus propiedades nutritivas y demulcentes. Lo recomendable es
masticarlas muy bien y quitarles la piel siempre que sea posible para facilitar
su digestión. La bebida de almendras resulta más digestiva que el fruto entero.
Un producto bien reconocido para
tratamientos de la piel es el aceite de almendras dulces. La almendra amarga,
en cambio, produce ácido prúsico ( cianhídrico) que se traduce en un potente
veneno, por lo que no se debe consumir.

ALMOND
When winter
