LA ZANAHORIA Y SUS PROPIEDADES

La zanahoria , tanto cocida como cruda favorece el buen funcionamiento de todo el organismo. Las zanahorias se pueden consumir de muy diversas formas. Se suelen trocear, y se consumen crudas, cocidas, fritas o al vapor y se cocinan en sopas, guisos, pasteles, jugo, así como en comidas preparadas para bebés y animales domésticos.
Hay zanahorias de diferentes tipos y colores.

Es probable que los antepasados silvestres de la zanahoria hayan venido de Irán, país que continúa siendo el centro de diversidad de la especie silvestre D. carota. El cultivo selectivo durante siglos de una subespecie natural de ésta,  ha dado lugar a la hortaliza común.
Antiguamente, la zanahoria se cultivaba por sus hojas y semillas aromáticas, no por su raíz. Aún hoy, algunos de sus parientes se cultivan por éstas, tales como el perejil, el hinojo, el eneldo y el comino. En el siglo I se menciona por primera vez la raíz en fuentes clásicas. La zanahoria moderna fue posiblemente introducida en Europa entre los siglos VIII y X, en Andalucía, describe tanto las variedades rojas como amarillas; Simeon Seth, médico y erudito judeo-bizantino del siglo XI, también menciona ambos colores. Las zanahorias naranjas aparecieron en los Países Bajos durante el siglo XVII.

Es un alimento excelente desde el punto de vista nutricional gracias a su contenido en vitaminas y minerales. El agua es el componente más abundante, seguido de los hidratos de carbono, siendo estos nutrientes los que aportan energía. La zanahoria presenta un contenido en carbohidratos superior a otras hortalizas. Al tratarse de una raíz, absorbe los nutrientes y los asimila en forma de azúcares. El contenido de dichos azúcares disminuye tras la cocción y aumenta con la maduración.
Su característico color naranja se debe a la presencia de carotenos, entre ellos el beta-caroteno o pro-vitamina A, un compuesto antioxidante que se transforma en vitamina A la cual sirve para la vista una vez que entra en nuestro organismo. Asimismo, es fuente de vitamina E y de vitaminas del grupo B como los folatos y la vitamina B3 o niacina. En cuanto a los minerales, destaca el aporte de potasio, y cantidades discretas de fósforo, magnesio, yodo y calcio.
Ayuda a limpiar los dientes y estimula la secreción de saliva, algo que contribuye indirectamente a una buena digestión.
La deficiencia de vitamina A dificulta ver bien por la noche ya que el nervio óptico se nutre de esta vitamina y una proteína llamada “opsina”, razón por la cual la zanahoria siempre se ha relacionado con el mejoramiento de la visión.
Aumenta la producción de melanina, el pigmento que le da color a la piel y la protege de las radiaciones solares nocivas (UVA y UVB).

Beneficios y usos
Siendo la zanahoria la más mineralizante y vitaminizante de todas las raices, se recomienda para toda clase de enfermos, sin ninguna contradicción.
La pulpa de la raiz es considerada como un medicamente eficaz en las afecciones bronquiales de los longevos, catarros pulmonares rebeldes, etc... pues facilita la expectoración.
Esto mismo se emplea en gárgaras para combatir la afonia, pues los oradores y cantores pueden servirse de ello con garantia. También en infusión con leche o miel es buena para la tos, bronquitis, tuberculosis, catarros, en especial para aliviar el asma y para limpiar toda la via respiratoria ; en estos casos se tomará un vaso a la mañana, en la tarde y al acostarse.

Contra el estreñimiento, catarros intestinales causados por procesos de autointoxicación, se empleará media docena de zanahorias crudas ralladas, repartidas durante el dia. Es diurética y emenagoga, pues provoca la orina y la menstruación de las mujeres. Además ayuda a disolver y expeler los cálculos, para ello se usará en decocción. Por su riqueza en fósforo es excelente como vigorizante para una mente canzada y como restauradora de los nervios. Los niños alimentados con zanahorias crudas desde tiernos, se desarrollan fuertes. Contra el raquitismo, escorbuto infantil, anemia, etc,. nada mejor que las zanahorias tiernas y crudas.
Un régimen rico en carotenos favorece el bronceado y la zanahoria los posee en grandes cantidades. Los carotenos tienen grandes virtudes dietéticas y a la vez protegen la piel de la influencia negativa del sol. Mantienen la piel hidratada y le proporcionan un tono bronceado. Comer zanahoria unos días antes de tomar el sol ayuda a proteger la epidermis pues sus betacarotenos activan la producción de la melanina.

También funciona como un eficaz antioxidante y así previene los efectos negativos de la edad y dolencias como el cáncer. Los betacarotenos además neutralizan los radicales libres. Precaución
Si se consume en exceso, la zanahoria puede provocar depósitos de caroteno bajo la piel, dándole a ésta una tonalidad amarillenta.

Es importante tener en cuenta que el betacaroteno no se pierde con la cocción, pero sí lo hace la vitamina C. Por tanto, siempre es preferible comerla cruda o al vapor.
